Recently my wife and I made our fourth trip to Caruso's in Montecito. I felt particularly compelled to write something after this visit. From the moment that we arrived at the opulent Rosewood Miramar Beach Resort we were transported to another level of service and comfort. The resort itself is a magical place and worth the journey but Caruso's restaurant elevated the experience to a different level. Caruso's is situated at the Western end of the resort along the Pacific Ocean. Descending to the dining room one is mesmerized by the crashing waves and the golden sunset and upon arrival you are met with a team that understands the meaning of impeccable service. There was a time when fine dining was an experience rather than a cliche and at Caruso's this is the rule. We were pampered, cared for, and every need or desire was addressed. The staff were experts at their trade and we saw several staff members who had been there since our first visit 3 years ago. It was a well oiled symphony providing the best service I have had in recent memory. Chef Massimo Falsini's inspired menu tantalizes the senses and the taste buds. The four course tasting menu highlighted the riches of California's coastline and farmland but set it against a background of Italian tradition. There wasn't a single course that underwhelmed or disappointed in any way. The presentation of each dish was carried out with the detail of a fine piece of art. However, the beauty of the plate was only a prelude to the incredible combination of flavors and textures. Every part of the dish complemented the other, harmoniously working together to entrance the taste buds. I will not describe each dish in detail as my words would fail to capture the magic we experienced on the plate but I will include photographs, which we were compelled to take given the beauty of the presentation, and hopefully they will give you some sense of the grandeur of our experience. We would like to thank Chef Falsini and his staff for making our visit one of our all time favorite food experiences bar none. We had a post Fathers Day family dinner here last night and it was absolutely wonderful. We were so impressed with every single dish (and we ordered 3 courses each!) and the service was unbelievably top notch. Mauricio was so polished and poised and helpful throughout the entire meal, we could not have asked for better! He made great recommendations, timed out courses perfectly, and had a fantastic knowledge of the wine menu. He was friendly and courteous and oh so kind. We will be back because the food was superb, Mauricio was magical, and we live right up the street! We also were very impressed with the lovely valet staff. They were attentive and aware, and had our car waiting for us when we made it back to the front drive to depart. Very impressive anticipatory service and attention to detail! Lovely experience! We came for dinner so it was already dark but we got to sit on the patio with the warm heater and the sound of the waves. We took the simple 4-course menu and found it delicious! We went here Saturday night for my birthday. After seeing all the pictures, and reading the reviews, I had high expectations. Unfortunately, I left very unimpressed. To start, our service was very bad. We had to ask for our waiter on at least 3 different occasions, and we saw other people complaining as well. We did the 4 course pre fixe, but before that came out we had Amuse-bouche of really dry flavorless bites that felt like they had been sitting out for a while. Then our first courses were the burrata and yellowtail crudo. They both lacked salt, but the yellowtail with tangerines just tasted like eating candy on fish and wasn't pleasant. It needed some spice to break up all the sweetness. Next, was the risotto with prawns & gnocchetti with uni. My risotto was under done and had a whipped sheep ricotta that had the worst texture - it ruined the entire dish. The gnocchetti also had an odd tang to it. Our third courses were the halibut and the duck. These were actually the only two savory dishes that were done really well. The duck was cooked to perfection, but it was drowning in a sweet orange sauce. When you cook meat that perfectly you need only a hint of sauce. To finish it off we had desserts which were also done well. Overall this meal was not worth its price tag. The service especially sucked. We checked on my sons dress an hour before our reservation. In their defense my son was not exactly in dress code, that's why we checked. There was a male and a female host. The male host was quite curt with us and not empathetic at all when I told him it was my wife's birthday and we would have to leave the property for my son to change. He didn't care and offered no option. I went on Open Table and cancelled the reservation. The female hostess called right away and was concerned we had cancelled. I told her the situation and she offered to seat us right away. Let her know we were already seated in another restaurant. She was great, he was guided strictly by policy. I wrote a review of Rosewood resort's Malibu farm restaurant a short time ago and I was a little negative on the service, but Caruso's is a different story. Caruso's has some really great food and service quite good (Francisco was our waiter). The food came delivered by the chef with some good information. My wife's strawberry gazpacho was world-class. Impressive wine list too! The prices run high, but one must accept this; with the fantastic ambience, elegance and dining in comfort nearly right on the beach in Montecito. I had the Caesar and Cioppino (certainly not your basic soup & salad). My dessert (pictured) should speak for itself. read more

Truly beautiful experience from service, ambiance, and care of food & plating. We did the four course as a group of three - highly recommend coming in a group and sharing. Portions are fair and delightful, with an included amuse bouche to start, bread service featuring caviar, and dessert bites at the end. While every course was great (fresh seafood and spectacular Wagyu) the pasta course shines. We added truffles and it's a hefty portion that continues to elevate the meal. Wine pairing was thoughtful and enhanced the experience but did not steal the show, as it should, and the sommelier was approachable, hospitable, and luckily not stuffy. Service was attentive but did not crowd and touched the table just enough. We were also happy to have the Chef deliver a course and you could see how he is also part of the team, happy to see his vision on the floor and not just a figure head. Also pre ordered a cake (three day notice minimum) for a birthday and the buttermilk frosting was spectacular. Disclaimer: THIS IS FOR CONSTRUCTIVE CRITICISM ONLY! We've dined at Malibu Farm many times and we will be back for sure. We love the hotel and EVERYONE there are super professional! The 5 stars are for the entire experience and not just a selection of events. Obviously we were excited to dine at Caruso's as it is a major part of the nicest (and newest) establishments in the greater SB area; The Rosewood Miramar. We are both Vegan, and once she learned that they offer a new Plant-Based menu, my wife called to make a reservation for our anniversary celebration roughly 5 days in advance for Thursday night. Apparently she spoke to the Chef who took down the information and confirmed our table at 8:00PM. After having an AMAZING Baby Hudson old fashion, we proceeded to the restaurant. Upon arrival the host couldn't find our name in the system (so much for the celebration element). We were seated in a booth next to a pretty load young group that was heavy on the cocktails LOL. But we didn't mind at all. Regardless, our Server: Mauricio and his helper Jorgè were super aware of the situation and apologized for the noise repeatedly (: We ordered a 2016 Happy Canyon blend and requested the $85 per person Plant-Based tasting menu. About several minutes later as we were enjoying the most incredible fresh bread and olive oil with a chilled glass of the some of the finest Montecito water, the Somallier D. Fish came over and attended to the wine. He was delightful and super knowledgeable. The Wine was incredible! The dishes started to come out... Two small soufflé cups with cashew reduction and some fresh micro greens came out as "compliments of the chef". Small but delicious! Next we received our first course. Persimmon Carpaccio which was heaven! Perfect amount of each ingredient gave the thin, deep orange layer a flavoring that I have never experienced before. I tried not be a complete beast and eat one at a time. So good! Second course (I think) came out and it was a beet salad as with plant based spreads which tasted great! The vegetables were as fresh and tasty as you get unless you grow your own in Tuscany hills. Third one (and I might be wrong in the order but those I know for sure..) Then the pasta came... bad. I mean, there was some good aspects of it (like being cooked PERFECTLY) but overall it was bland and the kale was very bitter. We were surprised by the lack of flavor as there are literally a million ways to make a plant-based pasta sauce. Cashews, almonds, coconut milk, Arrowroot powder or even nutritional yeast. I don't know what this was but it's not something I would expect a restaurant like this to bring out. Sorry.. Then came the lentils (we were looking forward to it because we had the lentil dish at Malibu Farm and it was awesome! Unfortunately this was not the case... we were served black lentils in a bowl with some pickled red cabbage on top and a pour over serving of mushroom broth. We were excited! And when Mauricio poured it over the lentils and... nope. Another long look at each other and yeah. No flavor. No texture. No fun. So we didn't eat eat after the first bit. Now the classic Santa Barbara passive aggressive conversation had started about "wow you would think it would be amazing but..." and now ladies and gentlemen, this right here, is the reason why this is a five star review and we will be back FOR SURE! One of the most professional managers I have ever seen (and trust me, I was one for many years and I worked with dozens more), Max Laurence, came up to our table and asked how was the meal so far. And honestly, in any order situation we would have bit the bullet and just deal with that, but this time we both felt we should be honest about what we've tried because we are so happy they even offer a Plant-Based menu (: So after telling him about it and discussing it for a while as he mentioned that it is a very new menu that had a very short run out on the floor he thanked us and left. Five minutes go by and a Chef came out. Basically the sweetest guy on earth. Young, Italian guy with amazing energy, he started a conversation with us about some of the most amazing vegan chefs and places to eat in the world he even mentioned "sabich" which is a super traditional Israeli food that we also go crazy for. He was appreciative for the feedback and we were so happy! Honestly I would pay again just for the unparalleled level of service and pure professionalism that only selective few offer! Instead we ate a really good vegan cheesecake and when we were presented with the check, Mauricio told us that we only to pay for the wine. We were confused and asked for the reason. He replied the the manager took care of it. We were blown away with how much attention to detail the entire staff creates and the level of professionalism that Caruso's staff had displayed.. Obviously we took care of the servers based on the total bill, and we walked out of there floating! Bravo guys! We will be back again. read more

Mauricio our lead waiter (and the sommelier) was just the BEST, extremely knowledgeable, awesome and so wonderful. The entire team was really great, attentive and on it. Our dining experience was superb and we really had a memorable prixe fix dinner on our last day in Montecito/Santa Barbara. Massimo and team presented creative dishes, and flavors. Loved the Tartare, Burrata, Uni, Cacio e Pepe, and Black Cod dishes, and recommend trying the wine and/or wine pairing. We cannot wait to come back to this special place overlooking the beach, come at sunset early and enjoy the evening! read more

Had an absolutely amazing time here. Shout out to Louie who got us an awesome table for 7 without a reservation(within 10 minutes on a busy Friday evening) and to Audrey that took care of us once we were seated. This place is best in class in every possible way, from the ambiance, the decor, the service and the food. It's almost like you've stepped back in time with the level of service from every single interaction we had here. My daughter has severe food allergies and the staff was very attentive to all her special dietary needs. The food was absolutely amazing and they had ran out of a particular dessert we ordered , because they ran out of the dessert, they actually got us an extra dessert and a plate of cookies , this type of service is not seen and experienced anymore. Caruso gets it RIGHT ! The property is amazing and although it is close to the freeway they've done a pretty good job in noise insulation, once we were on the property you couldn't hear any of the noise. Extremely disappointing. We had dined here in October and were enthusiastic to return. The experience could not have been more different. The evening started off as expected with a pre-fix two courses that were excellent and attention from our waiter and the wine delivered as requested. And then nothing... for forty five minutes. Not a visit from any of the waitstaff let alone our waiter. We figured something had gone wrong in the kitchen but no one bothered with us to confirm. The couple at the next table was seated about 30 minutes after us and was hovered over as they tried to select a champagne (it appeared that they returned a few selections). I believe they had a special arrangement, maybe celebrities or frequent diners, however they had a steady stream of waitstaff, management and the chef himself. We were finally served our third course and it was horrible. The halibut which was so wonderful when we had it before was floating in an unpalatable concoction and the fish was not poached properly. The tenderloin was average at best and not served with the black trumpet accompaniment. Dessert was worse... the chocolate decadence was dry and crusty and not the marvelous texture and superb flavor we remembered. We still did not receive a visit from our waiter and asked support staff to please send him over. The manager (had to ask her who she was) showed up and asked what we wanted and to asked us to describe what our dissatisfaction with the meal entailed. She did not offer any remedy and left. We waited another fifteen minutes for our waiter who did not show up. We had been insulted enough. We went to the hostess and asked for our $750.00 bill. We paid it and were told how they had comped a $24.00 glass of bourbon. It was never about the money. This was a special occasion evening. We had ordered flowers for our table. For one hour it was lovely. For ninety minutes it was disrespectful and at best... a culinary nightmare. read more

My guests and I had a wonderful experience at Caruso's. We got together for the holidays. We expected a lot higher prices and very minimal plates. But we experienced the opposite. We found the price's reasonable for a restaurant such as Carusos and we found the portion sizes to be well above average. We all had different things for the appetizers. I personally had the Hope Ranch mussels and couldn't be happier. There were lots of them and the preparation was amazing. My friend and I also had the veal osso bucco with risotto and it was so much we had to get the rest to go. The other two had the black cod and the filet and said it was amazing as well. The Hotel is beautiful as is the restaurant. The food is terrible. I had the king salmon, it tasted like it came out of a can. My husband had the lamb and I've never tasted anything like it before.. not edible. Drinks were okay. The overall vibe is pretty snobby which is maybe what the are going for but it's not going to fly long term with the locals. Oh and don't wear a cute expensive hat with your outfit- they will ask you to take it off despite allowing men three tables over in baseball caps. Beyond amazing! I have extremely high standards when it comes to fine dining and Caruso's exceeded them all! On par or exceeding my previous personal favorite local dining experiences which were at San Ysidro Ranch and Lucky's. We tried a wide variety of drinks, starters, main courses and deserts and everything was to die for. The service, food and atmosphere was truly five star! I highly recommend the NY Wagyu, Baked Alaska and the sea bass crudo, but from our experience it's impossible to order wrong. A special thanks to the amazing staff who were beyond attentive, friendly and fun and thank you to Dan and Wyatt. And to the Chef, all I can say is WOW! Food was very good for Sunday brunch, but service throughout was lacking. We waited, along with another group, over 5 minutes at the concierge desk, had to go looking for help. Once seated (now a good 10 minutes from when we walked in, we had reservations), we waited a long time for every step. We had to ask for silverware, we had to ask for water, we had to ask for more coffee, we had to ask for our check. It's a management problem because we could see groups of servers setting up empty tables or standing around talking while we waited. Brunch was a prix fixe price of $85/person which included 3 courses, a complimentary appetizer of oysters and shrimp, and glasses of prosseco. However, we were charged $6/ea for coffee and coke. Lastly, we waited almost 45 minutes for our car to be delivered by valet. There were plenty of staff in the restaurant and valet, but lack of organization and management. At the prices they are asking, service needs to be impeccable. I hope this is because they're newly open. read more

Per friends' recommendation, my husband and I were so excited for our dinner at Caruso's. Our friends had been there a few nights before and told us that their experience may have just been one of the best they ever had and this is a couple who takes dining very seriously, as do my husband and I. Unfortunately, we did not share that same experience. I will start with the positives. - greeted very warmly - we had gotten a drink from the Beach Bar and came down to the restaurant to take in the gorgeous setting. Staff told us to take our time as we relaxed relaxing on the lounge chairs before heading to our table, - as for the food , the presentation of the all the courses was magnificent. The hand-pulled burrata and peaches and the Santa Barbara blue fin ahi tune were wonderful. The Tagliatelle Al Ragu was outstanding, the best that I have ever eaten and the tiramisu was another standout. - service - for the most part it was outstanding (see below for where it fell short) Now on to the less than stellar experiences. - it took too long to receive our first dish - we love the idea of a leisurely meal but this was a little too long. Once we received our first course, the other courses came out better spaced. - four of the dishes were disappointing - the Ravaiouli Di Norma was too lemony and we did not taste any eggplant, the Pan Roasted Hokkasi Scallops were overpowered with lemon, as well. The Center Cut Tenderloin was beautifully cooked but was a bit salty and the Lemon and Goat Cheese tart was far too grainy; we each took a bite and that was it. - however, the biggest issue was with the wine steward. Upon coming to our table, my husband shared what we were looking for in a wine, being very specific and I provided a price point of $100 - $150. A beautiful bottle of wine was selected but to my surprise, when the bill arrived the bottle was more than the price point I provided. Not much more, but more nonetheless. The wine steward did not ask me if this was okay; if he had, I would have been fine with the higher price but that is not the point. My husband is in the hospitality business and he was surprised that this happened. Even though he is a level 1 sommelier and could have selected a wine from the list, when there is a wine steward available, we always like to go with their recommendations. This just left a bad taste in my mouth. Yes, I realize I should have said something while at the restaurant, but we were tired and were ready for the evening to end. We decided to chalk it up to being an off night at the restaurant. I never intended to put this on Yelp, but when I sent an email to the restaraunt (or I should say the hotel as that is the email address listed to contact) and never heard back, I felt that Yelp was my last resort. read more

It was my first time going, and I went with my girlfriend to celebrate my birthday, and even though covid made it only outdoor seating, they had heat lamps and the perfect evening mood aesthetic. They gave us champagne and complimentary desserts for my birthday. It was honestly the best birthday dinner I've ever had. Would recommend anyone to go. The whole ambiance is beautiful, but the food was disappointing for the price we paid. I ordered the tuna tonnato, which consists in four slices of a seared tuna, green beans and a reduction sauce, as well as a cream-based foam. The green beans were extremely cold and undated, whilst the fish was way too salty. Even the seared part of it was cold too. For main dish, I ordered the lasagnette al pesto. I was not surprised with what I got. The pasta was perfectly cooked, but the dish as a whole was blend. We ordered the Johny walker blue dessert to share, which was the high point of our dining experience. Really good. I would go back just for that, or just to have a drink with a nice view.
