I do not relish Chicago pizza as a whole. Ninety percent of the pizza I eat is from Vito and Nicks, the other ten percent comes from La Madia, Spacca Napoli, or similar places.
I am a snob, too much of any ingredient and I am whining like a bitch. I want the crust, sauce, and toppings to create one harmonious flavor profile. I expect the texture to be complimentary to the pie, a soft chewy dough will have enough flavor to penetrate the dough, and a crispy "00" dough must have enough sauce and fat to dissolve this crust in your mouth, you shouldn't have to guzzle half a bottle of Old Style to get the pie down.
As I was reluctantly dragged into Ciprianis, I noticed four "vice dicks" they looked comfortable and were watching one of the many Sunday cop dramas on the boob tube. Funny when I see cops eating in a restaurant, there is a myth that this implies good food. I believe it implies the best option within 4 blocks. Sitting next to cops makes me feel uncomfortable, so I usually have mixed feelings.
The waitress who took our order did not recognize me from late night WI bowling at a local watering hole, I tend to have this kind of impact on people. Ordering a medium thin crust with sausage and shrooms, (fresh shrooms we were told) Two salads and a liter of RC. The salads came quickly, iceberg with a fair amount of real olives, cukes, tomato, onion, carrots and peperoncini. Nothing mind blowing but much better than most salads in the neighborhood.
The pizza came out quickly, the crust looked odd, I made Lurch sounds from the back of my throat, the crust looked like it had been frozen, pre-formed. Looking over my shoulder it was plain as day that there was pizza makers tossing dough 15 feet away, just beyond what was now six dicks. The pie had a nice look to it, well browned, but not burnt, evenly placed ingredients that were easily recognizable through the melted cheese. The flavor, excellent, a strange pastry like crust, I have had these before but always chalky, crumbly, and flavorless. I took a couple of bites, it was OK, then as I ate the second piece, I realized how much I was enjoying this pizza. This crust to the eye looked thicker than I would like, but it was flaky, and airy like a pastry, almost a pizza tart. The sauce light, tomatoey, with a hint of herbs. The sausage was rich, moist, the perfect size that doesn't dominate any mouthfuls. Dare I say this sausage was as good as I have had on a pizza. The mushrooms still retained their flavor and a bit of texture.
Table service was efficient but sparse, it is a small dining room only six tables, I imagine this place is geared for delivery.
I saw a couple of stuffed pizzas, that is what the Cops were digging into, they looked good, I admit I am not a fan in general.
As I polished off my final piece of pizza, I turned and looked at Chicago's finest, some had been there an hour, watching actors play them on the TV. One of the officers spoke up, "yeah, thats right carry your gun way out in front of you so someone can just take it outa your hands." A communal chuckle followed as I carried my leftovers out into the cold. read more
