The ambiance was incredibly warm, beachy, and romantic- perfect for a date night or girl's night. A truly beautiful space with an equally impressive menu! The entire night was filled with good bites only! To break it down: Seasonal Spritz: This was a sparkling wine with ginger, white peach, and citrus. So bright and refreshing! Honestly, my ideal spritz. Crudo: Highly recommend this starter! It featured thick cuts of yellowtail, watermelon, cucumber, ginger, thai chili, and thai basil. Really clean and fresh. I was surprised by the amount of fish we got! Local Catch: Another winner. This was roasted yellowtail with summer bean, tomato ragout, and Jimmy Nardello peppers. Absolutely no notes! Rigatoni: Our standout dish of the night! It featured summer squash, saffron butter squash blossoms, blistered tomatoes, and parmesan. I'm not usually a fan of cream based pastas, but this one blew me away. The veggies really brightened things up and I felt like I could eat plates and plates of this. If you get one thing, please let it be this! Since we mentioned in the res that we were celebrating, they brought out complementary champagne at the start of the meal. Loved that they treated us to cheeky little drinks- we're not the biggest fan of sweets!

Great for a date or a girl's night out or a solo treat yourself. They have a large variety of wine from all over. And their menu has some light fare or full dishes if you want to have dinner. Everything smelled really good coming out of the kitchen. I got a wine flight for $20 and the champagne nachos. I already ate dinner but our friend recommended this, so we had to try it. Perfect for a light snack. I really enjoyed my flight and bought one of the bottles. Ended up getting a bottle from Portugal as well from their shop at the door. If you don't feel like sitting to have a glass of wine, you can pick up a bottle and enjoy it at home.

The service is fast and they're incredibly kind. It's a bit cramped in space when they're packed. It's more about walking to order where it feels crowded. Paon is truly a hidden gem nestled in the heart of Carlsbad Boulevard. The entrance leads to a nicely appointed outdoor patio with plenty of tables and heating lamps for those chilly evenings. The interior was equally cared for with tasteful Christmas decorations and table dressing. Our waitress was very attentive, knowledge of the menu, and provided great insight on the wine list which helped us in making the right selection to accompany our meal. For our dinner we ordered the French onion soup and organic beet salad for starters. Both were very delicious. For dinner, we ordered the pan roasted King Salmon and the braised Beef shortribs. We both very pleased with our choices and enjoyed every bite of it. To close the experience we ordered the Creme Brulee and shared some complimentary Pistachio ice cream. I was disappointed about the service on 2 different occasions. They had a BOGO Free Matcha Day and I was there early...anticipating some traffic. Then I went to their 1 year anniversary celebration, I ordered the rosè wine slushie...it came out looking like a sad drink with a shriveled up strawberry. I wondered why my drink wasn't filled up to the rim like everyone else and to top it off my food was off too so I have mixed feelings about this wine bar.

We were seated in a small room off the main dining area, and we were the only ones in the room. Our waiter was friendly, but he was also taking care of tables in the main dining area, so we were often left on our own without anyone checking in on us. It also took quite a while before we were able to place our order. I ordered one of the mushroom pasta dishes, and unfortunately, I found it to be lacking in flavor. Someone else in our party ordered one of the specials, a steak, and that looked absolutely delicious. Overall, I was hoping for a better experience, especially since we were celebrating a birthday. While our waiter was nice, the slow service and lack of flavor in my meal left me unimpressed. Based on this experience, I don't think I would return.
