The cauliflower tartar sauce added nothing to the dish; the cauliflower giardiniera at least added some nice crunch and acid. Savory Parmesan Cheesecake: The cheesecake had no flavor; the acid and freshness of the cherry tomatoes of the arugula pesto could not elevate or salvage this dish. Cheese Ravioli: By far the best dish of the evening. The ravioli tasted fresh, were nicely cooked, and the cheeses and sauce were delicious. Smoked Beet Pastrami: The beets were well-cooked and fantastically seasoned, complemented perfectly by the dressing. However, there needed to be more beets and a better beet-to-funnel cake ratio; while the funnel cake added some nice crunch, there was way too much of it and did not do much for the dish.
