A higher star rating from me is warranted, however one of the challenges tied to any food truck is the availabilty of seating, shade, etc. There is one table with chairs available however and in our case today we were taking out regardless. The truck and work areas are clean and the menu is clear and concise (unlike some of the hastily handwritten ones for many food trucks). Although "tacos" provides the initial draw, the menu for Tacos Colima is varied. Other than tacos one can choose from burritos, super burritos, tortas, flautas, quesadillas, sopes, tostadas, and even a Torta Cubana sandwich. Protein options include pork carnitas, chorizo, chicharron (+$3), lengua (+$3), cabeza, shrimp, chicken, asada, pork adovada. We both went with burritos today - a carnitas Super Burrito - slightly larger and includes sour cream, avocado, and cheese - and a regular chorizo burrito - the regular is a simple beans, rice, and meat version. Being a chorizo "aficionado" I was more than pleased with my "plain" burrito. The soft tort was filled with an equal amount of chorizo, beans and rice. I was very happy with my choice. The portion was great for $7. The carnitas Super Burrito ($11) was also great, and large enough to opt for leftovers. My dining partner has also tried the carnitas tacos here which she stated were great. Nothing flashy, just really great, basic eats. Each of our plates also included shredded lettuce, thin sliced radishes, and a lime wedge. The burritos were also foil wrapped and were still nice and hot when we got them home. Such a great place to have close to us in Star. Very reasonably priced, fresh ingredients, and very friendly service. Highly-recommended.

Their small street tacos are good, but the inconsistency in maintaining their menu and their hours of operation is frustrating.

Their St. Louis Style ribs are succulent, meaty and finger licking good. The ribs are sauced and absolutely delicious. I've tried several sides and the potato salad is one of my favorites. Full confession - I'm normally not a big fan of coleslaw, but Blue Smoke Craft Barbecue adds apple and I've been converted. I highly recommend the Banana Pudding to end your meal or just because!!! These dishes are definitely comfort foods and truly taste homemade, without me having to do any work!!! The breakfast burrito is a sight to behold. I ordered it with brisket and it was full of delicious meat. They offer breakfast sandwiches, rib plates, mac & cheese bowls, sides, tacos and desserts. Note - it is a food truck so the menu can change. The owners, Arica and Andrew are wonderful people and care about the food they provide - this food truck has heart! The two servers behind the counter are completely discombobulated. And, one of the employees just touched the inside of my sanitized to-go container with their bare hands after being out on the floor, touching dirty dishes, handling the dirty cash register, touching other surfaces. and everything else. The other server seems to be completely lost and staring off of the distance wiping counters while there's orders pending. My order. She really doesn't seem to be able to focus very well and know what to do. For example, there are plates of food sitting on the prep table, ready to go out and she walks over and looks at my ticket and then just stands there and wipes the counter. My to go order would literally take probably 30 seconds to put it into a container, weigh, and hand it to me, but she just won't do it. And, the other patron's food is getting cold. It seems like the guy that's on duty is the brains of the operation and he's doing all the work. I get out to my truck and the burnt ends feel really light in contrast to my brisket order. I ordered a half a pound of burnt ends, and 1/3 of a pound of brisket. Something isn't right. I take the burnt ends back in and show the guy that was at the register when I came in, he agreed something went wrong. It looked like a third of a pound, but I would argue that it wasn't even a third. By the way, this was prepared by the girl working that was daydreaming. He then made it right and handed back my tray, which I was grateful. He was apologetic and he took care of it well. Just to be clear, he did not give me more than half a pound but he made it right. And then went to go pick up a plastic fork, that's usually over in a cup on the counter, but there were none. So I had to get their attention quickly and ask for a fork and they pulled one up from behind the counter, after I was told they were over by the beverage machine. They both seem surprised that there were none up there ready to go. The food as usual was delicious. This is the sad part. The service is all over the map and completely in need of some serious management and restructure. I realize that it's very difficult to get good help these days, but this is a training issue. I can't go back in now knowing that the last 3 to 5 times I've gone in there. I've always had a problem with service. If the food was piping hot when it arrived, I might not be so bothered, but this lack of efficiency causes the food to be delivered cold. That's not my definition of a good experience. If you have a lot of time on your hands, and you don't mind waiting, and you don't mind your food warm instead of hot, then I would say venture out and try this place because the flavor and textures are good. Just set your expectations accordingly. The atmosphere is comfortable and rustic. A little loud because of the openness, no booths, just tables and chairs with 1/2 booth. Lots of self service going on here so be careful before you tip at the register. By the way, I chose not to tip at the time of payment when I walked in because I don't like tipping in advance of receiving the service. The purpose of the gratuity is to compensate your server based on the service they delivered, not will deliver or should deliver. Or in this case didn't deliver. I realize that not tipping on the front end gives the employees a chance to retaliate with poor service because you didn't tip. Oh how the times have changed.

So of course we made new plans, made sure our schedules are were open so we can snag a meal after a round of coffee. Today was that day! I did check out the menu online the night before. I like to see what they have and what their menu entails. The red curry coconut noodles really caught by eye! Noodles, broth, curry!?! 3 of my favorite things in a bowl! So,I went to the food truck feeling 100% in my food choice. Well, the red curry noodles were not an option so I had to look over the menu again. Total bummer since I had my heart and stomach set on it. After reading the menu board over and over again and it was still early enough that ordering breakfast wasn't weird, I decided on the Croque madame. Grilled ham and cheese with an egg, it sounded good. My sandwich did not look like it came out of a food truck. It also doesn't look like it should be in a to go container. My sandwich was a work of art! The egg was cooked perfectly. The fondue sauce was snow white. The pieces of cilantro added a beautiful color to it and was nicely sprinkled all over. It was just too pretty to eat! This sandwich is messy so the fork and knife that was provided for me was used! The bread was very soft and fresh! It toasted and buttery. There was so much ham! It made the sandwich very hearty. The egg yolk was runny and jammy. The cheese fondue was rich and savory. The heirloom tomatoes added a nice freshness to the sandwich. All together it was a very thick sammy. All the flavors were fantastic but it did get overwhelming to eat after few bites. I enjoyed the fondue but it was a lot for me. The fondue is very rich and you add all the other elements and it gets to be too much. If I order this again, I'll probably order it without the fondue. There's already cheese in the sandwich so it was overwhelming with the cheese sauce added to it. My friend ordered the chipotle breakfast sandwich and it looked amazing. It was simple and it looked like something I would have really enjoyed vs what I had ordered. I did ask the gentleman in the food truck if they will have the curry noodles anytime soon. With the cold weather coming, they are anticipating the noodles too be back. I look forward to that! I haven't frequented many food trucks but this one has really set the bar high! The quality of the ingredients used were fantastic and fresh. The service was great. The food truck itself was pretty neat. The location is fun and chill. I know we will be back and I look forward to having that bowl of noodles. If not noodles then I'm sure I will be able to find something that will be delicious.

Not pictured was a hot chocolate w marshmallows that may have been the best one ive ever had. If you are in the area this place does not disappoint. There is plenty of nearby seating, a fire pit, and a corn hole area as well. Highly recommend!

I ordered the meat bowl with shredded jerk chicken, beans and rice and like this little salad thing on the side which was quite enjoyable! The BEST part of it though was the double fried plantain! WOW ! Extremely good and I was not expecting that! I usually don't finish all my food when I go out but I ate my whole meat bowl that day! My wife ordered the loaded fry plate thing and it had all sorts of meat on it fry sauce salsa .... OMG .... Salsa FIRE!!! The first time was the day before Easter. We had our egg hunt. We invited them out. When the two ladies came, one was incredibly rude. She did not want to have a conversation. She was rude to some folks, and acted like she didn't want to be there. She left early. We were super bummed. 2nd time- our subdivision LOVES food trucks, so we thought we'd give it another go. We inquired about them coming back. She said yes. The day of, she sent our scheduler a message saying "I'm reaching out to see what other food trucks have made, because we need to make $700". Our scheduler sent her a message saying she had no idea but our food trucks are usually successful. Leading up to the event, the community promoted A3 in our newsletter, and community FB. People were excited and gearing up for tonight. Well, A3 backed out on coming. This would NOT a problem but it was THE DAY of the event. Huge ich. She committed to come. Rather than take responsibility and accountability she chose to cancel. Plus she keeps messaging us. She's harassing us because we posted an honest review. It's gross. It's a turn off. Be better business owners and be responsibility. .
