Worth Every Minute of the Wait! I've been going to CorkScrew BBQ since before the Michelin Star, and I can honestly say it was amazing then, and it's still some of the best barbecue I've ever had. This visit, I ordered the brisket platter for two, and just like every time before, it delivered. Incredible flavor, perfectly cooked, and presented really well for BBQ. Now let's talk about the wait because yes, it's real. Expect 45+ minutes, and if you're smart, get there 30-60 minutes before they open. I showed up 15 minutes after opening and the parking lot was already full. But here's the difference: they make the wait enjoyable. Staff walk the line so you can order drinks while you're waiting, which is a great touch. Customer service is top-tier. One of the owners, Nicole, was kind enough to move cones and help me find parking that alone says a lot about how they treat their customers. Corkscrew BBQ is such a gem near Old Town Spring! The area itself is adorable--perfect for walking around and exploring little shops before or after you eat. The food is absolutely incredible and easily some of the best Texas BBQ you'll find. Be prepared though: you'll want to get there early, and expect at least an hour wait (especially on weekends). Parking is limited, so you may need to park on the street and take a short walk. But trust me--the food is more than worth it! Since we were coming to visit family we decided to try this Michelin starred BBQ place, only one of 4 in the United States. Mikey Chen mentioned that you can call ahead so that you don't have to wait. So we called in an order for Friday late afternoon. We drove up to what looked like an old fashion saloon. On the side of the restaurant was a large outdoor seating area. Inside there were some tables and chairs and you can smell the BBQ coming from an open kitchen. You have to text them to let them know you've arrived then they start packing your order. It was such a long drive back with our very heavy box full of yummy BBQ. The whole car smelled like smoky goodness and pickles. We got sausage, brisket, pulled pork, ribs, plain potatoes, and mac n cheese. They gave us free sauces, pickles, jalapeños, and onions. They gave us sausage was a little salty but it had good flavor and snap when you bite into it. The brisket (ordered the fatty version) had a beautiful bark, was tender, and juicy. I usually don't like pulled pork because it's usually too dry and tasteless. This is the first pulled pork I've ever had that was moist, flavorful, and needed no sauce to eat. The ribs were pretty good but not the best I've ever had. It was drier than I expected. It was tender but there was still a nice chew (didn't fall off the bones). It needed sauce which is also very good. There were two types: one was a typical BBQ sauce while the other is more like a smoky soup. They both enhanced the flavor rather than hide the flavors of the meat. The potatoes and mac n cheese were also highly praised. Another stop on my Texas Top Monthly 50 BBQ spots. So this was stop #2 on our 48 hour weekend journey. Husband and I arrived at Corkscrew BBQ at around 12:30pm . The place was crowded with a line out the door and on the covered porch. The parking lot was also crowded so we had to circle around a couple of times in order to find a spot. We got in line and an employee walking around told us the wait was 45-60 minutes. Line was long heat was set to HOT! Once we got inside we decided to get our food to go as all the tables were full. I tried a bit of the moist brisket and while it was juicy, I don't like the fatty texture. jalapeño cheese & garlic sausage, favorite was the garlic sausage. 3 cheese mac & cheese it was a bit salty but bursting with flavor. pit smoked beans had a sweet and smoky flavor. Got here 2.5 hours before opening to get a number. Once doors opened the line moved pretty quickly. The service was great and they help you double check your order several times and offer suggestions for what to get. The brisket was super yummy--hot take I actually preferred the lean over the moist. We tried both types of sausage, I definitely preferred the garlic over the jalapeno cheese, but both were good. The pork ribs were yummy and paired really well with the barbecue sauce. Also managed to snag some beef ribs because we were there on a Saturday, and I thought this was alright. I got the 1 pound loaded potato (I LOVE when bbq restaurants offer a loaded potato) & added pulled pork. I also got a side of the green chile ranch & an iced tea. It was very good & the cheese was still melty when it arrived. The chile ranch was good, but not as good as I expected. I probably wouldn't order again. There was no bbq sauce on the meat & I would definitely want to try that next time. Personally, when I eat bbq, I want good tea. I've been on a hunt to try Michelin restaurants on my travels, so I'm glad that Texas finally joined and Michelin released the Michelin guide. I reviewed Corkscrew over 7 years ago but feel the need to update. Came back to join a friend after work since I was visiting my therapists in the schools. These were my old stomping grounds, so I ordered extra to take to my parents. To arrive here 45 minutes before closing on the week of the Michelin announcement and still have brisket and pulled pork among other meats is amazing. I was thinking they would sell out, which they did of the peach cobbler, so I'm sad about that and will have to come back. They cross off what is sold out on the huge chalkboard while you wait in line. There's a bucket of chalk for you to doodle on as you wait. The pulled pork was great. Brisket was just as I remembered - moist (yes, I said it. ha.), smoky and flavorful. Potato salad was a little more saucy but same flavor, a bit ranch-ish. I noticed they updated their mac and cheese from macaroni noodles to what looked like a pipe rigate. It was the right amount of cheesiness and is better than the Pit Room's and most other bbq joints. The brewed tea is always solid. I usually mix half sweet and unsweetened. I ordered 1.5 lbs of mixed prime brisket with a pint of each side. It came with fixins like bread, pickles, jalapeños, onions, and bbq sauce. Great for 3 people. Plenty of seating indoor and outdoor. Was nice and cool, so we sat outside. Even though they closed at 4 pm, they still checked on us and let us stay eating and chatting. They didn't rush us out. I was almost last on the gravel lot. Aside from that lot, there's side grass parking and a few spots at the front of the restaurant. Still amazing in my book. I had them listed as my hidden gem, but truly, it's no secret. Best BBQ that I've tried in Spring/Houston area!! I'm very grateful that I tried it literally the week before they got their Michelin Star, because even then the line was crazy! The brisket is super moist and literally melts in your mouth. We also got pulled pork which was super moist and delicious. The sides are also great, the mac n cheese and potato salad are my favorites. There is a decent amount of parking - but you may have to park on the road. The line is also crazy so if you are planning on going I'd definitely be prepared to wait at least an hour an half or so (depending on what time you get there). I'd also go early because they do sell out of some sides and meats fairly quickly, which you won't know until you get to the front. There is seating inside and out. There were 6 gallon jugs of water with cups on a table near the front door. There was also an employee taking drink orders for those who wanted more than water to drink. Several items sold out as we were standing in line, which was to be expected with it being a Saturday and afternoon. We opted to stay and pick from the options they had left. So glad we did! 5/5 Jalapeño sausage- The flavor was simple and the casing had a mouthwatering snap. 5/5 Apple cobbler- Superb! It was the best of all things apple pie; consistency of the apples, a bit of crust, sweet and savory. 5/5 Brisket- I preferred the lean cut but the fatty was delicious as well. I haven't visited since they were awarded the Michelin star but I certainly see why they were recognized. I've experienced lots of BBQ spots and North Carolina was previously my favorite. I've had Corkscrew BBQ on my long BBQ list for the longest, but the distance has kept me from getting here. My cousin from out of the country was in town so I knew this was my reason to make the drive. You may have heard in recent news that Corkscrew was one of four BBQ spots in Texas to receive a Michelin star. This place was already popular and considered one of the best in the greater Houston area. Combine that and you know you will be in for a wait. Corkscrew is located in Old Town Spring which is a quaint little town with lots of charm. Parking is minimal on the property. We ended up in a lot nearby which cost 5 bucks either by an app or put cash in a box. The lot is monitored so do the right thing and pay up. Our plan was to arrive early but Houston traffic had a different plan for us. We arrived 15 minutes after opening and there was a line wrapped around the building and snaking around their patio area. There is seating inside and out, but saving a seat without food is frowned upon. This is one of those spots where you should eat and go and make room for all the hungry peeps in line. From our spot in line, it took about 2 hours to order and receive our food. I have no problem waiting if the food is solid. They do walk around and hand out menus and even take drink orders. We got cold drinks and was under shade pretty quick so all was good for us. Once inside, there is still a little more of a line. Once you order, there is again a wait for your name to be called to come get your food. I found this a little different as most BBQ joints slice and plate in front of you. All that waiting and we were ready to grub. You have options as far as the menu goes. You have the meats here which they sell by 1/2 and full pounds. Your choices are Prime Creekstone Brisket, turkey breast, pulled pork, jalapeno cheese and garlic sausage, and pork ribs. They have plates, daily specials, sandwiches, tacos, salads and baked potatoes as well. On Saturdays they have whole beef ribs and whole chicken as well. We knew we wanted brisket, turkey and sausage but were unsure how much with our party of 5. The staff there gave us their expert advice which ended up saving us money. Love that kind of customer service. We also got a pint of all their sides which included potato salad, sweet and spicy coleslaw, pit smoked beans, and 3 cheese mac N cheese. We got our beautiful tray of meat, complete with all the fixins'. First things first, I tried everything individually without modifying or adding sauces. They gave me a mix of lean and moist as requested. Let me tell you...that brisket was amazing. It was cooked to perfection and not overly seasoned like most BBQ places. With this brisket, you could taste that quality beef. When I thought it couldn't get better, I tried the turkey. Perfection again. You don't need sauces with these meats. I'm picky about sausage and here it was better than most places. The sides also blew me away. Every single one was excellent. I'm usually not a beans guy but they had some of the best beans I've had. I can say the same thing about the coleslaw and potato salad as well. The mac was good but didn't wow me like the other stuff. Everyone in my party all made that wow face after our first bites. The brisket was the right amount of moist, and full of flavor. The potato salad was not my favorite; it felt a bit too much on the vinegar-y side for me. My partner enjoyed the mac and cheese. The ribs came off that bone with no fuss and tasted absolutely divine! The sweet tea was great as well. I was glad we came a little later in the morning before the lunch rush really took off. This is a hidden gem for real. It's so deep in the cut I thought I was lost. Let me tell you it was packed at 11 and they opened at 11. The food was piping hot and very delicious. The brisket was cooked to perfection and the spicy coleslaw was not spicy but very tasty. The service was superb and the wait staff was absolutely attentive. The cashier knew what he was talking about and suggested a side rib which was a great additive to my meal. Now it is a little pricey but you get what you pay for. $20-30.00 I even tried the peach cobbler and I'm not a sweets person but it was delicious Let me tell you I drove from Clear Lake to eat here. Corkscrew BBQ has a great barbecue vibe with nice indoor and outdoor seating, and it holds a Michelin Star rating. However, on this visit, the experience was a bit of a mixed bag, and we found ourselves preferring some of the other spots we'd been to today. The brisket was a little disappointing. It was on the dry and crumbly side, and a bit salty for our taste. It wasn't terrible, but it didn't live up to the high expectations. The real highlight of the meal was the pulled pork. It was evident that it had been cooked low and slow, resulting in a very tender, juicy, and flavorful product. This was easily the best meat we tried and a strong point for the restaurant. The jalapeño and cheddar sausage was pretty standard. It had a typical consistency, but it lacked the coarser, double-ground texture you find in the best homemade sausages, which I personally prefer. We ended up skipping the sides, as nothing on the menu seemed particularly unique or special to complement the barbecue. While we appreciated the venue and the outstanding pulled pork, the brisket and sausage didn't quite hit the mark for us, especially given the restaurant's reputation. Despite its Michelin Star, we enjoyed the overall experience at other barbecue spots more. The pulled pork is definitely worth a try, but the other offerings didn't quite live up to the hype. We visited near the end of the day 3:15pm and they close at 4:00pm. I did not expect a Michelin Star restaurant to be mopping the floor with cleaning agent before close. This place lives up to the hype. Had to try this place after the recently-acquired michelin star and it did not disappoint. Came here a little bit late (2pm on a Friday) so they ran out of moist brisket (because is it brisket if it's not extra moist or fatty?), but the tradeoff was only having to wait 20-30 minutes in line with a very low wait time for the food. What we got: - Brisket: This is what was shocking. They only had extra lean remaining. I am a lover of exactly the opposite, but the cashier insisted I give this a try. Verdict? This lean brisket was surprisingly still tasty, not dry, and full of flavor. I can only imagine what the moist brisket will taste like the next time I give it a go. - Chopped brisket: Mainly got this because I was hoping there would be some fattier pieces of brisket in there. Similar to the above, it was packed full of smokey flavor, not overly salty, and delicious - Turkey: Let me state this point. I rarely get turkey nor do I particularly like turkey, especially at bbq spots. But what I've found is if the place does Turkey well (e.g. Interstellar in Austin), everything else must be amazing. This did not disappoint. Moist piece of turkey packed full of flavor. A little bit on the salty side but delicious overall. - Sausage: Great sausage, similar to what you would find at other reliable bbq spots Sides: Cole Slaw: The cole slaw was really, really good and helped cut the saltiness/heartiness of the rest of the meal. Definitely a favorite here Mac and Cheese: Was told this was delicious as well. Overall, the staff was super friendly and upbeat. Great recommendations, did all the little things (passed along menus while in line, mentioned what was/wasn't still available, etc.). It's a casual bbq spot with plenty of indoor/outdoor seating.
