The ordering decision tree proceeds as follows: 1) Decide whether you want tacos, cheesy tacos (called, quesatacos) or a platter, 2) Pick your proteins (vegetarian options available), and 3) Determine which toppings and accoutrements you want on top of your tacos. The best part of ordering was seeing the fresh masa and tortilla press right behind the counter, a reassurance that these tortillas would be as fresh as one can get. And they were. Not only that, the meats inside them were incredible. We tried the birria, carne asada, crispy fish, and smoked chicken, all of which were conversation-silencing delicious. I'm also not a bit embarrassed to admit I sipped straight from the small cup of that rich consommé that's meant as a dipping broth for the birria tacos. If I had to pick a least favorite from the bunch, it would be the smoked chicken, but that's not to say they were bad; the other ones just blew me away far more. The chicken tacos were packed with tender meat and redolent of smoked wood, a flavor I wouldn't have expected to encounter in the middle of a shopping mall. Most of the restaurant space seems to be reserved for the ordering and food prep area, but there's a decently sized seating area right outside the restaurant and even more places to sit a little further away from Carlito's if the tables are full.

While it normally comes topped with sauce we asked for it on the side for allergy related issues leaving us to try just the riceballs at they were super crispy on the outside, warm and soft on the inside and all the salty and savory flavors went well together. It was also one of the few trucks that had its own eating area that was a bonus, and the owner was wonderful to chat with. We will definitely be eating these balls in the future.

They grilled all the fresh corn, seasoned it, shaved it off the cob and had a big hot pot of it to make individual portions in cups. Plenty of fresh queso fresca was there to use as well. Stacy the coordinator got back to me with unbelievable speed. She answered every question promptly and had great suggestions. The day of the event the catering trucks showed up early. Steve and his crew set up with unbelievable speed. Everything looked so beautiful. Everything looked so professionally done with amazing little touches like flower garnishes, and fancy gold chafing dishes. Hot foods were served hot, cold foods were served cold. They even had a proper carving station with heat lamps. It all looked so amazing and tasted even better. All staff was in uniform, and they were very cheerful and polite. They went above and beyond the entire day to help me and my entire family to make sure everything worked out beautifully. People were raving about how delicious the food was even days later. We had neighbors telling us. The smell from the food truck were making them crazy! I especially have to give a special call out to the flank steak with the chimichurri sauce. At the end of the event, they packed up quickly and quietly, and I hardly even knew they were here. They wrapped up all the leftovers beautifully and left everything neat as a pin.
