In fact, after his latest visit we all agreed we needed to start bringing him in quarterly. Chef's cooking style is best described as transformative. He takes ingredients you'd never dream of being the star of the dish and makes it the most delicious thing you've ever tasted. Our last dinner we reqested to be completely vegetarian and he did not disappoint. Even the non-vegetarian at the dinner was blown away and left being the perfect amount of full. My husband avoids certain veggies in our day to day (texture) and the way Chef Josh cooks - well we've never left a plate bare, I can tell you that much. And when Chef Josh isn't looking.. we may have licked our plates clean. Pickling, crisping, pureeing, caramelizing - everything he puts in front of you "WOWs". Besides the food he serves, which is well worth the money, Josh's service is unparalleled. He is prompt, friendly and wonderful to chat with. He brings everything in and does all clean up as if he was never even there. Whether it's a date night, an intimate gathering or a group to impress - I would recommend hiring Chef Josh 110%. He doesn't have a set menu, but sources the ingredients the morning of depending on what looks good and what's in season. We had three or four passed appetizers, a salad course, a grouper / risotto course, and a caramel bar for dessert. Everything was so delicious and all of the guests raved. I have no idea how he was able to cook all of that food for that many people in our home kitchen and make it so flavorful. To keep all of the food at a perfect temperature must have been extremely challenging. Chef Josh was such a cool person also, entertaining, always happy, and so respectful of our home. The hours are limited as it's only open for breakfast and lunch and closes at 4. We spent the day up in Idyllwild and first and foremost, food. Parking situation, I believe they have a parking lot but majority is street parking or lots in town. We arrived just after 12pm which the place was pretty busy. As it was our first time we didn't know the layout of the place. The patio was where the action was happening. Covered umbrellas to help with the heat which was nice. Inside is quite small with some tables but main dining area was on the patio. I didn't know the go about of this place but noticed a register. Waited a bit though the place was packed. I was trying to get someone's attention on getting a table as there was no hosts counter. Finally someone mentioned that you seat yourself and when you're ready to order, come back inside to place your order. They do offer alcohol with mimosas, Bloody Marys and I believe there's a full bar. It took a while to order as the line was quite long and there was only one register where you order. After your order, they ask your name for when your meal is brought out. While I was waiting, I did see loads of amazing dishes being brought out and the server calling out names so they know who it's for. It's didn't take long for our order to come out. Oh, juice was given to you after you order which their OJ was delicious. Has to be fresh squeezed for 9.00. Meals, we went with the country chicken fried steak with homemade country gravy, 2 eggs any style and a side item. And the ham steak meal with 3 eggs any style, a side and choice of bread. Both item we upgrade to onion rings for an additional fee. Plus a side of sausage for the fur baby. Food was quite nice and delicious. The portion was quite big which I like. I think they're known for the breakfast burritos as it was a favorite for loads of people and let me tell you, that thing was massive. Glad we found out about this place which is a favorite for us now for breakfast and lunch. Also, the patio is quite nice and big. There's a table at the entrance where you can help yourself to ice water, napkins, to go containers and some condiments. Tables do have a tray of condiments as well. Pros 1. The food is great. He worked with me on a menu and he delivered my vision. Even with extreme circumstances (another vendor broke our garage door 24 hours before the event) Chef Peter and his crew took it in stride. They were on time and hauled their heavy equipment in and got straight to work. He was basically cooking/grilling on one side of our building (back patio), having to run back forth to the interior kitchen and sink. He and his crew worked SO hard that night. They are very professional. Every plate was perfect, they cleared the tables and made sure everything was spotless when they left. I also hired Jacob the Bartender (he works with Chef Peter) and WOW! Crafted cocktails and excellent service. Every person who was late to my party was sat and had a drink in their hand in less than a few minutes. Jacob was a pleasure to work with. Great bartender. He mentioned they'd course the dishes out, 2 at a time, ensuring each of the dishes were paired intentionally. Beet Salad From someone who's not easily impressed with vegetable-led dishes, this was delicious. This dish was visually vibrant, and the flavor mirrored that vibrancy. The beets themselves were stunningly soft, even juicy I'd say. It's root-y flavor was ever-present, but it never became unwelcome on the dish. "Fragrant" is another word we all used to describe the plate, with the fresh mint and succulent citrus fruit widening each our eyes. Sweet, savory, fresh and...creamy. This salad sat on top of a delightful carrot labneh, which provided a creamy element further elevating the dish. It brought a bit of tang to the salad that I appreciated. Finally, there was a crunchy detail (which we know I love) from intelligently included pieces of pastelli--a Greek treat made from sesame seeds and honey, and that sweet crunch fostered the table's excitement. Trust was firing on cylinders early, strong start. Hamachi Crudo Insane. I'm a big fan of the amount of flavor that's packed in such a delicate dish. Off rip, you're met with a visually exciting dish. Red, green, and purple from the thinly sliced pepper, cucumber, and radish pop right off the dish. Bright colors and exquisite execution, placed in a circle to match the shape of the dish, had each of us salivating. With the first taste, the crisp bite of fresh cucumber catches your senses immediately, and then subtly spicy, cream sauce. It was aguachile blanco--my first time having the blanco variant. The flavor was stupid, I struggled to describe it's uniqueness. The Mexican flavor profile was proliferated by fresh cilantro and thinly sliced radish, followed with a textured salsa seca. The light nature of the dish paired pristinely with the beet salad. Now, these next two dishes were an exciting 1-2 punch in showing you exactly what Chef is all about--that signature wood fire Wood Grilled Cauliflower I always eat my vegetables, but I rarely enjoy them. They're two for two in accomplishing that feat. In a bowl lined with curry, they served up a healthy helping of cauliflower that showcases its smokiness first. With that first bite, you taste the fire quickly, but what surprised me most was how soft each piece of the veg was. The curry and smoky flavor from the wood fire paired deliciously. Though, my favorite aspect of this delivery was the inclusion of raisins and fresh mint. This was a new combo for me, and it delivered. The sourness from the raisins and the cool, herbaceous qualities of the mint cut right through the charred flavor. A beautiful contrast. As we continued to dismantle the plate, there was a familiar flavor that we all recognized but couldn't identify. Maybe it was the serrano aioli or the black lentils. Either way, we all enjoyed this one. Wood Grilled Octopus This was a favorite of mine, but I was alone in that regard. While nobody disliked the dish, the table had mixed reviews. For me, this was perfectly cooked. The texture of the octopus was ridiculous with a cooking technique that created a crispy exterior while maintaining a tender bite. The smokiness didn't shy away here either. I mean damn. Most weren't a fan of the pepperoni, but fresh, ground meat added a rustic flavor pop that satiated my palate. It held that beloved pepperoni flavor, but this style allowed for it's flavor to spread across each bite. What made this dish unique from any other octopus I've had was the addition of castelvetrano olives and legumes. They both brought an interesting flavor and texture element that surprised me. Lastly, the salsa verde served as a perfect sauce, providing an element of moisture that complimented the charred features. Well done. After round two is when shit got real. Crab Fried Rice OH SHIT. WTF. One of the best rice dishes I've ever had. This is one we all wished was much much bigger. Despite the name, this dish includes chunks of incredibly juicy, wood-roasted lobster that there was never going to be enough of. The crab was shredded and could be found in each bite of plump rice, providing a pleasing flavor. Both a lemongrass emulsion and Thai chili were included, offering a wonderful duality of zest and spice. I thoroughly enjoyed the basil and cashew elements as they created some extra variety in flavor and texture. Not much else is needed for me to say, it's a must order. Char Sui Glazed Brisket OH SHIT.
