It was our anniversary dinner and the waitress forgot both of our sides and brought us the wrong check. She said "ok, so I'll comp both the sides and dessert." Oh, nice. You're gonna comp two things you never brought us and give us a free dessert (even though we were getting free dessert from the start since it was our anniversary.) Lazy staff, food is incredibly overpriced and honestly quite average. Also, my steak was BLUE when they brought it out. I could make a better steak at home. Would not recommend. This review is going to be of the Happy Hour alone. First of all I must say that Tuesday's are a great day for happy hour because they do half priced ALL wine by the bottle! That is a very good deal where you are basically getting retail prices in a restaurant... anyone who drinks wine in restaurants knows that this is an incredible thing. Without Tuesday 50% off on wine I personally rate this place sub par for fair wine pricing. I completely understand mark-ups for restaurants, but this is truly bordering on gouging people. I also noticed that at the front of the restaurant they proudly display their recognition from Wine Spectator for wine lists (most recent recognition 2 years ago in 2015). I will credit them with a wine list that is heavy on big name brands such as Orin Swift's multiple labels, Silver Oak, Shafer, Caymus, and many other highly recognizable labels. In my opinion I would grade this a C+ to B- selection due to an almost non-existent sparkling wine, Rose, or natural wine selection. It seemed to seek after the big name reds and settle for stopping there. Now that I'm off my soap box of the wine menu, I must admit the happy hour prices were much more reasonable. My wife and I both ordered starter salads which were fantastic. My wife ordered the diamondbacks house salad, and absolutely raved about the balsamic dressing that it came with. I had the Caesar which was fresh and well made. I did not partake in drinks but my wife got a martini that was suggested as a house specialty, and really appreciated it. She said it was very good and above average for cocktails she has had (she loves cocktails and can be very discerning). I decided that I wanted to give this sushi a shot, and see if they could deliver fresh sushi in Waco. The spicy Tuna and Diamondback rolls were very good and are easily the best sushi rolls inside Waco. I think I found where I will be going to satisfy my sushi desires when I am not in the mood to drive to Dallas or Austin. We then also ordered the Waygu American Beef Sliders and crab cake sliders. These were made well and went from above average to great with the paired sauces that came on the plate. We greatly enjoyed the sauces that took these dishes to a high level for happy hour eats. Finally, I appreciated the bartender and his service. He was very kind and helpful in suggesting items, and even had some fun lighthearted conversation. I appreciate anyone who does their job well and he certainly did. We came in underdressed probably a touch, but I felt okay since it was 4:15pm and we went for happy hour. If I were to return past 5:30pm I would suggest nice jeans (absent of holes), slacks, and a nice dress style shirt. Women in slacks, skirts, or dresses after 5:30pm is appropriate. Bottom Line is that happy hour was very good. The food was a 4.5 out of 5, and drinks a 3.5 out of 5. The downgrade there is the price side of things, but we are and were full for $50 which is easily what can be spent on a single entree there. It's a close choice between 4 and 5 stars but went with 4 because of the value for money aspect. The steaks are expensive, and my rib-eye really wasn't the best. My wife had the medallion trio, though, and that was very good, and more reasonably priced. We also had string beans and bacon which we thought under cooked. Kudos to the restaurant for giving us a credit on that when we mentioned. Dessert was banana's flambee which was very good. Service was attentive, though maybe a little quick - we like to linger over dinner, especially in such a nice location. So, I recommend for a visit, just be aware of the prices! read more

My husband and I stopped here for dinner while we were in town house shopping as we are about to relocate here for my husbands job from the Dallas area. The ambiance was nice, cool decor that was a good mix of modern but rustic. Service was great! Our waiter, Jose was super nice and attentive and answered all of our questions. The truffle fries were YUMMY and the ranch dressing to dip them in was fabulous. My husband and I ordered the 12 oz rib eye to share. I got the house salad that came with it and he ordered a blu cheese wedge salad. The house salad was good, but not great. He liked his wedge salad but to me, the price was ridiculous for a tiny salad. The steak was pretty good. Not too much fat, pretty good flavor and cooked very much to medium as we asked. The popover rolls served with the food were very interesting and tasted very good. The only reason I did 3 rather than 5 stars is because it's very overpriced. Here in Fort Worth, we can go to Bobs or Del Frisco's and for the same price, get a better steak that is bigger and comes with two sides. A nice little spot in Waco if you are looking for something a little fancier. My husband and I went to celebrate our anniversary and left full and satisfied. The atmosphere is nice but it's a little dark in the restaurant. We ordered sushi as an appetizer, but I wouldn't recommend doing that and then getting a big meal because the portion sizes was huge! This is definitely my favorite steak and fine dining place in Waco. Every dish is delicious, cooked to perfection, and will leave you feeling very satisfied. It is a great place for celebrations, date nights, or special occasions. The service is wonderful and the staff always makes sure you are comfortable and taken care of. This restaurant has hosted so many different occasions for our family and friends in the last two years and they have never disappointed. And I recommend this wonderful restaurant to everyone who visits Waco. The staff is welcoming and professional and on one occasion I had to eat there in casual dress and they treated me as if I was in a formal. Chris is our usual waiter and is kind and helpful. Where to begin... this place is way over priced. They must have new / inexperienced staff or something. The cocktail I ordered was missing 1 of the 4 ingredients and it tasted like cough syrup. They gave me a replacement Makers Mark but charged me for a Makers 46 which is more $. We ordered 2 of the slow roasted prime rib at $63 each and both of them were cold. They tasted good, but should not be cold. Ordered carrot soufflé and brussell sprouts for our sides. The soufflé was good. I make better sprouts at home. The cheese puff bread was good and the lobster S'cargot was pretty good. Overall, it was all mediocre for the price. My company paid for the meal since it was my birthday, otherwise I would have been very unhappy. In the future I'll just go to 135 Prime for a nice meal. read more

Next, 3 in my party ordered the red snapper at $44 a pop.One ate about 3/4, one about half & me? Three to four bites! We all agreed it was terrible!! Way way way over sauced! Bland & the pecan crust competed awful - with the worst"bernaise" sauce I've ever tasted! None of us finished this disaster! $132.00 worth of food down the drain. I informed my server that the appetizers weren't good after he asked us is everything ok, because clearly it wasn't since we had only taken a couple bites and left it sitting. He took the plates and not another word was spoken about it. The drinks took forever, I ended up having to go to the bar to get it and the drink was watered down from the melted ice. This was my first and last appearance at this abused slaughter house, I mean steak house. I had better steaks at McDonald's. The Ribeye was supposedly a Prime cut graded by amateurs who came across an abused cow that they slaughtered and sold as prime since grading is all voluntarily done in this industry. It was so tough that my steak knife almost broke while cutting through the gristle. My wine was an old opened bottle and I unfortunately had to send it back because it was so bitter. I hope they can source better cuts of beef and do a better job with the cycle of their wines. read more

The Caesar was nothing; simply Romain, store bought croutons and a commercial dressing that was very sour. Put a little effort unto it and make a dressing from scratch please. It's very simple. I also had the creamed spinach which I would describe as spinach dip. Come on, any decent steakhouse should be able to make a great creamed spinach; it's a staple. Chef, if you need a recipe just message me. It's super simple. The only standout surprise was a popover instead of the expected barely warm sourdough. Now that was a big plus. Spot on for that ! My husband and I had reservations at Diamondback's last night for our 10th anniversary and had a great experience! Our waiter Tyler was friendly and attentive, explained the specials to us and made sure we always had what we wanted quickly. We had the Jumbo Lump Blue Crab Cakes appetizer and they were AMAZING! After that Tyler brought us these popovers with herbed butter - OMG, they were amazing! Never had anything like it - Tyler told us they were like Yorkshire pudding. Whatever they were, they were amazing! I had the house salad, husband had the French onion soup. House salad was very delish (balsamic vinaigrette type dressing with mixed greens, sliced green apples, bleu cheese crumbles and pecans). French onion soup was "pretty good, wish I'd gotten that salad though" according to husband. I had the bacon wrapped crab stuff shrimp - 4 in the order and after the appetizer, popover and salad, it was more than enough! Very good, I highly recommend it! Here's the only reason I took off one star - my husband ordered the Mixed Grill which had smaller portions of a filet, chicken fried venison and salmon. He said the salmon was excellent, the venison was pretty good but the filet was inedible. He ordered it medium and was delivered a piece of leather. He couldn't even cut into it! Tyler was horrified when we told him and quickly told his manager who offered to bring him a new piece of steak or a dessert. We opted for the dessert since was already pretty full from everything else he'd eaten. I can't remember the name of the dessert though but it had a warm brownie on the bottom with a scoop of mint chocolate chip gelato and then it was covered with a dome of white chocolate. Then Tyler poured a little pitcher of hot chocolate ganache on the dome and it opened up like a flower - so cool! And tasted amazing. Totally made up for the filet! The other review talked about Diamond Backs not being up to the quality of some restaurants in Dallas and Houston and this is true. But Diamond Backs is not located in Dallas or Houston but rather in Waco. Thus it is held to a different standard than those of Dallas and Houston. When looking for a place to eat in Waco you are limited to the box restaurants like Chili's & Olive Garden and Diamond Backs is far and away better than those. There are very few restaurants in the Waco area that one can frequent that are up to the standard of Diamond Backs. While I cannot commit on the quality of the steaks as I do not prefer steak their other menu items are great. By Waco standards Diamond Backs is "dressy". However, you must take into account that in Waco wearing a sleeveless t-shirt or a shirt with a picture of a deer is considered acceptable at most establishments in Waco. If you are looking for a quality restaurant and willing to spend $25-$35 a person (not including alcohol) then Diamond Backs is a great choice. A 5 star rating on Yelp mean "as good as it gets" and in Waco Diamond Backs is one of the very few restaurants that deserve this distinction. read more

Really read these reviews before deciding to go to Diamond Backs. We aren't cheap what's so ever and have fine dined all over the U.S but if we are going to pay $105 for a bottle of wine, we expect it to be phenomenal. But instead this place marks up their cheap bottles 3-4 times depending on the bottle. Which is ridiculous for a steak house in WACO! Prime 112 in South Beach isn't even as pricey as this place. Also, our waiter was not knowledgable at all and very very forgetful. He didn't ask us how we wanted our steak cooked till 20 min after we ordered it, had to ask us twice what bottle of wine we wanted to order, and also forgot to check on a couple of questions I had for the kitchen. If we are going to pay top dollar we want prime service and this was not prime service. Nice atmosphere but I would suggest spending your money somewhere else. read more

Gave this place a shot even though I had heard it had gone to hell from the locals a few years back. THEY WERE RIGHT. Service was fine. The building is beautiful (minus the cheesy high noon salon decal on the mirror behind the bar). Having worked at a high end steakhouse in Austin for three years, I know my way around a steakhouse menu. The prices for each entree are AT LEAST ten dollars over priced. So, my being apprehensive, I ordered small at first. My Jim Beam and Coke had about 4 ice cubes in it. The caesar salad (that was 9 dollars) was the crappy white part of iceberg lettuce, with stale croutons and very little dressing. Smoked Salmon SUSHI that was COOKED: When I brought it to my waiters attention he replied with "That is how the cooks get in the smoke flavor." WOW. I couldn't stop shaking my head. As long as I'm in Waco, I will ALWAYS cook my own steak at home. It's just not worth it anywhere in town. Sad. read more

Diamondbacks crushed it. I enjoyed the ambiance of the restaurant and loved the piano player while I dined. Visiting Waco on a business trip, I was delighted to read the reviews for this Waco hot spot and decided to drop the coin for a perfectly cooked Steak. Ordered the Filet 12, and asparagus. Can't complain with the quality of turf, but I felt like the asparagus lacked any seasoning or kick. Perhaps thats how they do it in Texas. House Salad was pretty normal. Like I said, my steak was perfectly cooked. Lack of quality bourbon was a little surprising. Ordered a Blanton's, wasn't on the menu. Ordered a booker's wasn't on the menu. Ordered a Bakers... think the waitress mistook what I said and gave me a Maker's... poor effort sweetheart. Only reason Diamondbacks doesn't get a 5 star rating is for the price of the food. Not sure if this is a restaurant trying to imitate the Dallas/FW area, but guess what. You are Waco.. your steaks shouldn't be over $40-50. With the economy in the sh**ter, no reason to send quality customers to the Texas Roadhouse down the street, you aren't re-inventing the cow. Overall a pleasant experience. read more
