We recently had dinner at Ceibo after it showed up on a ton of recommendation lists. To start, getting a reservation was remarkably easy which was such a nice surprise. Based on the service along I would come back here. The staff is attentive and helpful and while they chose the tiniest water glass possible, it was never empty. Another fun thing is that they give little tastes to start and end your meal which is such a great way to add to the experience. I will say that while most items were good, certain dishes were oddly mushy? There were just a lot of creamy elements and some additional texture was welcome. The canelones were slightly disappointing as most of the ingredients seem to be in the sauce and they're only stuffed with Swiss chard leaving them a little one note. The desserts however were spectacular! I would go back just for the massini and sundae. Jumping back and forth between them was a culinary delight! I would give this an easy 5/5 for the food and service alone, but the prices are holding this place back from being perfect. As a table of 3 we split quite a few things, which seems like the way to go here. Our favorites were the fish (incredible), the white asparagus, the steak tartare, the chocolate cake, and the cheese dessert. Everything seemed inventive, perfectly balanced, and had insane flavors. The fish had a bone marrow sauce on it that made it taste meaty, yet it was super light still. Our server was great and gave good wine and food recommendations as well. Now where I wasn't super thrilled was the prices. It was $28 for three stalks of asparagus... I understand it takes effort but that's crazy. $50 for 2 small pieces of fish. My friend and I were looking for a true late-night spot in Adams Morgan -- easily around 11 PM -- and stumbled upon this gem. I had just gotten off the train, was starving, and couldn't believe they welcomed us in for a full restaurant week menu service so close to closing. The staff was beyond gracious, especially since we definitely kept the kitchen open at least 30 minutes past their usual time. I can't thank them enough for their kindness and patience. Food: 5/5 I started with the Hamachi-- so refreshing, vibrant, and perfectly balanced. I tried my best not to drink every drop of the sauce it came with. My friend got the peaches with ricotta, a beautiful sweet-and-creamy dish (though definitely dangerous for someone lactose-intolerant like me!). Of course, I had to order the bread. It came out flaky, multi-layered, with its own butter -- so good I gladly popped more lactose pills just to keep going. I was torn between the duck and the chorizo dumplings. I ended up with the duck, and it was hands-down one of the best I've ever had. Cooked to a perfect medium -- tender, juicy, with crispy edges -- and paired with endive that added just the right bitterness and acidity. My friend went for the chorizo dumplings, which were hearty, bold, and extremely filling. We couldn't even finish everything because the portions were so generous. Dessert: 4/5 I went for the sundae, which was fun, indulgent, and the perfect ending. My friend chose the chocolate cake, which was rich and decadent, but for me, sundaes always win. Service: 5/5 Truly above and beyond. Despite how late it was, the staff kept checking in, making sure we were comfortable and happy. This was a standout dish with amazing flavors and textures. Perfectly balanced and delicious. Steak: Cooked exactly how I like it, and the demi-glace was rich and flavorful (though maybe a tad salty). The puff pastry that came with it was amazing. Literally some of the most delicious food I've eaten and consumed in awhile! We made reservations based on the reviews and me visiting DC for a friend. The service was top tier and they have two floors. I highly recommend the various wines, cocktails, and the ever evolving menu they have. The only dish I thought was worth passing on is the rice pudding as it just tastes like Spanish paella. Everything else was super unique and my favorite was the welcome dish they gave each of us which included this yellowtail caviar bite. I really can't recommend this place enough! Ceibo is a great place for a date (the ambiance is very romantic) or an intimate dinner with friends for times when you want to splash out a bit. We came on a Friday evening and were promptly seated per our reservation. The staff here are all very friendly, knowledgeable, and clearly care a lot about the customer experience. Our server for the night described some of his favorites from the menu in such mouthwatering detail that we had no idea he was relatively new. Cocktails are excellent, and I really enjoyed the Pomelo. We ordered a LOT--all the vegetarian dishes, plus the oysters and the lamb. We loved the plums, the leek tart, the oysters, the mushroom dish, and the eggplant the most. The lamb belly was flavorful and we really enjoyed the red drop peppers, however the meat itself had some dry areas that you wouldn't expect from a belly cut. Dishes were technically shareable, and they really encourage you to order a lot and share everything, but the ability to actually share dishes seemed to suffer in favor of the (admittedly gorgeous) presentation. We ordered 3/4 desserts and they ended up sending us the 4th on the house. The chocolate cake and cheese mousse were the favorites, and we really enjoyed the bread pudding as well. We got 6 dishes, 1 cocktail each, a bottle of wine for the table, and 3 desserts, and it came out to ~$120 per person. I left satisfied but not bursting. It is actually criminal that there weren't more people at this place! I came back after having loved Restaurant Week here last year, and the chorizo dumplings just blew me away. They were so flavorful, with absolutely delicious oyster mushrooms, a delicate kombu broth, and the loveliest chorizo filling in the ricotta dumplings. The quality was as high as I remembered from my first visit, the service was top-notch, the menu was creative, the ambience was great. They threw in a drink and a tasty little cheese tart as an amouse-bouche on top of everything else as well. It's definitely expensive, but a lot of restaurants in DC are expensive, and they're putting out really high-quality food (better than several of the Michelin spots in town), so it made me really sad to see the place empty. My recommendation is that people come here and try the plums, the leek tart, the chorizo dumplings, the chocolate cake - any of them - and see if you don't leave loving it too. I'll definitely be back - the blue crab profiterole is calling me - and I hope that it being this quiet tonight was a fluke! read more

Nestled along Adams Morgan's 18th Street NW, my wife and I dined at Ceibo on a Thursday evening at 7 p.m. Inside a rowhouse in a minimalist, yet design-forward space, here's our experience. 1) Food: From the amuse bouche to the dessert, everything was well flavored, presented, and unique. Being a modern South American restaurant, they pull from traditional flavors, combing it with technique and well-executed texture. To feed two of us, we ordered the house bread, hamachi crudo, plums, pickled eggplant, chorizo dumplings, the strawberry dessert, and the chocolate cake. We didn't have a bad dish, but the winners were the plums with sheep's milk ricotta and the chorizo dumplings, which come in a flavorful broth. If you love chocolate, the chocolate cake is phenomenal (and comes gluten-free.) 2) Drinks: With two beers, several wine options, and five unique cocktails, there's something for everyone. Enjoying mezcal, my wife enjoyed the "Humo" cocktail. With a sweet and sour tooth, the Pomelo was refreshing and comes in a taller glass with ice. 3) Service: Our server (I believe her name was Alex) was delightful. Despite a full room, she was personable and passionate about the food. (She mentioned she was a regular before joining staff.) KenScale: 8.0/10 Visit: October 2024 Compared to its larger neighbors in South America like Brazil and Argentina, Uruguay is not as prominent in people's minds for culture and food. Well, here is one fun fact: Uruguay has a higher population of cattle compared to humans, almost four to one. The country, though, according to brothers Juan and Manuel Olivera, is so much more than tasty steak. At least that is what the Oliveras tried to show in their restaurant Ceibo, which opened last year in Adams Morgan. The restaurant, whose name is derived from the country's crimson-colored national flower, is inspired by the South American bar culture of Montevideo, Uruguay's capital. My wife Jun and I recently visited the restaurant, and there were some really pleasant surprises from our dinner. The best part of our meal at Ceibo came early. Our server highly recommended the leek tart with taleggio cheese on pastry dough on the menu, and we are very glad we listened to him. The tart was exceptional, showing the earthy and savory character of leek quite well and the pastry dough not overly heavy. We also really liked the mushrooms with squash, walnut pesto and black truffle, with its smoky flavor shining to great effect. I could tell from both dishes that the restaurant wanted to showcase its command on not just meat but vegetables as well. On the other hand, one of the signature dishes at the restaurant, chorizo dumplings with pork sausage, pecorino sardo and mushroom immersed in kombu brother, was a slight letdown, and we both thought the seasoning could've been slightly toned down. Given Uruguay's reputation for beef, we had to try the steak, accompanied by black truffle, potato and onion jus. Jun was complimentary of the steak's quality (grilled at around medium rare) with its juicy, tender texture; I agreed that the steak was indeed quite delicious but wondered if the price ($55) was somewhat steep given the portion. The restaurant also had some tasty desserts. If you are not a sweet tooth, you would be won over by the restaurant's take on a traditional Uruguayan dessert called Martín Fierro with cheese mousse and quince. We also enjoyed the refreshing sabayon ice cream with black cherries. Getting a reservation at Ceibo is probably not the hardest thing to do, but the restaurant was nearly full by the time we were finished with early dinner so I would still recommend booking in advance. The restaurant has a full bar with interesting wines from all over the world, with a critical mass from Uruguay (a country known for its Tannat reds to complement meat dishes). The clean and minimalist dining room offers an enticing venue for a variety of occasions from date nights to friends and family gatherings. I don't know how often the menu at Ceibo changes, but what the restaurant showed us on our first visit had a number of intriguing dishes that we would be happy to go back to try other dishes (and perhaps include Uruguay in our future travel wish lists). read more

Summary: Wonderful, small subtle gem in Adams Morgan. I'd come back in a heartbeat whenever my next visit to D.C. is. Dishes are typically $20-$30. Food: Advertised as Uruguayan or at least inspired by. Fine-dining presentation (I don't think there is a prix fixe menu, but you can basically create your own since the menu is arranged lightest to heaviest. In addition to what I ordered, there were couple of free small bite desserts and even a complimentary white wine (glass). Chorizo Dumplings: My goodness. I had wonderful meals at Amazonia, Impefecto, Tail Up Goat, and of course Ceibo during my stay (oh, and lunch at Lapis)--these dumplings are possibly the single favorite thing I ate during my trip. Four rather large dumplings filled with chorizo (the more subtle kind rather than the heavy Mexican-styled one may of us are used to), and topped with thick-cut pieces of bacon (also wonderful). Lastly, it's served with a broth that was more like a wonderful light ramen/Asian broth. This thing was wonderful and I still think about it. It's one of the larger entrees on the menu. "Rice Pudding": Not a dessert, but an entrée that's similar to paella. Reddish (saffron?) rice with some rather large shrimp over it, and then with a reddish sauce poured over by the server. This was excellent in its own right. Dessert: Massini--sponge cake, chantilly cream, orange liquor (if you like crème brulee, you'll love this). Perfect way to end the night. It was excellent, which is impressive because I think I read somewhere that Ceibo does not have a dedicated pastry chef (that may have changed). Cocktails/Wine: Didn't have any cocktails, although the pics seem wonderful (I had to cool it down after a few days lol). Wine prices were more than fair, and the Uruguayan red I end with punched well above it's weight in price (I think it was $19, tasted like a $30 glass). Service: Excellent, perfect: I think his name was Carlos (?)--paid attention to details like cutlery arrangement, pacing of meal, etc. Great at explaining items and their heaviness (didn't try to upsell). He was rather busy once the crowd picked up, but he noticed me wiping a small mess that I had made and then appeared and got the rest himself. There was also another guy helping. Ambiance: It's a subjective thing, but I love places like this. Rather small (think of Komi--RIP), and dim (but not too dim) lighting. One thing I loved was that the taller employee kept adjusting the dimmer depending on how dark it was getting outside (there's one large window up front)--I thought that was great lol. Music was enough to heard but not more than that--this place is very conversation friendly. Music was in the vein of 90s-era jazz fusion or trip-hop (Air, Portishead, etc.). I love that kind of stuff, but again, subjective of course. The point is that they pay attention to details. Also, there's a downstairs bar area, but I didn't see that in person. All in all, loved this place. I hope it gets enough press though--it's in a bit of an understated location, and I could see this place getting overlooked only because the D.C. food scene is so competitive, but I hope I'm wrong. I felt the price was appropriate given the level of food (and the wine prices were more than fair), but if you want to try the place with without spending too much, sit at the bar and order the dumplings, the massini, and a glass of wine. The flavors were perfectly balanced and each dish was creative, yet comfortable. Don't skip out on the house bread (it's beautifully layered and fluffy)! It was creamy, crispy, savory, you guys it was magical and I wish I was eating one right now!! The cottage pie and pickled eggplant were both very comforting dishes. They both reminded me of fall and warm blankets with a cozy fireplace. They were so yummy!! The mackerel itself was moist and flakey but I have come to realize I do not like blood sausage (oops)! We sat at the bar due to not having reservations, the hostess was nice and friendly. Initially they said they were completely booked but if we were okay with sitting at the bar they could take us. Ceibo reminds me what it's like to go to a great restaurant with great food and great service, when so many other restaurants are just mediocre. Go now! I visited early-ish (6 PM) for dinner on a Thursday and it was pretty quiet. A few more tables showed up by the time we left, but still not full. We didn't intend to go for Restaurant Week, but we ended up ordering the RW menu ($55 for 3 courses) because they were still serving it and it had good options from the main menu. We didn't order drinks. Service was excellent, like other reviews mention. Our waiter was the most enthusiastic waiter I have ever had! Ceibo started with two complementary items, a small bite and biscuits. The small bite was a little palmier (elephant ear) and the biscuits were made with beef tallow. The palmier bite was both savory and sweet (like many later courses). Palmiers are one of my favorite pastries, and I could tell this was a great palmier (flaky, sweet, crunchy) even though it was tiny. The biscuits were okay but didn't seem the correct texture to me. They were soft in some places but hard in other places. This was the only negative part of our meal. For appetizers, we had the Pickled Eggplant and Leek Tart. The eggplant had both sweetness from ricotta and truffle honey and savory crunch from breadcrumbs, plus a tomato sauce on the side. The Leek Tart had perfectly made pastry and very tasty, savory leeks inside. Both were excellent but the Leek Tart was the winner. For entrees, the Carbonada and Milanese Rellena. The Carbonada was vegetarian and a delightful mix of squash, sweet potatoes, mushrooms, and other veggies. The other dish was essentially pork milanese (breaded, fried pork chop), but stuffed with cheese and ham. It was not particularly exotic (as expected), but it was solid. Both were great dishes. Finally, the Martin Fierro and Sweet Potatoes for dessert. The first was a tart with cheese mousse and quince jam; the latter a sweet potato with honey, chocolate, and cheese mousse (I'm not 100% sure on the ingredients on this one). An outstanding restaurant in all aspects! My friend and I came here for a recent weekend dinner and loved our experience. Ceibo is cozy, seating maybe-20-30 people max. Our service was outstanding, some of the best service I've received at any restaurant this year. The manager also took the time to come by our table and asked us how our experience was, which I appreciated. Ceibo also gave us deviled eggs on the house, which were good and much appreciated. There are also several vegetarian options on the current menu (virtually all of which my friend and I got). My friend and I split several dishes, listed below. Butter Beans Spread-as the regular bread has beef in it, Ceibo gave us a chickpea bread (which felt like a gluten-free pita). The dip was creamy, rich, and full of flavor. Leek Tart-an amazing dish and the best thing we had. The cheese was creamy, there was the right amount of pastry dough, and the vegetables came through. The greens on top provided much-appreciated freshness. Pickled Eggplant-another well-composed dish. While it could have used more spice, the eggplant was perfectly cooked and complemented the cheese well. Stuffed Squash-while well-cooked and stuffed with good vegetables, the squash overwhelmed everything else. Additionally, this dish needed more seasoning. We've been waiting for ceibo to open and and we finally made it out on Wednesday night! The vibes were immaculate, the mood lighting is perfect and the music provided the perfect atmosphere. Ah the drinks, my friend and I usually don't drink but we had two cocktails and they were the right amount of refreshing, tart, sweet, and everything we wanted. When two non-drinkers are recommending the drinks, it is a must! Finally the food; the food was wildly interesting and delicious! I love the tartness and freshness of the dishes. We got a bunch of items - pork cheese, steak, hamachi, eggplant, mackerel, salad, and all three desserts! Everything was so delicious and intentional, it was obvious that the flavors and the dish elements were really well thought out. Dishes were tasty but they were also surprising and included surprising textures and flavors. The food was so good, we even ended ordering some of the items again at the end of our meal! A really wonderful bonus is how kind and welcoming the staff is. Even though they are a new restaurant, everyone took time to welcome us, ask about our experience, and find out what our favorite dish was. I'm sure Ceibo will quickly become a community favorite! I've been here twice now and every time Ceibo knocks it out of the park. The food is well prepared, fresh, and gorgeously plated (and every bite is insanely delicious). The service is always fantastic with such kind people working here. Ceibo does fine dining level service without the stuffiness. FABULOUS PLACE! Came for dinner on a Friday night and had an incredible experience! Restaurants like Ceibo are filling every gap desired in DC's restaurant scene right now! 1) the service is IMPECABLE. Right after we were seated we were greeted by a server who walked us through the whole menu, highlighting her favorites and giving helpful descriptions of tasting notes for each dish. She was incredibly attentive, professional, and really went above and beyond. She even took off our dessert after I said it was a little too sweet. The dessert was really tasty and there was absolutely nothing wrong with it and I was so impressed by the level of service to take off a dish just because we didn't finish it. Excellent hospitality. 2) The food will really have you saying "wow" with each bite. The chorizo dumplings were out of this world. The flavors were so layered and different and so delicious. The plums were also incredible. The bread was tasty with a fabulous tomatoe spread. My friend is gluten free and they had so many gluten free dishes including bread! 3) the drinks were worth it! Not all cocktails are worth their price tags but these are and beyond. I had a cocktail described as a mezcal sour and it was perfectly balanced, not too sour, not too sweet, not too smoky, just the absolute crisp perfect cocktail. I ended with a cocktail with chamomile as the main flavor -- perfect end to a meal and so unique. The ambience is very casual and lowkey. No frills, dim lighting and not too loud! My friend and I stayed here for 4 hours just chatting and were never rushed or pushed out despite staying wayyyy past a normal dinner seating. Exceptional dining experience. The food and service were excellent. My favorite food was chicken the bread, chef's treat (tart), and cheese mousse dessert. Our evening began with an oblivious and culturally insensitive waitress, but thankfully Manuel took over our table and guided us through an EPIC dining experience. I don't say this lightly . . . GIVE THEM THEIR MICHELIN STAR NOWWW. Every dish we tried was inventive and creative, and surpassed any expectations we had. Every bite had me saying, "Dios mio, what is this?!" We began our dining adventure with their house bread, which was accompanied by 3 creamy a** spreads: eggplant escabeche, tomato sobrasada, and house butter. Damn near broke mama's mouth. A delightful persimmon salad, adorned with pear onions, ubriaco Rosso, fine, sherry, and olive oil followed, and let me tell you, gahhhh damn. The bunuelos were unlike the sweet Mexican dessert-ish I expected, but proceeded to wow us with a swish chard, pecorino sardo, and lemon creme fraiche filling. OMG, callin' out for Dios mio again. Manuel had us convinced we needed to order the pickled eggplant. It was unlike anything I've ever had. The combo of flavors: eggplant ragu, ricotta, honey, rice breadcrumbs, and romesco took my palate on a merry-go-round of flavors. The leek tart we enjoyed next was made with buttery pasty dough, taleggio, and mizuna. Didn't expect to be knocked out by that one as well. Chorizo dumplings followed, and they were unlike anything I've ever experienced. Pork sausage, cabbage, pecorino sardo, morels, dashi pancetta, and a savory broth flirted with my taste buds AGGRESSIVELY. I held onto the table, and my ancestors called out, "Mija, we've never had chorizo like this!!!!!!" Finally, we enjoyed one of the specials, beef-stuffed cannellonis with creamy-a** sauce and shaved truffles. Oooof, when I tell you mama was not prepared . . . Finally, we asked Manuel for his fave dessert recs. We couldn't decide because they all sounded incredible so we went big, and ordered 3 to share! Look when the parents dine out, they DINE OUT. Don't judge us. We enjoyed: Boniatos en Almíbar: think magical combo of sweet potato, clove, creme fraiche, dark chocolate, and quinoa. Like what?? Some culinary genius came up with this one. Martin Fierro: was a cheese mousse, quince, pecorino sardo EPICNESS in a cookie tart. Again, WTF is this sorcery? Helado de Samboyan: saboyan gelato, dressed in black cherries and marsala wine. Ok, son. You broke my taste buds so good. When I tell you it was a TKO, IT WAS A TKO. Can't wait to return. read more

Wow, wow, wow. Ceibo is fabulous! We visited Uruguay last year and were eager to try more food after this place was recommended by a colleague of mine. Love the intimate, NYC-like vibe of the space. Every dish we ordered was so good: refreshing plums in ricotta, soft chorizo dumplings in a broth you'll want to drink all of, the steak with potato and caviar, a sweet and savory duck special, and for dessert, off menu, a chocolate cake with what appeared to be a peanut butter cream sauce atop - my mouth is watering thinking about all this food again. Service was attentive and friendly, and they recommend a great bottle of red wine. Make this your next date night spot with your special someone. read more

I live in the neighborhood and have been itching to try Ceibo. Spring Fling was the perfect excuse. 2 glasses of wine paired with an appetizer and entree was a decent deal at $55. I got the hamachi crudo, which was fresh and refreshing. My friend got the marscapone with plums which he enjoyed (I got a taste and also liked it). For my entree, I got the rice pudding (really shrimp on dirty rice), which had a nice texture and mix of flavors. My friend got the pickled eggplant which I thought was too vinegary, but she liked it. The service is very friendly and helpful, the interior is sparse but tables are nicely spaced so you can hear your dinner companions. read more

The staff at Ceibo are not only knowledgeable about the menu but also genuinely enthusiastic about ensuring each guest has an enjoyable experience. Big shoutout to Manuel for being so knowledgeable about all of the ingredients that go into the dishes, along with knowing the history and backstory of the wine selections. Very impressive! (I would definitely play trivia with this person, because he is filled with knowledge and fun facts.) Ceibo's menu is a celebration of flavors, showcasing a creative blend of traditional and contemporary dishes influenced by both South American and European cuisine. The chorizo dumplings were a standout appetizer. These little pockets of goodness were bursting with rich, savory flavors, and the accompanying sauce added an extra layer of depth to the dish. It's a must-try for anyone visiting Ceibo! I almost regret sharing this dish with friends. For the main course, the fish mackerel stole the spotlight. Cooked to perfection, the mackerel was both tender and flavorful, with a crispy exterior that provided a delightful contrast to the moist, flaky fish inside. The dish was beautifully presented and exemplified the chef's attention to detail and culinary expertise. So good! My favorite drink of the evening was the Cedrón, a very refreshing drink made with grappa, honey, lemon, and lemon verbena that perfectly balanced flavors and set the tone for the meal. And yes, you have to save room for dessert. The Martin Fierro (made with cheese mousse, quince, pecorino sardo and cookie tart) was a delicious blend of sweet and savory in a sophisticated treat. I will definitely need to make a reservation the next time we come back because The Washington Post named Ceibo as one of "The 26 best new restaurants in the D.C. area," on May 15, 2024.
