You can tell the tea was high quality and they brew it right in front of you too, I like how they do traditional style when they rinse and discard the first tea before brewing the rest of the tea! The line was out the door for so long so it took me a while to come and try it but now the hype has died down a bit I think so the line wasn't as long and you could order quickly too with the cashier or self checkout! We went back here again and ordered taro latte with taro balls (on oatmilk) and Dingdong Cream Bubble tea (less ice) so far even at 100% sugar you can still taste the bitterness of the tea which is kinda refreshing since most boba tea place are too sweet and you can no longer taste the tea of the "milktea". I've had a lot of boba in the past with so much sugar and sweeteners, but wow Chi Cha demonstrates such high quality and deliciousness! Bubble tea here is unparalleled. You can't go wrong with any of the drink choices because they have the perfect tea ratio by pulling the tea from an espresso-machine like device. This place is is NOT a Michelin star bubble tea shop; it was awarded the Highest International Authority iTQi certification (International Taste & quality institute in Brussels) which is known to be of the same prestige as scoring 3 Michelin stars but other reviews claiming it to be Michelin star rated is misleading. With the amount of people who are working in tech in Bellevue, I'm surprised to see zero to little comments about the structure of how this place executes orders and how inefficient it is. You order and a ticket is printed - normally most food services operate on a first in first out basis - this place seems to operate by section where there's a designated station for each type of drink. A customer can order a variety of drinks and one series can be more popular than others, if you're watching closely you can see a stack of cups racking up in one section. Additionally, there's multiple drinks coming out and getting placed while additional drinks from the same order takes an extra 10-15 minutes. Our brown sugar latte came out within 10 minutes and our black cassia mousse tea came out 30 minutes later. By the tea we got our full order, the brown sugar latte had already started to dilute with the melting ice. I've worked as a bobarista in the Bay Area during high school, so I understand how difficult it is to operate at a fast pace with the amount of customer traffic that keeps coming in. But personally I'd rather wait longer in line and get my drink quickly instead of ending up pissed off having to wait an hour and getting half my drinks partially diluted. The taste of the tea is pretty average to me, I grew up in the Bay Area where there is an influx of boba shops and I recently took a trip to Taiwan last year. There's nothing bad to say, but there's nothing to rave about either. Really great quality tea and a beautiful aesthetic but it is so crowded here. I wish that they could improve the line situation a little bit. It seems really confusing who is waiting for a drink and who is in line to order and we noticed a handful of people with the same issue every time we visit. The drinks taste really great and it's cool seeing them use the machines to make them but I still can't get over the fact that one drink is 7 to 9 dollars without any add-ons. When I heard that this Boba place was Michelin star I knew I had to come and try it. we came after dinner on a Sunday and it was quite busy but we were able to order right away. I think with the way they made the Boba we did have to wait 30 minutes in order to get our drinks. Which was fine since we just use that time to walk around the neighborhood. Apparently the chain won an award in an International Taste competition in Brussels? The service was pretty fast considering the crowd. So excited that a new boba shop is opened in the area. I went in on a weekend afternoon after 2 weeks after the opening date. The line wasn't as bad as people said it was, at least when I went. The staff was great and friendly, they answered all my questions. They were giving out menus while we were standing in line. They were also handing out hot milk tea samples. By far the most delicious tea I have ever had. The menu had great options as well. As soon as I entered the shop, I could smell the freshly brewed tea, it was the most divine smell. This is the first time I smelled freshly brewed tea in a boba shop. Looks like they were brewing fresh batches for every order. The only minor problem thing that I didn't like about the tea was the boba. I could have been a bit better. There is some parking on the premises. I truly don't understand the positive reviews, my only guess is that most people have never had a real strong cup of tea in their life. The milk "tea" is extraordinarily bland with barely a hint of tea flavor. It's not unpleasant, but that's the best I can say about it. I came here 3 times, trying both hot and iced milk teas, and had the same experience each time. They use some fancy looking machines that resemble espresso machines to brew the tea. I'm not sure who decided that tea making needed to be improved upon (is it that hard to leave leaves in hot water for a few minutes?) but clearly they failed, as the end product lacks substantial flavor. I'm a big bubble tea drinker and I personally like it when I can taste the tea and milk and for it to be NOT TOO SWEET. Chicha does exactly just that. Finally got to try this highly recommended boba place!! I've previously had a friend get me the Dong Ding Oolong Tea in San Gabriel, and I went to the Bellevue location this past weekend.
