This is my favorite restaurant in this part of Tx. Mai sure to make a reservation if you show up with more than two people. The crispy rock shrimp should be illegal. Way too addictive. This part of Texas has no business having sushi that good either. Used to always get the wagyu ribeye, then th Akaushi, then I tried the lamb chops and got stuck on those. They've got a desert that I can never remember the name of that looks kind of like a cheesecake. It's phenomenal. Wait staff is always terrific. Bugs!!! Eaten here a couple times, but the last time there were tiny black bugs flying all around. I did let the manager know. He saw them and even squished one on the white cloth tablecloth to kill it and then wandered off...never to be seen again. We ordered an appetizer, 2 entree, and dessert. Service was just so/so. Nothing on our ticket was comped for bugs nor were we offered to move tables. They were not overly busy. I visited here one night since it was relatively close to my hotel. I didn't initially realize it was a restaurant owned by Graham Ellliot, who is coincidentally 1 day younger than me. The menu consists of raw plates, apps, salads, sandwiches, land and sea plates, and steaks. Half of the front of their menu is devoted to sushi rolls, containing elevated items like lobster and waygu steak. On the rear of the menu, their side dishes didn't really impress me as there are many starches and only 2 green veggies. This restaurant is still very classy in several ways, or at least they make a valiant attempt. One example, when ordering sushi rolls, they bring out a nice metal chopstick holder. However, the chopsticks themselves are just the cheap wooden ones in a paper packaging. I decided to sit at the bar since the dining area looked busy; however, the bar area was also just as busy. On the bar side of the restaurant, there are actually many more tables toward the back which were mostly vacant during the majority of my visit. I decided to order the steak frites which they say is a Denver cut. Denver steaks are from the well-used shoulder area and typically have great marbling and a deep beef flavor. The dish comes with their truffle fries and bearnaise sauce. It's a simple dish and not their priciest cut, but it's the most affordable way to get one of their steaks without being presented on a sandwich or priced in the 68-275 range as their other steaks. Steak frites - the steak was tender and very tasty. It actually was much better without the room temp bearnaise sauce. Not sure why they have that on the plate since it ruins a steak imo. The steak itself was also luke warm and not hot from the broiler. The fresh cut shoestring fries were warm but not quite as hot as I was expecting. Luckily, the garlic aioli helped. This restaurant is a great place for many occasions but can also be a good place for someone dining solo looking for upscale food. read more

This was my second time to dine at Cowboy Prime and the entire experience was over the top on quality. The tables are set with nice tablecloths nestled under some pretty cool artwork. They also have a big bar area so there is an ample dining area. Our server Sam was quick to make suggestions based on what we wanted for a light, casual lunch. We decided to do fresh oysters and sushi. The oysters were very nice, from Prince Edward Island so they were small and perfectly packed with a briny punch. The sushi roll we ordered had the freshest tuna wrapped around a tempura shrimp. It was delicious. The service really was as good as the food, and Sam recommended a perfect wine pairing for the seafood. Voila! Magnificent! Did I mention the butter cake dessert? If you're lucky enough to go when they have this in the offerings, get it! It was so good. I can't wait to go again and hopefully try one of their steaks. Or, anything else on the menu. Had tried to make a reservation and couldnt get one, but Brian on the phone encouraged us to walk in, and when we got there, he was able to seat up immediately! Our waitress was Kassandra, she was truly excellent. Personable, charming, and funny, but most importantly made great recommendations and was super attentive. We went to celebrate a birthday. We were seated promptly at a nice table in the new section. It was a Friday night so things were a little loud, but not excessive. Our waitress was friendly and attentive. She kept us in drinks and served us promptly. Our appetizers were tasty. I had a special salmon sushi and my wife had a potato soup. I also tried a special lobster pasta for my entree, while my wife had a sliced dish. The only complaint was my wife's dessert, a molten lava cake that was tasty but didn't live up to the name. When cut, no lava. It's steep, but when we can we enjoy the experience. read more

The food was delicious! The octopus was my favorite. Great parking, excellent service. Our waitress Caydence was very attentive and thoughtful, which added to a positive experience for us. The manager was also friendly. The place was clean and the bathrooms were impressive. I honestly considered taking a picture of the ladies room because it looked so nice, beautiful peacock wallpaper, but ended up not doing it. If ever in the area I would go again and I do recommend you try this place. They also have a good selection of menu items with different price points. What is going on with these steaks? As the 1 star reviews indicate there are significant challenges with the steaks. First attempt Jan 3 2026. I ordered NY strip (Wagyu) and specified medium. What came out was a steak that was half rare and other half barely medium. Like the steak was half on the stove and other half just hanging around. The rare part was so rare it was still attached to the cow. 2nd attempt March 17th 2026. Learning from previous experience I ordered same steak, Wagyu NY strip, as a medium well. I was thinking some 'Kentucky windage' on the steak cooking might get me a better result. Nope. Now the steak was well done and the ends were just...carbon. It was over salted as well. These are $100+ dollar steaks. I eat at Delmonico, The Cut, Prime, restaurants in Vegas 2-4 times a year. The steaks at these premium establishments are $20-$30 less and never disappointing. If Cowboy Prime could come close to this level of performance, I'd be down there 2-3 times per month. The good Caesar salad is off the charts good. Crab cakes good Rock shrimp good All American burger good Whipped potatoes are fantastic. Drinks are good. Dessert menu is slim but very good offerings This place has alot of potential. If they can get over the hump on the steaks this would be amazing. I would also try to enforce a dress code. The worst I saw was a guy in a tattered, ripped, and dirty hoodie with a green beanie, and quite frankly looked "unhoused". read more

I was visiting Midland and tried this place. My son told them he had a nut allergy and waitress said she would inform the chef and the Spanish octopus had no nuts. After a couple of bites my son said he had an allergic reaction that was mild at the time. The manager came after the meal and I told him I thought the octopus was prepared with peanut oil. He confirmed with the chef it was and he was unaware. My son became ill later that night and threw up a hundred dollar steak. I'll start this review by saying that I ate Cowboy Prime while visiting Midland from out of state. The service at Cowboy Prime is incredible, every server consistently ensures that your water is filled and checks in regularly. The servers were knowledgeable and were more than happy to ask others with more insight if they didn't have the answer. The food was good, but in my opinion was overpriced. For example, the steak and frites warranted more of a $25-30 price tag as opposed to the nearly $40 price tag (although the price of the service does make up for it a bit!) The atmosphere is definitely unique compared to other places in midland. The music is a little loud and makes conversation challenging, but the nice counter to that is you don't hear anyone else's convo either! read more

The wait staff and bartenders are the only redeeming quality this place possesses. Aside from Audi the management is blatantly and flagrantly rude and actually hostile. I've never eaten in here and spent less than $250. I would add I'm a generous tipper and have a great report with the service staff. The food quality is marginal at best. It's not bad but it's never good. We prefer to drive a long way to F1 for much superior food and service. I could not believe today the manager with really long hair extensions was so in my face rude and hostile while delivering a dozen market price oysters! I asked for salt and tobasco sauce. The audacity to be flagrantly blatantly rude?!? That's not the Texas way. Bringing it back our last experience a month or so ago another manager, an older Hispanic lady was also in my face rude. What is going with your team? The service staff is constantly tired because the food quality is in the toilet and management is apparently meeting them there matching energy. The consensus around town is the same. No one wants to go out to lunch to spend 250- 500$ plus to have a questionable and uneducated management team verbally harass you. I'm so disgusted and disappointed. The management team used to be very solicitous and responsive to support the service staff in the face of the poor food quality. That has completely disappeared. Had a great meal here with a few friends. The restaurant itself was beautiful, with large sepia toned photos of cowboys, white marble, deer heads,, and golden chandeliers. Think sophisticated cowboy. The food was easily the best meal we had in Midland. Their octopus appetizer was succulent and savory. The tuna tartar was a little mayo heavy, but still fun on a bed of crispy rice. And their ribeye was impeccable. So tender, seasoned expertly, and with a great char. We had quite a few old fashioneds throughout the evening and they went down so easy with the food. We capped off our night with a baked Texan, their version of a baked Alaska. Food was good, a salesguy took me there and I ate the golden tomahawk steak it is WAY overpriced, I've cooked many of tomahawk's myself from HEB that were huge and about $70, their "gold" one I'm wanting to say was $300, if a steak costs that much I would expect to not be able to finish it. The food was delicious! The service for us was extremely slow, and not great. Our waitress was good, but her help and fact that they had her serving tables on other side of restaurant made for worse service, not her fault. It took about 45 min to receive our appetizer of oysters. They were good but small, and after 45 min we wanted main dish. An hour and half in we received our entrees. The sushi was TOP NOTCH, super tasty. And the steak sandwich was also very good and I enjoyed it a lot!! The restaurant itself has a great, upscale atmosphere. All in all I loved this restaurant, but I definitely want to go back and see if the service was a glitch or if it was that slow all the time. All reviews are subjective, and judged by what a restaurant is trying to be. A great burrito at a hole in the wall (love you Oscars) is different than a place selling a $200 conspicuous consumption ribeye. Service was phenomenal. 10/10. Attentive, friendly staff who provided suggestions and had real menu options. Bar staff was engaged in conversation with customers but didn't stop making drinks. Good ambiance. I liked the 80's New Wave/alternative music and the volume wasn't so loud that I couldn't have a conversation at my table. Dig the wallpaper too. It's an oddly laid out setting, but the expansion should help that. The food was disappointing. Steak tartare was good, but serving it with house chips was a big mistake. The saltiness of the chips combined with the salt from the capers overwhelmed the other flavors. I get they were going for a textural difference, but the application was poor. Some of the chips were stale, and some were overly greasy like they hadn't been drained or the fryer wasn't up to temp yet. I had the steak frites. Steak was cooked PERFECTLY medium-rare, which I've never had around here. It usually comes out medium. Frites were a massive disappointment, unless you are a time traveller from 2012. Way too much truffle oil and Parmesan. That fad needs to die. I guess since it's finally in Midland, it will. The container was there to give the dish some verticality but just allowed perfectly cooked fries to steam themselves and turn soggy. Crab cake was good, but fishy. Seafood in Midland is a crapshoot anyhow. House Caesar was great. Full sized plate portion. I could have eaten an entire bowl of the ratatouille. That was served the traditional way, not the Remy the Rat way. Creme brûlée was perfectly crisp, right texture for the custard and not overly sweet. The berry crumble would have been thrown out at your grandma's house for being a half-ass cobbler. Sauce wasn't allowed to thicken properly and the crumbles were barely cooked. If you want to spend $250 for dinner and drinks in Midland, go to Opal's Table. If you want a 'upscale', modern food dining experience for $200 in the Basin, go to Flair Taverna. If you want to support this otherwise fantastic ownership group, go to Red Oak or Cork and Pig. For the price, I can't recommend Cowboy Prime for anything other than lunch on the company card. Our party of 2 ordered a $95 New York strip med well & a $120 ribeye well done. The New York strip was dry & tough and the ribeye was charcoal burnt on the outside. It was not edible. The waiter asked if there was a problem & we explained & he said he would speak with the manager. The manager walked right by our table without even acknowledging we were there. We were then presented with a $225 bill and no acknowledgement that it was not edible. I hope this keeps someone from making the same costly mistake we did. read more

Wonderful service, excellent meal, nice wine list, and a full bar exactly what you want in an upscale steakhouse. The menu is a la carte, with sides served family style. Our group especially enjoyed the fresh creamed spinach and asparagus. The tuna appetizer was tasty but the experience is more spice than tuna. The shrimp cocktail is quite good though. For desert, the bombe Texas is the clear winner with full table side flambé. Though the Milton chocolate cake and crème brûlée were not disappointing. We took Nathan to Cowboy Prime in Midland - the new restaurant by Graham Elliot!!! It was beyond divine and the service was impeccable!!! They went above and beyond for Nathan's birthday and made our 7 and 9 year old so comfortable and happy despite not having a kids menu and the fact that they were splitting a steak AND like their steak could opposite temperatures! (The chef was kind enough to cut it in half before cooking it and cooking the halves as if they were completely separate steaks from completely separate orders!) I called ahead to make sure it was kosher with the rules and they let us bring our own cake from a local bakery and then they even put their OWN candle in it when we were ready for dessert AND served it to the table while singing "happy birthday" to my husband! This was after every single employee had checked in on us throughout the meal to see if we needed anything and how we were enjoying our food and our experience or if we needed anything to be different! The price was significantly higher than our most expensive dinner out together as a family of four and I would have gladly paid double or triple for it! It was a magical night with great food (the kids asked if we could eat there every single night! and they are PICKY eaters!), incredible service, and wonderful family time! Had high hopes given that this is supposed to be a steakhouse you would think they would know how to cook a steak. Think again. Sides were pretty good, salad was fair, but the steak was not just under, it was raw. Purple to be exact. This wasn't the first time this has happened at CP either, it's the 3rd time. The only good things I can say about this place is they spent a ton of money on the design (it's impressive) & they make a pretty good meatball on the appetizer menu. They should turn that into a dish & back away from the steaks until they learn their way around whatever means they are using to try to cook those steaks. It isn't happening & it isn't just me. Lots & lots of people feel the same way. For the highest prices in town, they should be good at it by now. Go to Texas Roadhouse or Longhorn. Cheaper, friendlier, better. read more

after reading reviews, I had high expectations. all I got was a high bill. I am a ribeye guy. so I tried the wagyu ribeye. it was cooked ok but lacked flavor. I did not spring for extras like butter. I brought my own sweeteners to use with unsweetened iced tea. they didn't offer or ask why I had my own. I didn't ask either. if they offered bread with butter, I would have used that butter for flavoring the beef. but there was no bread either. over all, it was an overpriced steak cooked marginally. you'd get better flavor from other area stek chains and be able to go there three times for the price of one. read more
