How I heard of this place: A couple of years ago, my sister, a resident of Bellingham mentioned this new spot that opened up. Great ambiance, great coffee, great service. I had forgotten about it until this morning when we wanted to go out for coffee and found their new location! Type of cuisine: Colombian arepas, sandwiches, pastries and coffee. Ambiance: An amazing, beautiful, warm and vibrant spot in the center of downtown Bellingham. The beauty of the hanging crate planters, cascading with twinkle lights, coffee burplap sack decor, dark woods and bright colors mingled with Colombian beats create a space that you don't want to leave. Beverages are made with handcrafted quality and thoughtfulness. Sandwiches beautifully prepared and served warm. We loved the additional feature of a little "pop-up" shop at the back, with handcrafted clothing, jewelry, as well as shoes and bags. What I ordered: A Cappuccino Gold for me: the perfect balance of SPECIAL COLOMBIAN espresso with steamed milk and foam. Covered with local honey and almond powder. The Sudmarine for my husband: the perfect balance of SPECIAL COLOMBIAN espresso with steamed milk and foam. Covered with whipped cream and a bar (row) of (Hershey's) chocolate. Each of our kids selected Italian Sodas, one mango and one strawberry. My sister, excited about the smooth pull of espresso, selected an Americano. We also ordered two sandwiches: Medellin: Artisan FOCCACIA bread with BBQ PULLED PORK, provolone cheese, onion, red pepper, lettuce and our COLOMBIAN sauce. (We substituted arepa instead of foccacia at the recommendation of the server.) And the Vegan: arepas surrounding Avocado, tomato, onion, red Pepper, lettuce and pesto sauce. What I loved: The pulled pork sandwich. By far one of the best sandwiches we have ever had. I rarely enjoy pork, and would order this over and over again. We went out for coffee at COF& on a chilly, rainy Saturday morning. The pasties and muffins in the showcase did not appeal to me so we just had coffee. I had a vanilla latte, , and my partner had an oat milk latte. The coffee shop was cold due to both doors being wide open to enable local merchants to set up their offerings for the day. I tried to read but the music was up far too loud and was not conducive for reading. My coffee, however, was outstanding and served very hot, which was appreciated due to the cafe being far too cold to relax. The chairs are extremely uncomfortable and there was nowhere comfortable to sit to enjoy the wonderful coffee and my book. The service was good, our coffee came out fast. Easy parking on a rainy Saturday morning. I appreciate the shade green coffee, and the stage which shows the cafe supports live music. I just didn't care for the atmosphere, seating, and noise level. Wow this spot was terrific! Stopped in shortly before close and the service was fantastic. The gentleman working was super upbeat and kind and took care of me in a flash. I went with the Vanilla Latte (iced) which had a bold and delicious flavor. As a snack, I love a good cream cheese danish and this one killed it. This is an excellent cafe. Large, not overly crowded. The coffee -- directly from Colombia was truly good, and so were the pastries. The employees were very good, efficient, friendly, helpful. My one hesitation is about the seating. The chairs at the tables are not at all comfortable. I was hoping to find a new place to work for a couple hours, but I arthritis put an end to that plan. If they don't want to make an actual matcha latte they shouldn't have it on the menu. What they serve is a matcha mix with number one ingredient being sugar, a list of 10 or so other nasty ingredients including corn syrup powder. There is convenient parking in front of the store, and the store has awesome vibes with plants, empanadas, and miscellaneous coffee beans scattered about. I love the cup that they put the drink in, and the service was top notch. I look forward to returning. You have to try this place! I know there are a lot of coffee shops in Bellingham but none are quite like this one. Specializing in Colombian coffee beans imported from sustainable farms in Colombia and run by employees from Colombia this place is a couple steps above any franchise in our area. We were greeted with huge smiles from the staff and treated to an informative tutorial about their business and their products. We sampled the Colombian coffee and compared it to commercially produced coffee, the difference is stunning. The Colombian coffee that they sell is probably the smoothest most flavorful coffee I've ever tasted. No more Folgers for me. The building itself is inviting and accessible with tables and chairs and a stage where they hope to provide musical and comedy entertainment. What a cool vibe Cof& brings to downtown Bellingham. Bhamsters if you are burnt out of the local coffee chain (ie Woods or Starbucks) there's a new coffee shop you need to try. This is Cof& second location in Bellingham, the other one is off Kentucky. So what makes Cof& special? Besides the fact that the use of "&" instead of spelling out "coffee?" Most of the staff there like Caroline and Oscar, the owner, speak limited English (so its a good place to brush up and practice your Spanish.) The staff will tell you Cof&'s beans are special because they are cultivated under shade in native forests. They use a system based on a perfect balance between the shade system and the sowing system. This collection and roasting process results in a simple, flavorful, and rich coffee. Their coffee beans, which are harvested in Colombia, all score over 80 points by the Specialty Coffee Association. Any beans over 80 are considered "special" Jampiere informed me. You can see the scores on the back of each of their coffee bean bags if you purchase one to take home. The coffee shop is cheerful and bright furnished with yellow, wooden tables and chairs and as gives off an artsy feel as various art pieces hang on the walls. I haven't had coffee here yet, but I love some of the ideas they have up! I went in to eat lots of pastries, and pastries I did eat. The guava one is by far my favorite - it's a circle of bread, until you bite into it! Guava has such a mellow, slightly sweet flavor and I bet it's even better dipped into one of their many creative coffees. Honestly, what got me was the service. I went in and it was some of the friendliest I've ever had in a coffee shop. It's a bit out of the way from my house to run to between meetings, but I am going to try to get there when I have a bit more time, because it's so good! read more
