I was traveling from South Carolina to visit my mom in NY and stopped to pick up some cheese curds. They didn't have the flavors I wanted in the refrigerator section, so I asked if they had any available. They told me they could make them fresh for me. When they asked if I was driving or flying back home, I mentioned I was flying. They went out of their way to vacuum seal the cheese curds so they would travel better. They always have the best cheese, and their customer service is top notch. I really appreciated them taking the extra time to do that for me. read more

My friends and I stopped at this cute little store while we were in town for a rafting trip. The workers were friendly, the store was well kept, and they had a surprising variety of items for sale (including maple syrup, different unique flavors of jam, and hand crafted items). My friends got some of their cheeses and said they were delicious! My only downside was the price points. I understand why they would be a little higher, but some of the prices just made things way too inaccessible for my budget. Overall, definitely worth the stop, especially if you like local products! read more

Visiting from out of town- went to stop and notice a sign saying they had moved. Went to new location. It is nicely stocked with a variety of cheese. We bought probably 6 cheese in addition to local maple syrup, gourmet popcorn, Buckeye and balls. Great place for speciality cheeses and gifts. COVID comments: store had hand sanitizer, all customers wore masks (and wore them properly), not all staff had masks on. They were however working behind plexiglass but came out without a mask to find something for a customer or stock shelves. Store got busy for a few mins while we were there but everyone did their best to stay apart. Amish selling baskets outside were not wearing masks - but hey they are Amish. I'm gonna give them a pass. After crossing the US border at Cape Vincent we drove south drive south towards Syracuse instead of taking I-81, we decided to jump on Route 11 after Watertown to explore some of the sights off the beaten path. After making several stops along the way we decided to stop in at the Colosse Cheese Store in Pulaski, NY to see if they had some fresh curds (squeaky cheese). As luck would have it we arrived on the right day and they had just received some fresh curds from the cheese factory located in Mexico, NY. I'm by no means a connoisseur of cheese being there are literally thousands of varieties and each region across the world features their unique specialties - and the art of cheese making begins with the quality of the milk actually it begins with what the cows feast on that produces the milk, about 12% of milk is used in the making of cheese the remaining 88 % is known in the industry as "cows water". Once nature provides the milk the rest is up to the cheese maker then it's finished by tempering and aging. It definitely a form of art with a certain amount of magic mixed in. Sometimes these small cheese shops offer samples before you buy, unfortunately this wasn't the case here. I purchased a small pack of the fresh curds (7 ounces for $4.99) and went back to the rental car to give it a try - the curds were white (if you find some yellow ones they are the same, they just dye the cheese using saffron, marigold, carrot juice, or annatto - remember milk is white) - the curds were fresh and definitely squeaky - the texture was firm with a slight grit and salty by design. I think Little Miss Muffet would agree while enjoying these small bites from her tuffet they do a nice job here at Colosse, as far as the spider goes he can go a whey.... read more

Omg. Okay so I used to live in this area and we had colosse on the other side of 11 when I lived there. I came back for a visit and the cheese curd! Forget that river rat here is where it is at!! I also got friends and family some souvenirs (maple syrup) and local candies and honey. I recommend this place because it's amazing. read more

Great local business with seasonal hours so call before you head that way. Ridiculously large cheese selection and you can ask to taste every one. Separate ice cream business in the same building with so many unique flavors it will take you quite awhile to settle on just one. They have lots of outdoor seating - shaded picnic tables and they also have doggie sundaes for your furry friends. On certain days they have Amish selling their wares in the parking lot - hand-made baskets and baked treats. If you're in the area this is unique place not to be missed. read more

Locally owned and operated, Colosse has been a fixture in Pulaski for as long as I can remember. I was worried when it changed hands last year but nothing seems to have been affected. The store offers a huge selection of cheese. The two of note that most folks come far and wide for is the sharp cheddar (rat trap, 2x, 4x, and even aged for 10+ years) and the cheese curd. Tuesday is the best day to come for fresh curd (so fresh, it will squeak in your mouth, hence my favorite nickname - "Squeaky Cheese") but all other varietals are regularly in stock. There's even a frequent cheese buyer punch card that yields a $3 coupon once it's full. Outside, you'll find an ice cream window that serve's Perry and Hershey's flavors. There's also plenty of outdoor seating. You may also find the Amish, selling wicker baskets and baked goods or even a pulled pork food truck - you never know! We regularly visit Colosse before out-of-town visitors stay with us; and, always swing through on our own way home at the end of the summer. Review is on the ice cream not on the cheese. Ice cream is not handmade nor are the waffle cones. Overpriced for ice cream that is light on the add ins. My raspberry swirled ice cream had one very thin swirl and tasted more like basic vanilla. Cheese did look very tasty. read more

Made a stop to check it out and ended up buying some cheese and pepperoni AND getting some ice cream. They have different cheese to taste at the front counter, our favorite was Killer Dill aged cheddar - we ended up buying it. Their cheddar is different sharpness, they have it aged anywhere from 1-10 years. They also have farmers cheese in different flavors - horseradish, buffalo, hot pepper, as well as cheese spreads and hand rolled cheese balls. We saw smoked Swiss and smoked cheddar as well. They sell crackers and horseradish there as well if you're looking to make a snack on the road. As we left the store we saw people eating the ice cream from the shop next door and decided to get some. They have a ton of flavors, including lactose, sugar, fat free options. They make the cones in house and have chocolate dipped with and without sprinkles and nuts. I'm a soft serve fan, and hands down, this was THE best soft serve I have ever had. You can get it dipped in chocolate, also they can add sprinkles to it, as well as different flavorings. Definitely worth a stop, if you love ice cream and cheese - you won't be disappointed. read more
