Diamond Backs is definitely expensive. I went in there thinking I would get some sushi and I ordered two appetizers instead. I got the iceburg wedge and the crab cakes. The waiter was extra nice to me, I think cause I was by myself. He was kinda over the top.... but let's talk about the food. "Would you like some bread with your meal?" "Yes, that'd be great." The bread came and it's this hollow cylinder type bread. Not sure what it was but it was tasty. A generous heap of butter made it particularly palatable. The outside was crisp and the inside moist. Get the bread. The crab cakes come with this mustard sauce. It overpowered the crab cake so use it sparingly. It also came with a lemon in a fabric bag. So fancy! Squeeze the lemon and you don't get seeds or pulp on your crab cake. Now I know how the queen of England dines. The iceburg wedge was also tasty. It was covered in dressing so I'd recommend getting the dressing on the side as not to drown your lettuce in dressing. Also, it doesn't come with bacon bits, so ask for some to put on your wedge. Just those two appetizers cost me $20 (before tip), so be prepared to drop $30-50 for a steak and $10 for a sushi roll. The food is excellent, but you're getting what you're paying for. This place is somewhere you'd go for a birthday, anniversary or a business dinner. Or if you're a big baller, then you'd go here once a week after you went to the gym. Way overpriced for what you get. I've been to $100 a person restaurants before, and usually I leave feeling like I got what I paid for. This was not one of those experiences. Food is pretty good, drinks are alright, and service is pretty good, albeit a little slow, but nothing about a mediocre filet, a couple appetizers, and a mediocre wine were worth $100 to me. Yes, anything will taste good when you soak it in butter, but try making something taste that good without trying to give me a heart attack. Even the vegetables are covered in heavy cream sauces. A cute place if you *have* to have a special occasion in Waco, but if you're going to drop $100 a person for dinner... make the drive to Austin or Dallas and really get your money's worth. read more

We took a visit to Waco for our anniversary, and we chose this place for our "splurge". I cannot say enough good things about our evening here. It was the best service, best food, and overall experience I think that we have ever had. We made a reservation and requested a booth, and they came through with a great little corner booth that felt secluded. Our waiter was Charles, and he was incredible. So polite and so informative about anything we had questions about. The ambiance is great-- upscale "western" style, that feels really comfortable. It's a little dim, which makes for an intimate setting. We started off with calamari, and it was really good but a very large portion for two. He mentioned that they were known for their filet, which both of us got the 8 ounce filet. I got mine "Oscar style", but looking back I probably didn't need it. It was definitely the best steak I have ever had. Perfectly cooked and perfectly cut. We also split the sides of the crab rice and mushrooms which were both wonderfully made. Diamondbacks is often viewed by people who have never spent time in Waco as the best place to dine. Now don't get me wrong, they have the best wine selection in Waco and the most expensive menu, but that doesn't make them the best. If you've ever spent time in Dallas or Houston, the steak here will not match up at all. The prices will be equal (if not more) than you will find for a good steak in Dallas or Houston, but the quality of the meat and preparation is not close. DBacks is always a favorite for large graduation dinners and pre-set menus, but there are better places in Waco. That being said...they have an amazing happy hour. Cheap(er) drinks and their entire appetizer menu is available for $3 a plate. Kobe beef sliders are crazy good. They're normally like $12 so this is a huge deal. We used to come for HH all the time after late classes at Baylor. The bartenders and servers are definitely top-notch for Waco, and the HH is worth going to. Not worth the money!!!!! Food is not up to par with their prices. My husband, sister, and I went to Diamondback's for 4th of July dinner. When we walked in we noticed the restaurant wasn't busy, so we were excited about eating semi quickly and leaving to watch the fireworks. We were seated in the dinning room and five minutes passed and no one approached us!! Unacceptable for a "fine" dining restaurant. (This is the second time this has happened to me and my husband.) The three of us grabbed our menus and sat up at the bar, where the bartender was apologetic about the dinning room and said she would give us good service. My sister and I each ordered the Kobe beef sliders and the house salad and my husband ordered the U10 shrimp dinner. The salads and the bread came out quickly, the only complaint here was the salad that came with my husbands meal (he ordered the wedge) was tiny and was the "butt" of the lettuce. We ordered our food at 8pm and didn't get our entrees until 8:45. We were seriously thinking about leaving because there was no excuse for food to take that long when the restaurant wasn't crowded. When we finally got our entrees the "Kobe" beef sliders were more than well done (I question that it was real Kobe beef) and my husband got 5 pieces of shrimp for a $32 entree. We have been living in Waco for four years and every year we visit the restaurant it gets worse. We won't be dinning here again and will go to 185 Prime if we want to pay these high prices for sub par food. read more

Dinner started off great with good drinks and an amazing appetizer, the bacon! We had a house and Caesar salad which were wonderful and the popovers were perfect!! Then things started to go downhill. My husband got the prime rib and I ordered the filet. My filet was good, but his prime rib was chewy and lacked any flavor. Our sides (Brussels sprouts and broccoli) were decent at best. We ordered the res velvet cake ball for dessert. It was dry and crumbly- the best part of it was the cream cheese icing which there was not much of. This is the FIRST negative review I've ever given but I'm hoping to help someone else from feeling like we did. It was so disappointing. Really had my hopes up for this place, as I waited to dine here till we closed on a major project. I'm giving this review as someone who has experienced fine dining across the country, and I feel they just don't hit the mark. Do restaurant owners (not chain or franchise) in Waco think they can get away with some stuff because they're in a small town? Diamond Backs price is way up there along with Del Frisco, III Forks and other high end steak houses out there. As far as service, food quality, decor and everything else, they are down there with Logan's, not even Salt Grass. Tonight we spent a fortune for nothing, way below our expectations. First of all, let's talk about decor. It's very dim with a cheap decorations, tables, chairs and silverware. Booths look like crap. Chairs are very basic. When you walk into $$$$-$$$$$ restaurants, you'd expect more no matter where you at, Waco, Dallas, or Temple. At least that's my opinion. Servers. Waitresses with long hair but not on pony tails? Complains about hair in the food is calling their name. Yeah, y'all look cute with your hair down, but this is food industry. There's a health code regarding that issue. I also saw some servers did not use tray to deliver the foods. I work at restaurant, not as expensive as Diamond Backs, and I get bark all the time for not using tray. Foods. Incredibly below average. My expectation was as high as their prices. We ordered surf & turf, 3-bones-in pork chop and a side of horseradish mashed potatoes. Iced tea was watered down and served in poor amount of ice. Popover was pretty good but lack of flavor and a bit too eggy. Butter was slightly sweet. Wedge salad was OK. Pretty obvious the bleu cheese dressing was store bought. Tomato and red onion was great actually. Surf & turf was good. Filet was cooked perfectly. Lobster was good smothered with creamy cognac sauce. Horseradish mashed potato was good but the bf didn't care about. And the main event of a night was the pork chop. I was contemplating between prime rib and pork chop. Our nice server suggested me with pork chop. I told her how I like it cooked. As rare as possible but still save to serve. She said she asked the cook and medium well it is. I HAD faith in this place. It looked good from outside, after I cut it, it still looked good but I could tell it's overcooked as I prefer. And I was right. Very very very dry and only crust had good flavor, the meat was tasteless. Yuck. Texas Roadhouse has a lot better, juicier with very reasonable price. Very disappointed. Short story - they overcharge me for my drink, even after I pointed out the listed price on their menu. Long story - my friends and I made reservations to eat here based on the nice menu selection and atmosphere. We drove here from Dallas, Ft. Worth, and Austin as Waco is central. While waiting for my friends, I ordered a drink from the bar. They came and I paid. We had dinner and I asked for another- it came back in the same, but noticebly less and watered down - no problem, I don't need to drink too much. We loved the decor and atmosphere- food was so-so, but our standards may be higher. We sat at the table for a while as it was a social gathering for us. I was planning on leaving a very generous top for taking up so much time- as were my friends. When the bill came, both my friend's and my drink prices were significantly higher ($19 each vs the listed $12 & $13). We politely notified the waiter. I told him I even just ordered and paid the listed price just before. He checked with his manager. After 10 minutes they came back and said, thank you for pointing out our mistake, we adjusted it but still have to charge you more bc of the amount of pour when we put it on the rocks, ie I was charged $17 vs the $13 that the advertised. I was never asked nor told of a price difference in amounts of pour. You don't get charged more than the listed price after ordering a chicken entre based on the "larger" size of the chicken breast. Could I afford the $4 difference after a $82/person dinner- sure, but the principal of charging me more than the listed price for less liquor and blaming it for the "generous" pour (without asking me) really irked me. I've never experienced this at Del Frisco's, Capital Grille, III Forks or other fine steak houses. A high end or reputable restaurant would see that the additional $4 profit (the bottle itself is $38 from a liquor store) was not ruining a customer's relationship. Needless to say, I we won't be returning - and will share our experience with others. Hated that our otherwise pleasant long distance get together was marred by the poor business decision and dishonest charge. Came for a nice dinner on girls weekend. The place is really cool looking and has a good atmosphere. It was exactly what we were looking for. The filet and lobster bisque were amazing. Next time I'll pass on the truffle fries, they weren't anything exciting. Our sever was very good and helpful in the beginning but then disappeared after getting us our food which was frustrating to eat while needing a drink refill. I found that the wine prices are incredibly inflated. I fully understand paying more for wine at a restaurant, but over $80 for a bottle of wine that you can get at H-E-B for $17 is absurd. Despite the reviews we decided to try the place anyway and I'm so glad we did. The wine selection was awesome we choose a Napa valley cabernet that was wonderful. I had fried shrimp that was perfectly cooked an the size you would get from the coast not like any other restaurant in 200 miles. Hubby choose the aged sirloin an it was perfectly cooked an seasoned. Rudest customer service I've ever experienced - and I dine out a lot! First, let me say that the ambiance was nice as well as the food, but the way our table was treated by server, Jacobo, was unreal. Does he have a thing against women? We wondered. We watched Jacobo interact with the tables around us and he was pleasant. They were all tables with males and females. Ours - a table of 3 females. We are very pleasant, friendly individuals - thoroughly enjoying a girls trip to the area. From the moment we sat down, Jacobo barely made eye contact or said anything to us. He did not say hello, welcome us to the restaurant, or introduce himself. He basically, approached the table with a facial expression communicating "bother", gave us menus without a word, came back a bit later, stood at our table with pen and notepaper in hand and stared at us. Wow! Is it really that difficult to be pleasant? If so, Jacobo, you are in the wrong business. We placed our order with minimal interaction. When he served our meals - again - not a word. He simply placed our plates in front of us and walked off. Not once throughout our entire meal did he come back to ask us how our food was, if we needed anything, or refill our water. We were not a demanding table. We asked him for nothing. At the end of the meal, after we watched Jacobo hang out behind the bar, visiting with another server who was picking his nose, he brought us our check.....again without a word. His facial expressions, body language, lack of discussion - all communicated a total attitude of being "inconvenienced" to have to be there. It actually got to be entertaining because it was so unbelieveable. We spent most of our meal watching him interact with other tables and then guessing what his next steps were with ours. So! If you are going to go - enjoy the food. But, if you are seated in Jacobo's area, I would suggest asking to be placed in another area if you want to enjoy your evening.....especially if you are an all-female group. read more

Wow! My boyfriend and I came here from out of town to eat dinner and get some drinks for my birthday. We started off with Moscow Mules and they were bomb! We ordered the fried asparagus with crab meat and it was amazing. For dinner we had a glass of wine, a 14oz wagyu ribeye, lobster macaroni and sautéed spinach. We had a group of about 10 girls for drinks and dessert in the bar area. We were the only customers in the bar. The service was terrible. We were given a happy hour menu to look at. Our party arrived at 8 and hh ended at 7. The El Martini was unimpressive at best. The bartender was very friendly, but seemed surprised and even said "this is going to be very hard" when we told him we wanted separate checks. It took 50 minutes from the time we asked for our checks until he brought us back our receipts and cards to sign. We were the ONLY people in the restaurant at this point... The food has been great... I've eaten there 10+ times in the last few years. That is the only reason I'm giving that second star. I will never go back. Waco has more options for a good steak (and exceptional service). This place is really delicious but really expensive. For about four people with a few glasses of wine, we came out to almost $200. We got appetizers and desserts though. I had the prime rib, about $22, one of the cheaper menu items. For appetizers we had a sliced steak on toast, which was delicious. And for dessert we shared a thing called "the bag." It's a bag-shaped chocolate container, filled with blueberry poundcake and other stuff. It was really huge, we had to take it home and freeze the remainder. On a road trip with my sister from Wisconsin and stayed in Waco. Wanted to have a good steak for dinner since we have been on the road. My prime rib was delicious and perfectly cooked to my liking...my sister enjoyed the sushi and said it was some of the best she has had in her travels. Emily was our server and was excellent. She was extremely knowledgeable about the menu and specials and was prompt in checking on us. It is pricey but we were well aware of the prices before we decided to dine here. Easy to get to, near the Magnolia Silos but a few miles from our hotel. We wanted to have a few drinks so decided to use uber from our hotel and that worked well. Mixed greens salad with pecans, Granny Smith, and balsamic vinaigrette definitely tasty. However the beefsteak tomato onion and balsamic vinaigrette I had was pathetic. Tomato was a poorly chosen unripe low flavor garbage and served with section of 80% stem!!! Bad chef real bad. (8.99) Entrees $71.00 12oz filet stuffed with seafood over asparagus with 3 shrimp. Taste, tenderness and quality all just barely average quality. Me $48 16oz herb and garlic prime rib a bit over cooked and dry. Sauces were not very robust and did not tantalize my pallet with excitement. $7.99 Mushrooms were actually quite tasty and good thing. The steak needed them. $8.99 Asparagus with Hollandaise was again just ok. Summary--- average quality all around. $196 bill for two including $28 for drinks. We have decided we will not be doing that again. Average food and average service is not worth the over $200 with tip. Do not waste your time unless you go for atmosphere and the $28-38 entrees and pray for better quality. 2.5 Stars would actually be a better rating. read more

I went to see my parents in Waco and as a special treat, I took them to eat at DiamondBack's. My Dad loves steak and I had heard this place was great. The service was fantastic. Our waiter was prompt, knowledgeable and kind to my family. We didn't partake in any wine, but I can tell you we had a hard time deciding what to order for food. It all looked really appetizing! Dad and I ordered filets and a baked potato, and Mom had the seafood pasta special. My filet was cooked perfectly, and Dad said his was "the best damn steak he's had in a long time". Dad even recognized that the building used to be a machine shop where his uncle worked back in the day, and he and I reminisced over old stories. My parents thought it was a little dark in the restaurant and had trouble reading their menus, but our waiter promptly produced a flashlight and held it in place while they looked over the selections. Overall, we had a good time and I look forward to going again. read more

Three stars are due to lack of Covid compliance. This past Saturday was our second visit to Waco and our second visit to Diamondback. Brandon, our server, was phenomenal and a definite asset to this restaurant. The food was great. My salmon was some of the best I've ever eaten. Though the molten lava cake was more a pool of hot fudge. The cake portion was only about a millimeter thick and couldn't hold its shape. But with the vanilla gelato it made a great hot fudge sundae. My concern was with Covid procedure compliance. It is very much a concern for us. When I made our reservation I asked about distancing in the restaurant and the hostess told me that they would seat us in the private dining room that has tables spaced far apart. when we arrived for our reservation, the hostess notified me that we would no longer be able to be seated in a private dining room, but that she would see it as well away from other diners. She actually sat us in the second booth that everyone walks by when entering the dining room, with other dinners sitting directly behind us. When we asked if we could be seated farther away from other people, she complied but was obviously not happy about it. I was very surprised that the 50% occupancy that was still required at the time was not observed at all. It looked more like 85-90 % occupancy. This was our first dinner inside a restaurant since this whole mess started, and it was very hard to relax and feel comfortable in such close quarters. read more

Having eaten at the likes of Fleming's, Morton's and Capital Grill I expected the bill to be on the high side for an upscale steakhouse, unfortunately DiamondBack's fell a bit short and did not live up to the price. The food was good but not exceptional and for what they charge it should have been. I was especially taken aback that they charged 6$ for a tiny little dish of Bearnaise sauce. The place itself was very clean but plain, the staff was very pleasant and attentive. I realize there are not a lot of options in Downtown Waco but it almost felt like they were trying to take advantage of people with their prices for both food and drinks because of it. Coming from out of town, we were really excited to try this steakhouse. We were looking for high quality food and exceptional service in our time in Waco. Based on other reviews, DiamondBack's looked like the place to go. We expected a bit of a wait, but we seated within a reasonable time. After sitting down, I observed that the staff was off. It seemed like a tense work environment. Halfway through our dinner, which I ordered a soggy chicken parm, I ran into a crying staff member in the restroom. She was reluctant to say anything, but after a few minutes she let me know why she was upset. She explained how the manager treated/spoke to her and her colleagues and quickly pulled herself together. I was immediately turned off and I understood why the work environment was tense. I spotted the manager talking to another server and it was clear that he was making him upset. Based off of this, I will not be dining here and I do not recommend this establishment.
