Visited Carillon Brewing for lunch this past Wednesday. This is not a typical craft brewery. They lean on their location within Carillon Historic Park with the decor, staff uniforms, brewing methods and beer styles. There's a wood-burning fireplace. Service was very attentive. The food is BBQ now. I got a pulled pork sandwich with slaw, pickles, and pickled red onions. It was outstanding. There are 3 sauces to try. I liked the Carolina gold best but the spicy and traditional were also good. My side was the best collard greens I've ever had. Portions are generous. I had 2 beers and small tastes of 2 others. Was impressed with all the beers, especially the ginger IPA. The brewer was very interesting to talk with, particularly about how their brewing methods differ from most craft breweries these days. They also serve soft drinks, seltzers, wine, and some mixed drinks. Will surely eat and drink again at Carillon. read more

I've been following Dayton BBQ company for a while on Instagram so that's what brought me up Carrillon Brewing. I'm not from Dayton so the overall atmosphere struck me as odd. BBQ served in a beautiful historic building where the servers are dressed as Quakers? Amish? To not be offensive, I'm just not sure what the situation was. I do wish I knew more. It struck me as odd, interesting... unexpected. It was a busy Saturday night. Lots of things unavailable and several tables. Service was both slow, attentive and kind of chaotic but that's what you get at a busy establishment. I won't hold it against them. The food was OK. If you're in the area, It's worth a visit. We drove down from Kentucky and I expected a little more from the reviews. The setting and building are beautiful and on the right day, the food would definitely be the perfect compliment. read more

The atmosphere was nice and the beer was pretty good. The service was excruciatingly slow, which cut into the time we had to visit the park. We waited 30 minutes for a server to come to our table. The host noticed us waiting for so long and asked one of the waitresses if we had been helped--her response was that she was busy and still had to cash out 5 tables. Another waitress eventually came by and apologized for the wait--she said she didn't realize we were in her section! The food was mediocre and overpriced. I paid $20 for a garden salad (that didn't include any chicken or other protein), and most of the spring mix was wilted. There were 6 of us for this visit. Most of the food was good. The salad entrees are huge! If you get one you'll be taking some home. The potato salad was unusual and tasty. Burgers and sandwiches were small. They do have more beverages than beer. There are wine choices and some cocktails. I would not recommend the bread pudding, it was dry and no sauce, just some sliced apples on top. Our server seemed to be not interested in serving us and was lukewarm at best. I came in and sat at the bar. The bartender was nice and helpful. The food was underwhelming. Nothing made me want to come back. They served me a hockey puck for cornbread. We went there on a saturday night and there was probably only 5 other couples there, which should have been a red flag right away. The place and atmosphere is very nice but the food was not very good for the $50 we spent. We go the 3 meat platter (ribs, brisket, pulled pork) with green beans and potato salad. The brisket had a lot of fat on the portion we recieved, the pulled pork was very good, the ribs were ok, nothing special. We ordered green beans, but they brough us baked beans and later brought us the green beans we originally asked for. Lets say they must experiment with the sides. We were litterally unable to eat any of the sides, they had so much pepper and other spices on them you couldn't eat one bite. The friends we were with said the same thing about their side dishes. We said something to the waitress and she basically said "Oh well". Not I'm sorry, or anything. So basically we spent $50 for a bit of pulled pork. In Q1 of 2025, Carillon Brewing underwent an overhaul of its kitchen and teamed up with Dayton Barbecue Company. We visited recently to try some of the BBQ. The building is really cool and full of history. There is plenty of space indoors, including an upstairs loft area and separate room on the main level for events. They have a small beer garden in the back with outdoor seating. We tried two classics, a pulled pork sandwich and brisket sandwich. For sides, we went with fries and mac & cheese. There are three different BBQ sauces -- regular, spicy, and mustard based. Unfortunately, the food was quite a let down. BBQ was mushy, lacked flavor and tasted like something you would get from a baseball game -- I call it "ballpark BBQ". Sounds good and looks alright, but tastes like it was microwaved out of a bag. The fries were the highlight, as they had a nice crisp. The sauces were pretty good, and I preferred the mustard based one. Stopped in during a bike ride with my BFF. We stopped in for a beer and some fries. We were seated as soon as we walked in. The service was excellent and we took advice about what to get and share. This brewery gives a cool look into 1850s Dayton, with staff dressed in old-time outfits and historical information lining the walls. My parents and I sat at a table in the dining room, and there's bar seating as well. My Pumpkin Spice Old Fashioned was good but a bit too sweet. We shared crispy Brussels sprouts with balsamic glaze, and I had the brisket chill, creamy mac and cheese, and a tasty but small sweet jalapeño corn muffin. I've been craving brisket and my boyfriend suggested this location at the best in Dayton. We were and I loved the ambiance and old time feel of the place. I rated it 3 stars because the brisket is amazing. Why it's not 5 stars is because we found plastic in our greens and no one really cared. I captured a pic of the Mac and cheese that was runny. We were told the mac took too long to cook in the stove so they choice to cook the macaroni on top of the stove. It's extremely disappointing because the base is good. Carillion Brewing is just one of the features in Carillion Park located near Dayton, OH. The park museum features many exhibits and displays. You'll need several hours to cover the entire place. The museum features exhibits from the many industries that flourished in the Dayton area. Cars, machinery, scientific research organizations, cash registers, etc, etc. There is a operating merry go round inside for the kids and an outdoor train ride that takes about 15 minutes to travel around the perimeter of the park. Several restaurants are available and one features an operating brewery. Plenty of free parking. Many historically important structures have been relocated here and it is the home of the Wright Brothers Museum which is run by the National Park Service. The admission fee is $15 for adults and $12 for seniors. read more

Love the establishment! Super happy that Eric of Dayton Barbeque Company was taking over the menu at Carillon Brewing because I've enjoyed the brisket we've picked up when they were located closer to our home at HVO. So we we went there earlier in the year when they had their warm opening and enjoyed every bit of it but.... I couldn't figure out how to write that review because it was early in the process and DBC and Carillon brewing were what appeared to be completely isolated. What brought me here this day were the wings! The lovely Mrs told me they won the #1 wings at this year's, "Kickin' Chicken Wing'fest' so I had to try them. Showed up mid day on Friday, sat at the bar and let's start out with I love how this place is set up. Very rustic and the aromas of barbeque smoking in the air are so pleasant. Bar tender was super friendly and attentive. For my order in and received quickly. They share the bottles of sauces to me but to me, I am there to just enjoy the smoked wings.... they were a little dry but, seriously tasty!! Were they my all time favorite wings? Nope, but I've been to some of the best in the country. These would be for sure in the top 5. Will I go back? Yep! but for the brisket and pork belly. Support local folks! read more

We ate there last night,1/31/26. Weird atmosphere. Waiters and waitresses dressed like Amish ppl, classical music playing, severing The Dayton Bbq food. It's was odd. Our server Matt was good and fast. Food was not good. Ribs were burnt and chewy, Mac and cheese had so much grease you could pour it out of the paper tray it came in. Wife said Brisket wasn't terrible. The pretzel with cheese was good. 2 cocktails, 1 full slab of ribs, 2 mac & cheese, 1 brisket sandwich and a pretzel with cheese was $90. Came in with my wife for a beer and found a place that brews beer back to the way they did it in 1700's if not earlier by fire & gravity. Very cool to witness the staff dressed in period type clothing. Service was very good as we were seated immediately & our server was there to take our order when ready. Disappointed. We went on a double date night to try Dayton BBQ. We had a reservation at 7pm. No problem getting in. Atmosphere was really cool. Lots of brick and wood. Cool vibes. Not a huge beer selection which seemed odd for a brewing company. My husband got a porter and was not impressed at all. Our server was nice/friendly. They were out of cornbread and the brisket board. My husband ordered the ribs with mac n cheese and a side salad. He said the mac n cheese was grainy and the ranch dressing was runny. However, the salad was a good portion size which was good because the ribs were so hard and cold he had to send them back and they removed them from our bill. They offered more ribs or something else, but he refused. I ordered the 3 meat (brisket, pulled pork, and pork belly burnt ends) with green beans and harvest roasters. The pork belly was decent, the pulled pork was ok, but the brisket was cold and hard and I couldn't even eat it. The green beans were good and the harvest roaster potatoes were good. Our friends tried the cole slaw and did not enjoy it. This was a one and done for us. I have had way better bbq other places. read more

Unlike any other brewery I've been to. Employees are dressed like the 19th century. It's part of the historical park. Beautiful lawn and peaceful area. No TV's because here were none in the 1800's. Inside this beautiful building is the Dayton Barbecue restaurant. It is by far the best barbecue pork that I've ever tasted!! We drove 45 minutes to go to the restaurant and well worth it! My son's soccer team met in the large private dining room area. At this time the restaurant is only open Wednesday through Sunday. Closed on Monday and Tuesday. So so good!! read more

Disappointing Experience -- Poor Service & Underwhelming Food I had read great things about the food, especially since the Dayton Barbecue Company is featured here, but unfortunately, the experience did not live up to the hype. We had a reservation and were seated promptly, but things quickly went downhill. The hostess took our drink order, and while we ordered beer, it never arrived--nor did a server. Meanwhile, two tables seated after us (without reservations) not only had their orders taken but received their food before anyone acknowledged our table. Eventually, the bartender--who was very kind and clearly doing her best--came over to take our order, despite being overwhelmed with a full bar. We waited over 30 minutes for food, only for it to arrive completely incorrect. Another staff member brought dishes that weren't even close to what we ordered. When the "manager" on duty finally came over to correct the mistake, she didn't offer an apology--just excuses about being a new start-up and how busy they were. The food, once it finally arrived, was mediocre at best--not worth the wait or the frustration. When I went to pay, I asked the bartender if they pooled tips (they don't), so I gave her a cash tip directly since she was the only one who tried to help. When I brought up the issues to the manager, she didn't once say "I'm sorry" or acknowledge our dissatisfaction. Instead, she rebutted everything with excuses. This was a one-and-done experience for me and my family. There are far better options out there--don't waste your time. read more

I am not going to speak super negatively about this place because I didn't have a negative experience, just an overall "meh" experience. To start, having to wait in line at the bar to order drinks and food should probably be fixed. If you walk in at the same time as four other groups, like my wife and I did, then you are going to wait 20-30 minutes in line just to order and then to choose what table you are going to sit at. Having only one bartender ringing up orders definitely had an impact on that. Then having to wait 45 minutes for the food to come out was disappointing. To be fair, when we ordered we were told the kitchen was slammed so it might take a while longer than usually. But when I looked around there were maybe 30 people in the place. Not sure how it can get behind with that few of people. Lastly the food and drinks were just so-so. Meals were good enough, but lacked real flavor. Drinks were the same way. Good enough, but fell flat. It was my first time visiting, so maybe I was there on an off night, and I will probably try it again. But not in the near future. read more

I visited Carillon Brewing this weekend and really enjoyed it! To begin with, the building is gorgeous! It feels like stepping back in time into an old beautiful brewery complete with the smell of a wood burning fire for baking fresh bread. I tried the Porter for my brew. It was pretty good. Was it the most complex Porter I've ever had? No, but it was definitely pretty good. I'd probably stick with the IPA next time. We also noticed that there were fresh sourdough loaves coming out of the oven and decided that we had to have some. This was a very dense, delicious loaf of bread that we just tore apart at the bar. If you'd like, they are happy to cut it for you and bring butter. Overall, I would definitely recommend Carillon Brewery and I'm looking forward to returning in the future. read more

Hungry after visiting Carillon Park, we realized this is right next door- literally attached. New building made to look like one from the 1800s. Super friendly and efficient staff. Decent beer selection, small menu: burgers, sausage, fries basically. I got a flight of the Berliner, ginger pale ale, rye pale ale, and porter. The Berliner was my favorite: fruity, tart, refreshing on a hot day. Also liked the Porter, pretty standard, smooth with a bit of coffee. The ginger was good, and I always like rye- a nice version if you like that bite. Baby K got the fries, potato wedges with beer cheese, bacon, and chives. Good not great, loaded with cheese and bacon. I had a special, schnitzel with masked potatoes and veggies. Again, good not great. Slightly dry schnitzel, decent mashed, overcooked mixed veggies. But now, the stars. Fresh bread- we got cinnamon sugar, and wow, big loaf, hot, nicely swirled with cinnamon. Yum. The promised hand-churned butter was just standard little pats, but still a nice combo. And: they make their own pop. I am a root beer fiend and they make sarsaparilla, over a wood fire, with cinnamon, ginger, molasses, etc. Super good. Definitely would stop back for drinks and bread. Nice venue, good service. This was our third visit for celebration. We will not be returning for awhile. We decided to take a break from Carillon Brewing. There should be two servers for large parties especially if part of the party is seated in another area but still considered one party. Orders were not placed timely which meant the other half of our party were still waiting on appetizers and food while our appetizers and food came out first. Servers should always keep straws in their aprons. We had to ask another server for straws because our server was serving other tables. The ginger ale was flat and no flavor. I tasted no ginger at all. Might as well have had Vernon's behind the bar. I don't know what was going on in the kitchen since the first and second visit because this time the chicken, brisket, and burnt ends were overcooked, dry and hard. The green beans and greens tasted like they came from a can. Cornbread was undercooked. Chili fries were soaked in grease. The Brussels and the bread pudding were good. I still don't understand why this type of establishment does not serve coffee! read more

Carillon Brewery is a neat historical brewery, and is a Dayton favorite, and we like the historical ambience. Lots of free parking. Take care to review menu prior to your visit; in the past menu was more extensive than the limited fare today. Recommend wurst platter - Reuben, not so much... Private party room for larger group; often, my group of friends will assemble in the loft for food and fellowship. Goto counter to place order, and meal will be delivered. Tip: order condiments because wait staff is untrained in this function. Goto counter for drink refills. The tariff is appropriate for the fare. read more

Authentically cool building, average food We didn't visit the museum but decided to give the restaurant a try. They have a limited menu of mostly hamburgers. Upon entering they take your order at the counter and then you have the option to eat inside or outside. The hamburger had good toppings but was dry and chewy. I asked for a medium burger and my husband well and they were both extra well. You have to pay extra for the potato wedges. We also tried the homemade rootbeer and vanilla cream. Both had odd after tastes and I would not recommend. Overall a beautiful building and cool concept but the food is not worth the price. read more

I will start my review by saying the aesthetics was nice - especially with the upcoming holiday season. However, our large company outing was a reserved party for a Friday, with approximately 20 individuals. It took us over a 1/2 hour to get our alcohol/drinks , some of which were wrong when brought to us. It took us approximately 2 hours to get our meals, only to point out they were out of most of the food. They were out of: some sides , wings, pulled pork, basically only the brisket and chicken tenders was the options. I could go on and on about what the issues were; however, I believe you get the tone of the disaster of my evening there. Most of the party left without eating (because they didn't get what they ordered or the item was not available- which found out after the items were ordered ) to wrap up this horrible experience I will say; the server was inexperienced, the management was missing or hiding and the person who purchases the food significantly under orders and under plans for holiday partie or generally the holiday season. This establishment will be closing down soon!, based on this total mess of a business. We left and ordered Taco Bell- shout out to them!! read more

This restaurant has very serious issues!!! They need new management BAD!!! We waited 45 minutes before we asked how much longer, and was told it would be awhile longer!!! We didn't even get our pretzels yet!! Unfortunately you pay when you order, so forget about complaining. We ended up leaving without eating because we had plans to walk around the park before it closed. UNACCEPTABLE!!!! We ended up spending $85 for food we didn't get to eat!!! This is a wonderful spot in Dayton, a true gem indeed. First of all it's at the Carillon Historic Village and has the same theming as a Colonial Williamsburg. All the employees dress in historic attire and the menu, atmosphere and brewing process all match the 1800s. Yes, even the brewing is done the way it was way back then, super cool. And their Berlinger is a very good tart wheat beer. It's a beautiful place and with the Holiday season upon us, the Carillon tower is light up and the rest of the facility as well, it's awesome. Now to the food, I had a wurst platter (who doesn't love a good wurst?) and you get to pick 2 from 4 options. I choose a brat and Mettwurst and dude, I thought brats were big the Mett was doubling in size. The platter also came with really good potato wedges. They do have a kids burger on the menu and our littles took care of business and my wife had a burger as well, all of it very good and large portions, they don't hold back. And serious you're eating all this in a really cool setting. They have some epic starters as well that we'll have to come back and try. The servers are all wearing masks and they have hand sanitizer throughout the building and social distancing is enforced with the placement of tables and signs on the floor. I believe they have tours, but probably not during COViD, but they do have signage throughout the restaurant since it's a museum too, teaching you about breweries in Dayton's history. I read this is the only brewery in the state's at a museum, Dayton is always making history, I love it and I hope you'll love it too.
