The brisket was phenomenal, and the ribs can go toe to toe with the masters in the craft. The sides were just ridiculous, one of the only places I've eaten where every single side hit it out of the park. I also really wish they appreciated the attention to the dining experience more. I had a great experience at the rosemeyer BBQ food truck. The food was pretty delicious. And it was definitely less busy compared to corkscrew or other competitors . And great food for a great price & no wait is always an easy pick. I stopped in around noon on a Friday for lunch. It was pretty busy, but we didn't have to wait more than 20min in line. Service was good too - our food came out pretty quickly. Free beer helps! It was a little hot outaide, but they had good music and some nice picnic tables We got the loaded fideo bowl & the rosemeyer sampler. Everything was pretty delicious. The brisket and pulled pork were definitly the best items we tried. I thought the boudin and jalapeño sausage were good, but not as awesome. I was surprised by the gumbo - it was definitely different than what I expected, and I thought it was just ok. But the other sides were all yummy. I especially loved the fideo!! The loaded fideo was nice, but the side portion was perfect for me. Overall, good experience. Not as delicious as some rivals, but definitely better prices & less wait time. Continuing our tour of Texas BBQ on the sacred Texas Monthly Top 50 BBQ list, our latest stop brought us to Rosemeyer Bar-B-Q in Spring. An equally impressive accolade is their name on the 2025 Michelin Guide. One more cool fact while I'm at it, they do all this working out of a trailer parked on the side of the highway! My BBQ homies and I arrived about an hour early to make sure we get everything we wanted to try as this place does sell out quick. Pro tips, bring your own seats and in our case, an umbrella for those quick spring shower. We came prepared with a cooler of adult beverages, but come to find out, we didn't even need it. This awesome place provides a huge cooler full of free beer while you wait! In the Texas sun, this is much appreciated. Right outside the trailer is where the magic happens in their huge offset and rotisserie smokers. The guys working have no issues if you want to take a closer look. Right before they opened up shop, they came around with a huge tray of brisket to sample. This got me even more excited to try the food. The staff working here were super friendly like at almost every other BBQ spot we have visited. Between everyone in our group, I think we did a pretty good job of getting almost everything on the menu minus the sandwiches or specialty items like loaded mac or brisket quesadillas. Four of us decided to go with their 'Lil Bit of Everythang!' platter which serves 5-7 people. Well it fed four of us very comfortably with leftovers to take home. This platter literally came with almost everything. We got 1/2 a pound each of brisket, pulled pork, pork ribs, pork belly burnt ends, and a chicken half, plus 2 links of sausage, and 1 link of boudin and 4 sides. They give you a number and wait patiently. Your only options to eat are taking your food to go or set up shop on one of their few picnic tables. No sitting until you eat and I noticed people respect that rule and it does allow for everyone to eat comfortably. I really liked everything we tried. The brisket was tender and it had a nice bark on it which had just the right amount of seasoning. The ribs were fall off the bone tender and delicious. The pork belly burnt ends were phenomenal and one of my favorite bites. I don't know what they glazed with, but it delicious. It had a sweet and savory taste to it. Chicken is something I usually skip on, but since it was on the platter I got to try it. It was good. It was nice and juicy and full of flavor. One thing I really judge a place on is their sausage. Rosemeyer does it right! I loved the sausage here. It was packed nice and tight and had a great snap to it. We tried both the mild and jalapeno cheese and both were good. The boudin was also very good. Comparable to some of the stuff I've tried in Louisiana. They have six side offerings of which we got 5. We tried charro beans, dill potato salad, mac & cheese, and two unique items like fideo and mama's green gumbo. I personally loved all their sides. I would get all of them again. The one everyone in our group was iffy about was the green gumbo. It was full of beans which threw everyone off, but I loved the flavor profile of this. I would come back for a tub of that and put it over some rice and call it a meal. To finish off the feast, I had to get the bread pudding. If it's on a menu, odds are I am going to get it. I am so glad we did because the bread pudding here was out of this world good. Probably one of the better bread puddings I have ever had. It came out warm and maintained it's heat. They also added these tasty candied pecans that was a perfect compliment to the custardy bread concoction. A scoop of vanilla ice cream would have been gold on top. Speaking of ice cream, they are supposed to have some amazing homemade ice cream here and the flavors rotate. How many BBQ dudes do you know that do that? We were full, but I will try it next time. On our tour of Texas BBQs, we were really excited to try Rosemeyer. Just on the outskirts of Old Town Spring, sits this awesome BBQ truck. We arrived about an hour prior to opening, and there wasn't a huge line. We forgot our chairs, but it was all good standing in line. There were only a few others in front of us. As you wait, you can see the pit masters at work, tending to some yummy awesome food! As you wait, there is free beer provided! Thats a win win!! The guys were awesome. As we waited, I asked if it was ok to take some videos of them cooking, and they were like, yes, absolutely! As time got closer for opening, one of the guys came around with some free brisket for us to try! It was piping hot, and it was soo good, literally melt in your mouth!!! Which made us that more excited to try what was coming! There were 7 in our group, 4 of us decided to try the Lil Bit of Everything (that feeds 5-7 ppl). Which was perfect, because we truly wanted to try everything. It came with Brisket, Pulled Pork, Pork Ribs, Pork Belly Burnt Ends, Half of Chicken, 2 Links of Sausage, ! Boudin Link and 4 sides. The sides we went with all of them, and added 1 extra side to get all 5 and then added on the Bread Pudding for dessert. If it sounds like a lot, it's because it is!!! Everything we tried was super good, the ribs, slid right of the bone, and didn't need BBQ sauce, back to the brisket, super moist and tender, Sooo good. The burnt ends I liked a lot, they had some great flavor to it. The pulled port, I usually don't get from a bbq spot. It was nice and tender, but I would probably get that as a sando if I got again. The sausage was delicious, had a lite lil kick to it, nothing to get your nose running, but had a great snap to it. By the time I got to the chicken, I was stuffed, but from what I did try, had a nice smokey taste to it. For the sides, my faves were the mac and cheese and potato salad. The gumbo wasn't what I typically think of when I get gumbo, had beans in them, which I don't know is traditional, but was good to try. The fideo I had heard great things on, but I think needed a bit more of something to tie it together to bbq. But my absolute fave thing was the Bread Pudding!!! Uggghhhh it was soo good. And we almost didn't get it. It was nice and warm, and had the perfect texture with the pecans that came with it. Highly recommend to get that, and eat it before you get stuffed on everything else!!! Man, this place is so good!! I've been here twice now, and both times it absolutely hit. The BBQ is flavorful, cooked just right, and definitely worth coming back for. And don't even get me started on the homemade ice cream--it's SO good and the perfect way to finish your meal. Why 5 stars? Because there are some gems on this menu. --- --- --- I heard about Rosemeyer a while ago, but I sadly let many months pass before I actually visited. Recently, when Rosemeyer was featured on the Texas Monthly list, I was compelled to finally make it happen. I arrived at 10:50a on a Saturday and was about 10th in line. I had my food by 11:40a. The line moved a bit faster than I was expecting, as this is not like some other trucks that only take one order at a time. The seating: there are several picnic tables setup near the truck. I strongly recommend against doing what I did and planning a "dine-in" visit during the middle of summer. Not only was it hot, but we spent half of our time shoo'ing away flies. That's not the fault of Rosemeyer, but just a piece of advice for future patrons. As for the food, starting the the meats: -Burnt Ends: 5-stars. I will start with the highlight of the meal. Do not come here without ordering these. These are different than most burnt ends: there's almost a sweetness to them, like they use a hint of sweet thai chili sauce on them or something. But the main appeal is that they are so tender, that I'm not even sure how it's possible. Or legal. -Pork Ribs & Brisket: 4-stars. I enjoyed both. I've had better at my favorite BBQ spots, but I would not complain about eating these two things on a regular basis. But I can't say that either were at the highest level that I'v experienced lately. -Pulled Pork: 3-stars. This was just okay. I usually say that it's hard to really mess up pulled pork, and not that it was bad here, but it definitely wasn't remarkable at all. I took 3-4 bites and had no need to go beyond that. SIDES: Mac-n-Cheese: 5-stars. Bomb, no notes. All mac-n-cheese should taste like this. Coleslaw: 5-stars. This was maybe the best coleslaw I've ever had. Same note as above: it should always be this way. Fideo: 5-stars. 5-stars for originality, 4.5-stars for taste. It's like a mini spaghetti and was actually great for BBQ. Potato Salad: 3-stars. Similar to the pulled pork, I tried a few bites and didn't need anymore than that. DESSERT: Banana Hammock Tan Line Ice Cream: 5-stars. This was great. I bought it to share between my friend and my son. My son took one bite, my friend declined altogether, and then I crushed the rest in seconds. It went down easy. The pitmasters Ben & Jordon are some of the best people I have ever met. The whole crew is impressive. They welcomed us in and treated us like old friends. We told them about our 48 hour BBQ journey to visit 5 BBQ places in Spring & Montgomery, Texas. First know this is a food truck so eating is outside at picnic tables under umbrellas. Second, this is a card only place NO cash. Third, they have FREE beer to enjoy while you wait or to have with your food. Fourth, they have different daily specials along with different monthly specials. Fifth, everything here is delicious. Sixth, they sell homemade ice cream. Yes! Ice cream that one of the pitmasters makes. The flavor changes monthly it is the best ice cream that you will ever have so save room!! We had, brisket which was tender, smoky full of flavor and love from the pit master's love labor. The pork rib was fall off the bone delicious and almost too perfect to eat. The jalapeño cheese sausage and Boursin are both made in house. Both are so heavenly that it made me feel like home. Husband and I ended our meal by sharing a cup of Blueberry Dreams ice cream (SWEET CREAM BASE WITH FRESH BLUEBERRIES. I tried Rosemeyer BBQ at Eeeeeatscon since I am a big fan of barbecue. The honey mustard pork was splendid and had a great texture. My only complaint is that I wished the skin was crispy. Y'all, let me testify. I love me some BBQ, and when I rolled past Rosemeyer BBQ and saw this bad boy had a Michelin star, I pulled into that parking lot like it was Sunday morning and I was late to church. I parked my car, took a deep breath, and said a quick prayer before getting out. The smell? Sweet Jesus. You can smell the charro beans from the parking lot, y'all. And when I read they had charro beans and a loaded Fidel bowl on the menu? Lord have mercy, my soul almost left my body! That aroma hit me like the church organ warming up hallelujah, I almost started clapping like I was part of the choir. Whoa I have to try that next time! And mind you, I was on my lunch break. $16 Mac and cheese with brisket. Lord, have mercy. White cheddar Mac, brisket on top, some green onions (or cilantro somebody ask Reverend Thomas), and a sprinkle of panko. I bowed my head, grabbed my fork, and went in ready to confess my sins. Pastor, are you gonna pray over it and multiply it like loaves and fishes? If you are alone and eat normal portions, you end up saving about $2 if you order the box. I chose the box with brisket and potato salad. It comes with all the fixings, which are your standard pickled jalapeños, cucumbers, red onion, and a few slivers of what appeared to be some sort of pepper. My box came with 2 slices of bread while my friends box came with 3. The bread seems to be a potato bread. The brisket is obviously prime and tender, when you order the moist as we both did. Rosemeyer BBQ is simply amazing! Houston might not have been known for BBQ in the past, but that's definitely changing thanks to this spot. They're only open Thursday and Friday from 11:00 a.m. to 3:00 p.m., so timing is key--something we learned the hard way when we arrived at 1:00 p.m. and some items were already sold out. That said, what we did get to try was phenomenal. The chopped brisket paired with their jalapeño sauce was a standout, and the pork ribs were perfectly cooked. Their brisket is absolutely delicious, and the pork belly burnt ends are some of the best things I've ever eaten. Expect a line, and plan for some foods to sell out rapidly! My husband is a brisket lover and ever since Rosemeyer Bar-b-q opened near our community, it has been a staple for our weekend dinners! Everything is so delicious and done perfectly! Hidden food truck on the side of the road which too many people are sleeping on. The guys behind the counter showcased excellent customer service; very friendly, and very understanding that I don't eat pork. Packaging is simple and elegant. Their turkey was amazing! I would definitely go back for their turkey with their bbq sauce. Brisket was moist AF, but a lot of fat. If I am in the area and am crazing BBQ, this would be my spot to go. read more

Another great bbq joint in the area to add to the list. Brisket, rib and pork belly burnt ends were delicious. Only recommendation is when ordering one of the boxes specify if you want moist or lean. My box had only lean while my buddies had fatty. I would've thought they would do half and half. Also noticed my box didn't have bread but his did. I thought that would've come with the box meal. The buzz is real as is the food. We stopped by around 12:30 and they already were out of ribs. I finished off their pork belly burnt ends and had the $20 meat plate that featured two slices of brisket and a link of sausage plus one side. I chose the dill potato salad. Others in my party had a brisket sandwich with added sausage. The pork belly burnt ends were the star. Not overly burnt, they were large cubes of pork belly slow cooked and dressed with a honey mustard bbq sauce, it was meaty and succulent. The brisket was good, a little lean for my taste but well smoked with a fairly neutral bark. The sausage was just ok, cooked well with a nice snap. The dill potato salad was bland and egg forward. One taste was enough for me. Service from the food truck window was fast and friendly. The ambiance was the great outdoors and picnic benches. read more

First, they have no reviews available on their website, which tells me they don't want to hear about growing their busines. My first and only time there was Saturday. My first impression was that it looked like an east Texas deer camp, with junk all over and a cover from I guess sun since it was like burlap stretched between 4 wooden 4x4's stuck in flower pots and looked like it could fall on patrons at any minute- really? I got there at10:40 they were supposed to open at 11:00, they opened at 11:15. I was encouraged by the long line that maybe was 25-30 people. I was like #7 in line. I got to observe like 3-4 men seemingly getting ready and taking meat off large smokers , and what seemed like a Christmas "idea" a large Halloween skeleton, 20 ft tall with a few Santa accents, leaning against their trailer? Then i observed their ordering regime. Which consisted of one guy taking orders off of hand written menus stuck on trailer, which looked like they were trying to be Cracker Barrell not a food bbq place. Like chicken dumplings, turkey poppers, and my favorite was homemade ice cream? They need to stick to what brought them to the dance. Next, i figured out why nobody remembers the name Rosemeyer because it is only on the side of the trailer not real big, and it sounds like a Mens Clothing Store! I was hoping i would not look like the 20 ft skeleton after i ate! So the only thing they have going for them is they were "nominated" for being in the top 50 bbq places in Texas by michelin, not a star like Corkscrew! So I orded my food which was pricey but I wanted to see. Half of pound of slced brisket, half rack ribs, half pound of burnt ends of pork belly, some Mac and cheese, my bill was $76. They shoved all that meat and pickles and onions and 3 plastic sauce containers with 2 slices of bread into a taco box!!!?! Are you freaking kidding me! I will NEVER go back!!! These are a bunch of guys that are part time trying to run a bbq place- words of advice- be man enough to post reviews, get some female help because you guys suck, and rebrand with a marketing plan! read more

Outrageous bbq!! I've honestly never had sausage as good as their jalapeño/cheese, and the ribs are done perfectly, with that awesome bite to them. They're only open at the end of the week, and only until they run out so you definitely have to plan your trip early! they always have an amazing variety as well to choose from. This was a new place that a foodie friend wanted to try. It's a good truck off Grand Parkway (99) and Rayford. There's a small parking area next to the truck which is next to a gas station. There are some picnic tables to sit at with pretty good shade. Their menu is pretty simple. Standard BBQ foods (brisket, ribs, pulled pork, turkey) and sides like potato salad, corn, beans, and Mac-n-cheese. We ordered The Rosemeyer Sampler $50.00 "Half pound of Each: Brisket, Pulled Pork & Ribs. One link of sausage & two sides (small). Served with bread, sauce & fixins" They were out of pork so they subbed turkey. The brisket was a 3/5. The jalapeño sausage was a 4/5. The ribs were 4/5. The turkey was 4/5. They were out of beans so for our sides we got potato salad and Mac-n-cheese. The Mac was below average 2/5 and the potato salad was good 4/5. My wife didn't like either side. It was a 30 min drive for us and we probably wouldn't do it again, except to hang out with friends (it's a 4 seater picnic table). The drinks were $2 each (water and coke) and they do have free beer. The girl at the counter was really nice so good service. Overall we all agreed it was just okay. read more

Burnt pork belly is phenomenal, brisket is melt in your mouth. The guys that run it are funny and nice :)

I stopped by here for the first time recently. The service was a little bit slow but the food was very good. They were out of a couple things, but it was still a good trip. Either recommended if you're in the area. read more
