We stopped by one day for a quick lunch. I've never been here before, but I had a solid experience. They were open when a lot of the other restaurants were closed for some reason. Their dining area is pretty massive, and they also have a bar at the front of the restaurant. They also decorated the restaurant in the theme. I had ordered chicken fajitas, and it was okay. The portion is expected for lunch, maybe a little bit generous even. I did wait a little longer than I wanted to for my food and for the server, but it turned out okay in the end. Made a dinner reservation in hopes the restaurant would be a great birthday celebration like I experienced last year, but this was not the case. I made a reservation online, and when my party of 7 arrived, we had two servers (one who appeared to be a manager) who did not seem to be on the same page at all. They asked us for our orders twice, messed up the only vegetarian's order, and told us they did not have limes... on a Saturday... at a Mexican restaurant. By the end of the experience, we asked to split checks by separate parties within the group, and the server (manager?) responded to the question with: "You should have put this on the reservation." I told her I was unaware of this expectation, and there was no prompt to provide this information online. She spent about 30 minutes splitting our checks and handed them to us by saying that because of our large party, gratuity is included. The service was terrible, but I still decided to tip her 18% on top of the added gratuity. When our party started to stand to wait for a friend to use the restroom, she comes up to me and says : "The gratuity is not included" and shows me the check angrily. I told her that she had said it was which made me think so. I asked her what she would like me to do, and she responds with "It's not fair" and storms off shaking her head. I felt awful being treated like this, and we spent more time waiting for our food than eating it. Seems like there is change in management, but I am never stepping foot in that dank restaurant. They are not respectful of your time, and the manager demands respect for their shitty service. read more

Platanos Maduros- Fried sweet ripe plantains served with sour cream Nice combination of the sweet and sour. The plantains could have been cooked a little softer for me Gambas al ajillo- Six jumbo shrimp sautéed in olive oil, garlic, white wine, and parsely Deliciously flavorful, however, the salt was heavy handed. Paella valencia- Scallops cooked perfectly, however, I prefer the "coral" of the scallop to be removed as it takes away from the silky texture of the scallop itself. Having said that, it does add flavor to the scallop. It's a texture thing for me. Sometimes it's removed before hitting the US. I had a glass of Albariño. Its citrusy, stone fruit notes, high acidity, and salinity cut through richness, complement seafood flavors, and balance saffron/spice with freshness, making it a classic match for the vibrant, savory dish. Serve it well-chilled to enhance its palate-cleansing effect, creating a refreshing contrast to the hearty rice and ingredients.  Chips were lackluster. Tasted like they were not made in house. Salsa was good though. Portions were good. Ratio of rice to everything else in paella was too much. Rice is cheap. No need to be overwhelming on plate to give the visual experience of being a generous portion, while making a profit. Oh, and I had to ask our server to get another chair because the one I sat in was imbalanced and wobbly, a potential customer disaster. All in all, Cacique's food offerings are very tasty. As an experienced diner, my intention is to provide culinary observations that can help elevate a place of eating, not just for the sake of providing critique. read more

Bathrooms were not stocked. Big rolls of paper tossed around if you got to them before entering stalls. Menu is an interesting combination of Spanish and Mexican. However, the two dishes we had needed seasoning. Any seasoning! Hard to mess up steamed vegetables but they had no flavor, not even salt. Kinda like the almost serviceable bathrooms, clean but not stocked so really not useable. Food was of reasonable quality but not well prepared or flavored so not an enjoyable meal. This restaurant was recently closed and redesigned. It is so nice inside and feels upscale, but without the upscale prices! The drinks are very good and they don't skimp on the alcohol. So this place is downtown Frederick. Parking can be annoying, but there's a garage not very far from the restaurant. They start you off with chips and salsa, which was about your normal. I wish places had chunkier salsa that wasn't like a soup, but the flavor was good. I ordered the chicken Chile rellenos and a sangria. The sangria was pretty good, but the Chile rellenos were even better. Service was good. Honestly I'd say it compares to guapos or uncle Julio's except they have both Mexican and Spanish (Spain) food. read more

Black beans and rice is vegetarian which is a plus. The shredded chicken chimichanga was substantial with the amount of chicken in it hit I wanted some other flavors. Cheese or lettuce or rice and beans would've been a good addition. The chips and salsa was OK. The salsa tasted like they had some good salsa and not good salsa and mixed them together to get ok salsa. The chips were alright. The pomegranate margaritas was good. Cacique never disappoints! Decided since Market St was closed down for the day that it would be a perfect opportunity to sit outside. There was an abundance of seating. We didn't have to wait to be seated and the service was quick! We received refills on our waters several times without asking and food was brought to us quickly! We ordered a half pitcher of margaritas and they were well liquored. ;) The ceviche is fresh and they DO NOT skimp on putting the more expensive proteins in (shrimp and scallop.) Yummy steak fajitas were cooked perfectly. A great amount of peppers and onions to pair. Only thing I would change would be to have refried beans instead of regular but that's just preference! Excellent food. Went for lunch on our 42nd anniversary. Service was excellent. Shrimp fajitas outstanding as was my burrito.

Good environment and service, very mediocre food. I'll give the restaurant credit for good, attentive service and a nice environment. The appetizers were okay, but it's obvious this place is run by cheapskates. A $30 seafood Saltado plate had 3-4 shrimp and maybe 4 or 5 mussels mixed in with a ton of cheap veggies and rice. The mashed potatoes obviously came from a box. They were okay when it came to the Mexican staples (enchiladas, fajitas, etc), but the more expensive items were overpriced and disappointing. read more

Cacique is in the heart of downtown Frederick on Market St. The food was great. I had a chicken chimichanga and my husband had the chicken and beef fajita. The meats were cooked to order and seasoned very well. The chips were good but I found the salsa a bit dull/bland and a tad sweet. Our margaritas were good (peach and hibiscus) but we've had better. I was disappointed with the tres leches cake. The service was good but we've had more attentive servers at other places. Overall this was a good choice and we will go back. read more

Tried Cacique for the first time and we were not disappointed. The service was great, the drinks were strong, and the food DELICIOUS! Will definitely be coming back. My husband got the combination chicken/steak fajitas and he ate everything on his dish. Coming from a picky eater, that never happen! I got the seafood saltado and it was so flavorful yet light. Delivering on delicious Spanish cuisine. Cacique is not to be confused with your run-of-the-mill Mexican eatery. Cacique creates high quality and traditional Spanish dishes such as paella, saltado, and a beautiful assortment of spiced seafood plates. Cacique does also offer more familiar Mexican dishes such as quesadillas, chimichangas, and an entire section of the menu dedicated to fajitas, but trust me when I say, break out of your comfort zone and enjoy in some savory dishes from their Spanish section. If you are unfamiliar with the charred meat and heavily seasoned Spanish style of cooking, then you'll be in for a wonderful surprise when you sink your teeth into perfectly cooked beef paired with crab stuffed shrimp and coated with Peruvian sauces. I've sampled their lomo saltado, a filet mignon steak topped with grilled vegetables and fresh herbs, and their bistec realeza, a Spanish take on "surf and turf" that tasted like pure delicatessen. Cacique has a wonderful staff that were both highly knowledgeable on the menu and provided excellent conversation. And as a fringe benefit, Cacique offers complimentary tortilla chips and a creamy salsa, and I can honestly say that this was one of the best complimentary munchable I've ever sampled at any restaurant. The chips weren't greasy or overly salty and stayed crunchy even when swimming in sauce and the only thing I can say about the salsa was how addictive it was. A wonderful place for authentic Hispanic and Latino cuisine! We were very excited to eat here after so many friends told us to, and we weren't disappointed. Starting off with the pitcher of Margarita, they were great in taste and not overly sour. The food was amazing, and some of the best paella I've had in a while. The Paella de Marisco was beautifully balanced and the seafood medley was fresh. Our server was very nice and everyone around the restaurant was very attentive. Everything has been hitting tonight. This was the first time my wife and I tried this place. Nice atmosphere -- broken in. Chips and salsa were delivered immediately. Chips were light, thin, not over salted. Salsa was fresh -- blended veggies (uncooked) with a nice little kick. For the appetizer we ordered ceviche and the house margarita. It was really good. Most restaurants skimp on the alcohol in a margarita, and use a kool -aid type mix, but this was nicely balanced with fresh lime juice and plenty of tequila. The ceviche was fresh, with calamari, shrimp, scallops and fish with some fresh veggies (cucumber, tomatoes, onions, lettuce). For dinner we shared a fajita for one. The steak was above grade -- tender and cooked perfectly. The smokiness came out more in the chicken. Portion was generous. We couldn't finish it. Overall excellent experience. Delicious. read more

A cacique, sometime spelled as cazique was a tribal chieftain of the Taíno people. I usually go here for the happy hour food. But 2 days ago, I had a scary and violent interaction with a bartender there. I rarely leave bad reviews but the people need to know. We were the only patrons when we arrived and she flat out stared at us from across the bar for 10 minutes. Just listening to our conversation not at any point offering us a menu. I had to ask someone else for a menu. When she finally came closer I asked her to order food and drinks. She reluctantly brought our drinks. And I mean reluctantly. She actually didn't want to do it. It was insanely obvious. I hadn't even sipped my drink before Elena, the bartender, brought us a check for just our beverages. When we calmly asked her why she brought that, she then cursed my friend out, "I don't effing like you," snatched my drink out my hand, spilled it and threatened to call the cops on us. I genuinely saw a look of disgust in her face, her movements were so quick, and her body language was rage filled and scary. It made me think she was going to throw the glass at us. I am highly skilled at de escalation and attempted to pay for the drinks and leave, but she just continued cursing and screaming at us from behind the bar. Even as we got up to get away from her. Not even her coworkers could stop her from screaming at us. There was no supervisor present the only other employee that chose to get involved tried and failed to calm her down and asked us to wait for the manager. We waited for 15 minutes while Elena rudely spoke about us cursing and shouting in Spanish while not realizing we understood Spanish. At that point there were 7 new customers including 3 CHLIDREN at 2 tables that walked in while she was carrying on. The whole thing was shocking and confusing. Because quite frankly we did absolutely nothing wrong except come in to an empty restaurant. From the moment we walked in, she didn't even want to serve us. The other employee David made sure to apologize and even tried to get her to calm down. You don't have to like your customers but it made no sense how she expects to get any tips or regulars with a bed side manner like that. I enjoy the calm ambiance of cacique. But that was awful. I will not be recommending this place to anyone. Anymore. I do have a recording of the event. And will be getting restraining order. read more
