And don't be a novice, read the sign that says go in the back entrance. Inside, the place transports you away from Minneapolis and into the casual Ecuadorian atmosphere. You can quickly see how much the owners care, and there's something nice about waiting and watching the cooks in the kitchen. Once seated, we ordered the yuca fries, which showed up 45 seconds later. The fries were good - the garnish was a little heavy on the vinegar, but that may just be a personal preference. I've had lots of yuca fries, and the sauce/garnish here were unique, so I appreciated having an additional flavor to "fried." I ordered the mahi mahi encocado. The ambiance was bright and cheery. The service was good- friendly and efficient servers. We tried the yucca fries- pretty good and enough for 4 people. We tried the Saltado with flank steak. It was tasty but the portion could have been larger. Next time I'll try the Churrasco, given it also has flank steak but also has beans, plantains and fries. They had an IPA, (Fair State Party Forward) but I wouldn't recommend it as it was too light and was more like a watered down session ale. Chimborazo is one of the best dining experiences I've had anywhere. What can I say? Every visit, I'm impressed by something new and the wafting aroma from the kitchen keeps me coming back to Chimborazo. From the food to the service, they are exceptional. In the past, I've ordered their Churrasco ($16, flank steak or chicken), Hornado Con Papas ($15) and the Chaulafan ($15) which is their Ecuadorian fried rice. Every dish is impeccable. I love the char and savoriness of the flank steak. Their chimichurri sauce on the steak with the plantain and fries on the side, compliment one another so well. It all just meshes together and the flavor bursts in your mouth. The Chaulafan is among the most excellent fried rice I've ever had, and trust me, I've had a lot of fried rice in my lifetime. The fried rice comes overflowing with ingredients - pork, chicken, shrimp, egg, peas, green onion, and carrot. They do not skimp either, and you always end up with leftovers that heat up no problem. The Hornado Con Papas is their roast pork dish and once again, they flawlessly execute it - So. Much. Flavor. Chimborazo is one of those "silent meals" - you know when everyone at the table is dead quiet because they're too busy gorging themselves in food? you will not hear a peep because the cuisine here is just indescribable. I get the same thing (enconcado with shrimp) each time I come here because it's THAT good. The food is consistently hot, flavorful, and so delicious. They have stepped up the patio a notch and put up a nice tent with twinkle lights and tropical plants, which sets a pleasant atmosphere (minus the tons of bees but that's no one's fault). I would never have come here without my bf to be honest, but so happy he dragged me to this place. It looks super sketchy, like a hole in the wall, but the food is amazing. I've been a couple times now and both times left so satisfied. The staff are all very nice and willing to explain the menu to you if you're not familiar with anything. After all the reviews, I just couldn't plan-tain my excitement for this place ;) Here's the lineup: Churrasco (Flank steak marinated in highland spices and grilled. Served with rice, fried egg, beans, sweet plantain, fresh cut fries, and curtido) Caldo de Bolas de Verde Green (Plantain dumpling filled with meat and vegetables in a savory peanut broth) Chimborazo was no bore at all. The interior is humble with cultural adornments galore. It was quiet for the first hour, after which this place got poppin'; we didn't see a single table free during our departure The Churrasco was my choice. I'll admit, the plate looks a bit confusing... but it bore its burden of proof quite well, blowing past my expectations. The beef was a flavorful medium-rare, served slice-it-yourself style, which is my preference. The fries weren't bad at all, the beans added much needed moisture, and the sweet plantains were a perfect compliment to this savory-forward dish. And whoever's idea it was to put an over-easy egg atop rice... oh ya, it's pretty nice. A few vegetables were a nice way to freshly furnish a dish sourced from the Andean highlands. And finally, the Curtido (green sauce) deserves a comment. It's a lightly fermented Cabbage Relish--delicious and spicy, it reminded me of a subtle wasabi. It was also gone by the end of the meal... My fellow foodie tried the soup and thought it was pretty good, but its clear the Churrasco embodies the true character of Chimborazo! I had to get this two more times soon after I had it for the first time. Their yucca fries and sauce are good too but only when hot. I tried the Shrimp Ceviche which was good but I prefer fish ceviche, and Mahi Mahi Encocado which was also good, flavorful and warm, but maybe not something id get again because I'm not so sure I'm a fan of fish soup.
