This was my third time ordering the dogs. The first two were boiled, like most Chicago dog places do it. This time I asked at the drivethrough if they'd run the dogs through the grill the way they do the sausage. First answer was no: "it makes them taste bad, they get all blistered." But then when i confirmed this is exactly what id like, he said "I'll do it for you this time, but they might not next time." I appreciate that he did it. But I didn't love being made to feel like a jerk for asking for something simple, and the premise is wrong. Boiling a dog adds nothing. Fire adds flavor. That's the Maillard reaction, it's why nobody eats a sous vide steak straight out of the bag without searing it, and it's what Michelin kitchens are built on. The concept dates back when humans figured out how to start fires. The results backed it up: the charred dogs were sensational, vastly better than the boiled ones I'd had before. If I owned this place, I'd make "char-grilled" a standard option on the menu and on DoorDash tomorrow. Blindfold 100 people and hand them one of each, and I'd bet 80-85 pick the char. The boiling tradituon was born out of convenience and cost, not flavor. If the answer had been no, I'd have skipped the dogs entirely, and if this really is a one-time favor, I'll stick to the sausage from here on. I asked a worker about this and she just put the chicken option and told me that they would put steak on my chalupas and they did not, had to be rung up at the register for the nacho fries which is a inconvenience for the workers trying to finish orders and me having to wait extra time. I'm not the person to get super upset over these things and I also work fast food so these problems are understandable but are also a very easy fix with talking to the employees about staying on task and making sure they are not just messing around. This makes a bad environment for people coming in and for the workers themselves. Improving their quality of service would also improve the staffs mood as I could tell they were frustrated by the backed up orders. Service needs work but the food is good and quality 90% of the time which is understandable.

My wife chose hers with the "easy gravy" option, while I went "The Chicago Way" with the ends dipped. The sandwiches came out fresh and hot. The beef was nicely done, well cut (no gristle) and melted in your mouth. The Hot Giardiniera was HOT as advertised (which is why I ordered a small fry to help soften that later.
