Having eaten at the likes of Fleming's, Morton's and Capital Grill I expected the bill to be on the high side for an upscale steakhouse, unfortunately DiamondBack's fell a bit short and did not live up to the price. The food was good but not exceptional and for what they charge it should have been. I was especially taken aback that they charged 6$ for a tiny little dish of Bearnaise sauce. The place itself was very clean but plain, the staff was very pleasant and attentive. I realize there are not a lot of options in Downtown Waco but it almost felt like they were trying to take advantage of people with their prices for both food and drinks because of it. Coming from out of town, we were really excited to try this steakhouse. We were looking for high quality food and exceptional service in our time in Waco. Based on other reviews, DiamondBack's looked like the place to go. We expected a bit of a wait, but we seated within a reasonable time. After sitting down, I observed that the staff was off. It seemed like a tense work environment. Halfway through our dinner, which I ordered a soggy chicken parm, I ran into a crying staff member in the restroom. She was reluctant to say anything, but after a few minutes she let me know why she was upset. She explained how the manager treated/spoke to her and her colleagues and quickly pulled herself together. I was immediately turned off and I understood why the work environment was tense. I spotted the manager talking to another server and it was clear that he was making him upset. Based off of this, I will not be dining here and I do not recommend this establishment. This is a very good steakhouse in Waco. I've been on two business trips, and this is my go-to place for entertaining colleagues and clients. The food is excellent and the service is even better. In addition, it is walking distance from the Hilton Waco. Not having to drive or call a cab makes for a more pleasant evening. Watch out for the desserts - they are huge! My colleague ordered some "death by chocolate" sort of thing (I can't remember what it was actually called), and nearly bust a gut. He did say it was delicious, though. read more

We had an absolutely fantastic waiter. I forgot his name, but the service was wonderful. I've gone to upscale restaurants before where the waiters look down on you and don't treat you well, but this was nothing like that! We had the onion ring tower, girlfriend had Cesar salad, I had some sliced tomatoes (forgot the name), girlfriend had chicken parm, I had 8 oz fillet medium rare, and we shared cheesecake. Our food was fantastic. The steak was grilled perfectly and was amazingly seasoned and the dessert was great. I worked with Event Coordinator Meghan Taylor for my Mom's 80th Birthday Dinner. There are 3 private rooms we were in the Banquet Rm. Our Sit Down Dinner we chose Wild Horse, our guest enjoyed a variety of 3 entree's it was perfect, the table settings beautiful. Diamondbacks Maitre d' Consuelo and Blade were responsive to our request. Blade interacted with the kids that attended it was great. Arin the Manager was also fantastic he made it known he was available at any point and time. What's so good about Diamondbacks is that you are treated as a special guest. The food is excellent. I am not quite sure why anybody complains about the prices, this isn't Texas Roadhouse. I adore their wine flights and their blue cheese wedge is so fresh. This restaurant catered a party for me on one of their event spaces. I ordered the bbq that was served buffet style. The buffet was continuously served with brisket, chicken, sausage, beans, potato salad, and rolls. The servers were great! They made sure the food didn't run low, they checked on each guest to.make sure they had proper utensils and that their drink stayed full. My experience was an overall good one. read more

My boyfriend researched and picked to come here when we were visiting Waco because of how good the reviews were and it did not disappoint. We were greeted immediately and so kindly and brought to a very nice table. Our waitress was new but she was definitely just as knowledgeable of the menu and helped us pick some nice options for dinner. They seemed fairly busy for a Monday evening which goes to show they must be doing something right. We ordered an appetizer that unfortunately got lost in the hustle and bustle and the drinks we got from the bar took quite a while to get to us but that was understandable with how busy it was on a Monday evening. The rest of our food came out and was prepared exactly how we had ordered it and it was delicious. We wanted dessert and getting to see the trolly cart and hear our waitress tell us about each one made the experience that much more special. We ended up picking a butterscotch creme brûlée and the red velvet cheesecake and both were good choices. A table next to ours got the bananas foster and I can't comment on how it tasted but I can say the table side show was great and they seemed to devour the results. It's clear the restaurant works as a team to not only help each other but ensure the guests have a wonderful experience. I think we would go back again if we were in Waco read more

Asparagus had zero flavor and the hollandaise sauce was bland. Couldn't taste the truffle in the truffle fries. Don't order the onion rings unless you want to eat a whole onion. The staff was attentive, knowledgeable and went out of their way to make our meal exceptional. The creamed corn was delicious, as was my steak, but what I would really like to rave about is their piping hot, HOMEMADE, gluten-free rolls. Guys, it was heaven. I'm allergic to wheat and am seldom ever able to enjoy a roll with dinner, but imagine my delight when, with a fantastic meal, I was able to enjoy, to date, the best rolls I've ever had since I started carrying an Epipen! This may only matter to you if you share my allergy or have celiacs disease. However, it was the effort of the staff to make these rolls last minute, and to bring extra butter, without me even asking, not to mention the smile on his face when he saw my excitement, that made me feel a level of customer care that will have me returning here again and again. I was a bit hesitant after reading some reviews but all of our dinners were high quality, from the Rack of Lamb, Filet Mignon to the salads, sushi and dessert. Our first time at this steakhouse. Excellent service and ambiance. Decent wine list but it could use a few more light red options. They offer interesting wine flights; we plan to try them on our next visit. Apparently they just resumed serving a few dry aged cuts; I had the 16 oz. ribeye. Very tender and flavorful. My wife had the Blue Cheese encrusted filet...superb if you like Blue Cheese. Both our sides (5 cheese scalloped potatoes and green beans) complimented our entrees...the green beans were sautéed in perhaps the most flavorful bacon I've ever tasted. Disappointing dining experience. I was pleased to be seated immediately upon arrival, since I didn't have a reservation. However, I waited over 15 minutes before the server greeted me and another five minutes for him to bring my non-alcoholic beverage. After I reviewed the dinner menu, I moved to the bar area since I wanted lighter portions. I waited another 10 minutes before the server, Sarah greeted me. I was even more disappointed that neither the first server, nor Sarah apologized for the delay. I ordered the quesadillas, which were average. I had to request the dessert menu and Sarah brought the display. I ordered the chocolate molten cake with ice cream. The dessert was just average as well. The cost was shocking ($17.99) for a very average tasting cake. The dessert prices are not printed on the menu and the server didn't disclose the cost until she presented the check. I will never return to this restaurant and will share my experience with colleagues, family and friends so they can do their due diligence prior to choosing this restaurant. I'm always prepared and happy to pay the cost for an excellent meal and exceptional service. However, I wasted a hour and a half of my evening for mediocre food and extremely poor service. I don't know why people continue to compare Waco restaurants to Dallas or Houston. Do you see reviews of Dallas restaurants that say, "well it's not as good as New York or Paris?" Come on. I've had good steaks (the $40-80 and up kind) all over Texas and the steak I got from Diamondbacks was as good or better than any other place. The flavoring was the best I've ever had. It was part of a special that had crab meat all over it. I took off the crab meat cause it just didn't compare to the steak. It was amazing. I've gotten other stuff from Diamonbacks and it was ok. Not bad, I just wasn't a fan of the dish. I try to branch out and experiment you know. All that to say, get the good steak , it's pretty awesome. You are welcome to stay in Dallas if it's just so much better. read more
