I've been coming to Bricks and Birch since I moved to Redlands in 2018. I have always loved the breakfast pizza and eggel, and getting some sort of coffee with it. I hadn't been in a few months, and decided to drop in this morning to eat, have coffee and edit photos on my laptop. During the several hours there, I got to overhear exchanges between customers and staff. The morning shift boys were young, but friendly. Let me tell you, once the day shift crew came on, the energy shifted. Andy, I HIGHLY recommend you replace the tall, thin guy with the glasses. The whole time he was there, he acted as if he didn't want to be there. He was rude, stand offish, and completely disregarded customers. As soon as he BLATANTLY ignored a female customer who was trying to have a conversation with him but gave attention to her male counterpart, I was over it. Listen, I get it, he might have not wanted to entertain someone's story. But customer service means to acknowledge the customer and treat them with respect. I can't even count the amount of times I've divulged in conversation with people I didn't want to, but I still treated them like a human. The woman was visibility upset about how off putting he was. I packed my things, went over to the woman and told her feelings were valid because he had been dismissive towards others ever since he came in. I know you're not going to care about my review, I know you're not going to lose much money if I never come back. But people need to aware what kind of employees are here. As for the food and coffee - The ingredients no longer taste fresh on the breakfast pizza. It tastes cheap and rushed. The iced vanilla latte I had was mid at best, I forced myself to finish it. Which is disappointing because I have loved both for years. I think the young boys need some better training on how to make coffee, but at least they were personable. The young guy with long curly hair - keep up that positive energy. You're gonna go somewhere. Highly recommend bringing Quay back full time, maybe make him a manager or part owner because every time I've been there and he's makes the pizzas, everything is He's a staple, and is clearly loved by all the customers who were happy to see him when he walked in. I really want to love this place. The staff are rad, the cookies are probably the best in town, the pizza can be really good, and they have some good vegan options (cookies and pizza, but not with coffee - see below). I'd honestly be here all the time if the business didn't keep giving me reasons not to be. The decision to stop serving barista-made coffee after 2 p.m. is baffling for a coffee shop. They don't open until 8 a.m. either, so the window in which you can actually come here and order a coffee is surprisingly small. On top of that, charging an extra $0.95 for non-dairy milk in 2026 feels excessive to say the least. There's a lot to like here, especially the people working here, which makes these choices even more frustrating. I want this to be one of my regular spots. My husband had the jalapeno popper and I cannot remember what mine was called but it was delicious. I've been recommended to check out Bricks and Birch by my roommate! I was told the Thai pizza was a must-eat. For my first time entering this pizza restaurant, I was struck by the amount of light that streamed into the open windows. There's plenty of seating as well indoors and outdoors. You can directly observe the oven and the flames by which pizzas are cooked in. I came in with the objective to find a good pizza for a potluck for my life group in graduate school. For the length of time it took for me to calculate how much pizza I needed and how much I was able to invest in, the staff were so patient and kind with me! In hopes to find a good vegan pizza for the group, I asked what they recommended and based on their recommendations I got the Veggie pizza, 12", vegan cheese, gluten free crust. It amounted to about $25, which is a bit on the pricy side for a 12" pizza. However, it was my first time buying a vegan pizza for friends, so I'm glad I got to try it for the first time here. They are also known for their vegan pastries especially the banana bread which I hope to try someday soon! They offered sample m&m cookies that provided the sugar boost for me to drive to my potluck. The wait time for the pizza to be made was about 15-20 min, around 3 pm when there weren't that many people. The pizza came steaming hot, and I can tell the ingredients were fresh. Sharing them with friends was a delight. I'm considering the higher price as partly an investment in the experience and presentation of the food - thank you to the staff who cares about these! The place is well kept and give me a sense of comfort. I want to give a shoutout to Adalaine for her exceptional kindness and patience with my confusion of what pizza to get. I ordered a veggie pizza for about $10+ plus tax. Service was fine. Just know if you sit outside while waiting for your food they won't go outside and tell you, so you'll be in charge of checking in on when your food is ready. My order was to go so they placed it in a cute little box. Not sure if all of their pizza is like this, but the crust was BURNT! As in, black and bitter dough. Crust is my favorite part but I didn't get to eat the edges. The main part of the pie was fine with fresh tomatoes and mushrooms. I added crushed red pepper and Parmesan cheese for more flavor. The triple B pizza looked like a real pizza - when we opened the caprese we were shocked. It looked nothing like the pictures online. No basil, the dough was undercooked. So much oil it was leaking through the box. Chunks of uncooked tomato on top. Not sure if they just wanted to get it out the door quick or they genuinely forgot to make it appropriately. The kale in the salad was rubbery and flavorless. The photo online looked like a beautiful pizza. I wasn't sure what this was. I stayed for at least an hour, and during that entire time, the staff neglected to clean those two tables.
