    a cheese store

After crossing the US border at Cape Vincent we drove south drive south towards Syracuse instead of taking I-81, we decided to jump on Route 11 after Watertown to explore some of the sights off the beaten path. After making several stops along the way we decided to stop in at the Colosse Cheese Store in Pulaski, NY to see if they had some fresh curds (squeaky cheese). As luck would have it we arrived on the right day and they had just received some fresh curds from the cheese factory located in Mexico, NY. I'm by no means a connoisseur of cheese being there are literally thousands of varieties and each region across the world features their unique specialties - and the art of cheese making begins with the quality of the milk actually it begins with what the cows feast on that produces the milk, about 12% of milk is used in the making of cheese the remaining 88 % is known in the industry as "cows water". Once nature provides the milk the rest is up to the cheese maker then it's finished by tempering and aging. It definitely a form of art with a certain amount of magic mixed in. Sometimes these small cheese shops offer samples before you buy, unfortunately this wasn't the case here. I purchased a small pack of the fresh curds (7 ounces for $4.99) and went back to the rental car to give it a try - the curds were white (if you find some yellow ones they are the same, they just dye the cheese using saffron, marigold, carrot juice, or annatto - remember milk is white) - the curds were fresh and definitely squeaky - the texture was firm with a slight grit and salty by design. I think Little Miss Muffet would agree while enjoying these small bites from her tuffet they do a nice job here at Colosse, as far as the spider goes he can go a whey....

GREAT CHEESES.... fabulous original recipes and creative new ones!!!

Polite, helpful and worth the five hour drive to buy cheese curd. A family tradition of 50 years.

They have ten year aged cheddar here. That's the oldest I've ever seen. That's all it takes to get five stars from me!

This humble little shop offers a small merchandise section, a wide variety of fresh cheeses and other dairy products, some pantry goods and a divine section of handmade chocolates. Samples of various cheeses to include curd cheese is available for sampling. A bacon horseradish cheese was featured and WOW, delish! An apple pie sharp cheese was also available for tasting. It was unique in flavor, but not my cup of tea. Due to the fact we will be on the go for many hours today and without refrigeration, we purchased a variety of candies rather than cheeses. I purchased the chocolate covered kettle chips and shared with the family. A couple of these chips go a LONG way and the pairing of sweet and salty is always a winning combination. The chips are coated with a generous amount of chocolate. The cashier was very cheerful and pleasant. The checkout process was slightly longer due to the credit card machine being out of order. Finally, there is a really cute cow in a field next door that makes for a great photo opp! I highly recommend checking this place out if you find yourself in town and the cheese is reasonably priced.

Needless to…read moresay this was the best one to start with as the flavors were the freshest, most natural, and best tasting. In particular the chocolate milk non homogenized and no pasteurization was smooth, creamy, naturally sweet, and the cocoa flavor was just enough. We love horseradish and were disappointed to not find any in the cooler although the sign indicated it is made there. A very nice gentleman overheard us and came out with an armful of the horseradish curds and a few other items that were in little or no supply in the cooler. Clean and fresh everything dairy fills the cases and shelves. They also make a homemade beef stick in a multitude of flavors. I chose the pickle and the sweet chili which i later tried at home and found them to be less salty than the typical beef stick with good flavor. Now back to that horseradish curd. Suffice to say our mouths exploded with fresh horseradish flavor and warmth leaving a slight heat on the tongue without overpowering the cheese flavor. We both agreed this was the absolute best we have eaten over the years and vowed to buy no other. More flavors to try we will skip the stores where it can be found and return to the farm for the best of the best.

The outside displays are always enticing; everything from fresh herb plants to produce can be seen as a backdrop to a small outdoor seating area, which is a great place to chill once you've grabbed a quick ready-to-go item for a snack or lunch. Typical items are sandwiches, fresh pizza, baked goods. Also, coffee is pretty decent. I'm a big fan of their move to support gluten free products. They currently carry Purest, a brand that's based in ON, and every Wednesday is gluten-free day; they have pizza and sandwiches that are really yummy. And, today I even scored a GF brownie - delicious. Prices definitely reflect the quality, which I won't complain about - it just makes it a more occasional stop for me.

Not really much by way of seating area except during the summer time when the outside area turns into a patio area. Also probably some of the best coffee in Kingston. Bueno bean is the bomb.
