Never visited the celebrated Book Bindery, but definitely glad to have dined at Copine this evening to celebrate a college friend's birthday (9/9/16). Reservations are imperative! Definitely, it was a major plus to have no previous knowledge or expectation about the culinary journey we were about to embark on. I am totally receptive to potentially being dazzled by culinary creations.
Interaction with the reception and wait staff was very welcoming, genuine, and polished. Even sneaking glances at the open view kitchen, the staff appeared calm, focused, and in sync. There were additional things I noticed that are usually reserved for fine dining, which I won't drone on about. Essentially that overall attention to detail, remaining approachable not fussy, paired with phenomenal service and culinary execution made for a top notch dining experience. Onward....
Seated with menus and beverage list, we perused the choices for starters and main entrées. Best introduction to prime the taste buds, we were each given a amuse bouche creation on a special fork, salmon topped with roe, creme fraiche and chives.. This was followed with an amazing savory roll and butter.
There is a full bar, wine and cocktail list. I opted for a refreshing iced tea ($4)which was kindly served with a slice of lemon and simple syrup. No gritty sugar crystals here!
For the starters, the birthday celebrant selected the most visually stunning dish I've seen in awhile, Hawaiian Hearts of Palm ($14) with young carrots, coconut, and ginger aigre-doux (sweet and sour profile).
I had the Warm Yukon Gold Potato Soup ($12) with confit potato 'parsienne', preserved black truffle and hen of the woods mushrooms. Excellent with the savory roll and butter. The hen of the woods mushrooms and hint of truffle was the exclamation points with this starter.
For the main entrees, Seared Halibut ($28) was the chosen one by the birthday celebrant. This also featured tomato raisins, nicoise olives, and artichokes. She especially liked the elongated bread baton provided with the tomato and olives.
Without hesitation, I selected the Crispy Skin Sablefish ($28). Usually I've had sablefish marinated in sake, but this preparation had picked vegetables and a bonito consommé poured directly when served. I enjoy fish and seafood and in my youth fished, dug, jigged, dealt with crab pots. Knowing what goes into that effort, one really is saddened when something is overcooked. This sablefish was superior...tender, moist, and the skin was crisped and seasoned to perfection! The bonito consommé was great, just trying to spoon up the dregs in such a shallow bowl was a challenge. Every component totally worked.
For dessert, our server was very kind and brought out the Peach Melba ($10) with a birthday candle. This was created with King's Garden peaches, frozen vanilla cream, and raspberries. The vanilla cream was really frozen, a bit of effort to eat. Maybe served with an ice pick next time, just kidding.
Our server highly recommended the Lemongrass Panna Cotta ($10) when I couldn't quite decide which dessert to indulge in. She totally nailed it and had all the components I remembered from plating desserts in another lifetime. The delicate panna cotta had a canele of passionfruit sorbet, which was surrounded by kaffir lime syrup. This was topped with an amazing macadamia nut tuile. The photo I took of this dessert doesn't do it justice. The sweet/sour, subtle/assertive, delicate/crunchy was absolutely a high point coming from this former assistant pastry chef.
I would have loved to linger longer with a Stumptown French Press. Seriously the interior and ambiance is very condusive to truly savoring your meal and enjoying the company you are with. But the birthday celebrant wanted to catch some sleep for more adventures the next day. I rank this among the most memorable meals I've had in the past year on par with Vendemmia, Seven Beef, and Girin. Simply outstanding, Copine should be on anyone's dining list.
