I have no idea where those folks that didn't give Diamond Backs a 5 star rating really ate at, but it clearly wasn't where I was. My work place held our awards dinner there on Wednesday night and the service, food and ambiance was outstanding. We ordered appetizer platters and they were more than ample for our group, as well as being absolutely wonderful. We ordered everything from steaks to seafood. I had the special, a filet stuffed with crab stuffing, served with broiled shrimp and asparagus. The steak was tender and delicious. The stuffing was divine. Everyone was happy with their food. No complaints at all. Did I mention the service? Fantastic. We never wanted for anything, but at the same time didn't feel like she was hovering over us. This past November, we had the opportunity to go to New Orleans and dined at Emeril's. I can tell you their service and food was no where as good as what we had at Diamond Backs for about the same price. Thank you for a wonderful night! read more

We had a rehearsal dinner for our son's wedding in The Hall event room at Diamondbacks. The food was great easpecially the dessert! We had the fajita buffet. The staff was very attentive and helpful on the day of the event! They met our every need even while we were decorating. The event coordinator was great to work with during the planning process! Like others, I had heard this place had really gone downhill, but my wife and I had a late afternoon meeting in the vicinity and decided to stop in for appetizers and drinks. Our worst fears were confirmed. Jumbo Shrimp cocktail at $16.99 had overcooked shrimp that didn't taste fresh. My wife's crab cakes were God-awful: she ate one and didn't want the other. I took one look at it and didn't want it either. It looked like a soggy grey hockey puck. French Onion Soup at $11.99 was a big bowl of undistinguished onion broth with one crouton floating in the middle and not a whisper of gruyere cheese. Anyone who would serve this food either doesn't care or doesn't know good food. And the prices are absurd. read more

DiamondBack's is usually a favorite for me for a special date night. I was really excited to finally get a date night and I chose DiamondBack's. It went downhill pretty fast from the minute we arrived. I had made reservations prior to our arrival. We walked in and the hostess was on the phone. We stood there and she never even acknowledged us as we stood there for several minutes. Two other employees walked up and placed menus at the counter and never said a word. We were led to a booth next to a beam. I offered to sit by the beam, allowing my husband to sit on the side with more room. I had to squeeze into the booth in order to get past the beam. Our waiter arrived and seemed like he was in a hurry. We looked over the menu while he scurried off to tend to other tables. He walked back up and began placing appetizer plates on the table and said our crab cakes were headed out shortly. We reminded him that we had just arrived and hadn't placed an order yet. He grabbed the plates and acknowledged that he made a mistake. We did order an appetizer which was fantastic as usual. When the waiter returned we placed an order for dinner and two drinks. Approximately 25 minutes passed until we received our alcoholic drinks. During that time frame the waiter returned and my husband asked for more water as his glass was empty. The waiter returned twice in the 15 minutes and both times acknowledged he forgot to bring the water. He quickly scurried off again to other tables. Because we were in the corner it was hard to get the attention of any other waiters. I finally observed a male at a register and I assumed he was the manager. I approached him and explained that we had been waiting for water for approximately 15 minutes. I told him the waiter had returned twice but forgot the water. He assured me that he would take care of it. We waited a few more minutes and the waiter returned for the third time without the water. Another waiter then walked over and filled the water glasses. The dinner selection was very good as usual. When we finished eating we waited a while for the waiter to return. When the waiter returned he handed us the check and told us that our drinks had been comped. I thought this was a nice gesture by the manager. However, I reviewed the check and saw that we were charged for crab cakes which we didn't order. The manager came back over and corrected the ticket. The waiter walked back up before we left and said he felt like the service could have been better. He told us that he got really busy and felt like he should have came to our table more. At that point we were just disappointed and ready to go. Overall for a 200$ meal I was disappointed. The level of service expected for that price sadly did not meet the mark. There was a level of inattention throughout the entire dining experience. I'm not sure if it was just a staffing issue that needs to be corrected. I may give DiamondBack's another shot but it will be a while. read more

My co worker and I where looking at different places to eat. We stopped in and talked to Cassie. She was absolutely amazing. She helped us out with every questions we had. We where down for a business trip and where just looking for a place to get a bite to eat. I didn't think she would go out of her way to explain a little bit about the surrounding area. Not only did she tell us what was near , but she did it with out any judgment. She was very professional and willing to help. Her hospitality was amazing. Normally people would just blow you off, she didn't. I will definitely keep this restaurant in mind when down I'm here with the wife. Not worth the money at all. I ordered a medium well sirloin, and I was given a sirloin that was extra extra well done, that it was basically jerky. The crab fried rice was terrible, the bread was undercooked, and the waitress also forgot to mention the $6 charge for substituting a soup for salad. I was really disappointed in Diamondbacks tonight. We hadn't been in awhile and I wasn't given any reason to regret that decision. Our waiter was very nice, but completely untrained in serving. He asked if we needed an ice bucket for our red wine, halfway through our meal he apologized for our appetizer being slow and told us it would soon be ready (?!), he spilled my sass over the table and then put the pieces back on the plate for me, and he didn't know what type of cocktails we ordered and had to keel asking questions about them. Not only was the service poor, we order the truffle fries, which I would bet money were simply frozen crinkle cut fries doused with some oil and parmesan. Overall, it was sad because it wasn't the Diamondbacks I remember. read more

Before I get into the details, I must say we were at Diamondbacks on a VERY busy night. Baylor graduation, the local high school senior prom, and some other black-tie event going on in town. The place was packed. But they knew it would be... We've been eating at this restaurant for the last 6 years (two kids in college - both done now). IMO, it has gone steadily downhill in that time with significantly higher prices and declining service. Our dinner Saturday night was the last straw. I don't typically (ever?) ask to speak with the manager but had to due to the poor service. Here are a few examples: 20 minute wait for water; no salad dressing on one of the salads; the server asking if we'd like pepper on our salad (there is no salt or pepper on the tables), and we said "yes, please." He said he'd be right back and never showed again. Then I spoke with the manager who apologized and assured me we would receive "impeccable service" for the rest of the evening. It was much better, and why this review has two stars instead of one, but when they served my perfectly cooked Rib Eye, it was unfortunately just warm (at best) and the asparagus wasn't fully cooked and wasn't warm. The scalloped potatoes were too salty, but the mushrooms were very good. I was done - and when asked if they would like to re-do the steak I just said "no thanks." It wasn't worth the wait. The manager then comped a glass of wine for my wife and personally made us their famous Banana's Foster, which was excellent, but overall the meal was a huge disappointment. The net total was +/-$470 for the five of us (included one bottle, and one glass, of wine) which was grossly overpriced for the quality of the food and lack of service. Prices were comparable/higher than Morton's, Ruth's Chris, Flemings, and other well-known steakhouses. And it's in WACO! If nothing else, Diamondback's ability to charge such prices and provide this level of service should scream to any potential competitor that there is a HUGE untapped market in the Waco area. Watch out Diamondbacks, one of the wonderful things about America is the ability for ANYONE to compete. read more

The ambiance is very nice and loved the comfortable decor. The food was just average, I was expecting a lot more for the price. The wine is way overpriced (Double most restaurant prices). Service was good, but lack of attention to detail such as refilling our wine glasses when our waitress walked by our table. I think there are better options in Waco for fine dining. read more

My wife and I celebrated our anniversary here while in town for several days. We were not disappointed. Sara, our server, was tremendous. DiamondBack's was a lifesaver!! Last weekend my son's prom group was supposed to go to Austin for dinner in a party bus. The bus was 2 hours late getting the kids and broke down 5 minutes after they got on it. The call was made to try to eat locally and the first place we called, Diamonback's, said their dining room was full but they would set up the back room for the kids. 24 prom goers got there a few minutes late because they had to dropped off by local police and other parents. They served awesome food to the kids and for a lot cheaper than going all the way to Austin. We so appreciate Diamondback's for making a horrible situation very nice and accommodating them on such short notice. We appreciate you guys!! read more

Excellent food and service. We enjoyed the cozy ambiance, as well. The manager stops by the table to check on every customer. Our server was very attentive. The dishes are pricey, but well worth the cost. Every entree includes your choice of salad and delicious popovers, which certainly makes the price more reasonable. Atmosphere was beautiful , steak cooked wrong twice , very disappointed .... shrimp cocktail was served with poop still on the shrimp , fresh cooked rolls had egg shells in them and drink from the bar was the worst. Our third time here and it is great as always. Our meat was cooked correctly. I ordered mine medium rare which can be tough to cook. The truffle Parmesan fries are a definite order. We had a large group last Sat night. Everyone had a plentiful plate of food. I had the salmon. It was pitiful!! One little piece of salmon on a big plate with nothing else. Nothing. I was appalled. Everyone at our table had a larger amount of food. This was ridiculous for $32.99. Wish I would have sent it back. I would not recommend this place to anyone. We go there often but never again. I used to eat here once or twice a week but I quit going about 18 months ago because the food quality & service started drastically deteriorating. Last night was only the 3rd time that I've eaten here since then and we only went because it was conveniently located to the Hippodrome where 4 of us went to watch a Robin Williams impersonator. Note: The awesome ambience, decor, & fact that my friends liked the dessert is the only reason I gave it more than one star! Here's how our night went last night: 1) Waiter was very nice but he did NOT know anything about the wine list. I asked him if he had a Shiraz wine that he could offer by the glass or by the bottle and he had no idea and my friend asked him about another wine & he had no idea & instead of finding out he brought us an E-tablet which listed the wines. I don't want to do home work when I go out for a "FINE DINING" experience, and he should have done this for us as a last resort instead of having me do it. We sat in the bar & there were only 2 other tables so he had the time. I don't expect the waiter to be a Sommelier but I do expect them to have at least a basic knowledge of the wine list! 2) Waiter told us about two different specials & my friend David chose one of them, the New York strip. A few minutes later the waiter returned to inform us that they were actually out of New York strips. 3) David ordered a ribeye medium rare it came out medium at best. 4) I ordered the Prime Rib medium rare & it also came out over cooked & the quality was sub par as well. I did not even finish it (& it was the smaller twelve oz not the 16oz). 5) None of us ate the asparagus (scale from 1-10 I give the aspargus a 3) 6) Sherry's Filet was cooked correctly but she said that the quality of the beef was not good at all. I will only be going back to Diamond Backs to enjoy the live music in the bar on Thursdays & I will eat somewhere else first. *The wine list (as so many other reviews point out) is very marginal for an upscale restaurant. Waco has a wonderful winery in Valley Mills that carries 2 red wines that I really enjoy (GSL & Mammoth) & it's a shame that Diamond Backs doesn't offer either of them. read more

I eat at a lot of High end steak houses and there are NONE better than Diamondbacks! I was greeted by a very nice hostess. I opted for a cocktail at the bar first. Cape Cod with 2 limes! Bartender was extremely friendly. We had a great visit about Baylor sports. My wife and I then went to a very nice table and the waitress was extremely knowledgeable and kind. The quality of the food is AMAZING! I started with some sushi. I was a little surprised how fresh the sushi was at a steak house. OMG, so good, I will get the sushi again for sure. The WACO roll was AMAZING! My steak was cooked to perfection... I would recommend this place to anyone. This is a nice place, not a roadhouse type of place. SO MUCH better, if you are looking for fine dining in Waco go no where else. read more

We arrived early to enjoy the happy hour menu items and drink options. There's quite a variety of items to choose from for the happy hour menu. The food was good the service was OK. The jazz band was fabulous. The only thing that left a bad taste in my mouth was the dessert. After our meal, our waiter brought around a dessert tray and everything looked fabulous so we ordered the red velvet cake. After a couple of bites I noticed extremely salty chunk like crystals embedded within the cake. It appears there's salty crumbles tossed on top. It was like getting a mouth full of salt crystals in ever bite. The salt was so overwhelming that it left a bad taste in my mouth. They did comp the dessert purchase, but I wish there had been more options or at least had been warned about the overwhelming salt taste on our dessert. read more

We recently celebrated my daughter's graduation from Baylor at DiamondBack's and it was such a lovely luncheon. The food was delicious and the staff was so very attentive. It was the perfect graduation celebration! Our guests were most impressed and it is a memory we will all cherish for many years to come. In a search for the best cake in Waco, my husband and I tried the renowned Chocolate Tower. My first bite of the dessert revealed Cool Whip, straight from the tub. A strongly orange-flavored chocolate mousse topped a run of the mill pound cake and blueberry sauce. The novelty of a crunchy chocolate covering does not compensate for food that I could have made better myself. The best part of the evening was the charm of the staff, definitely NOT the $22 bill for coffee and dessert. read more
