Well if you get the time, you should stop and check them out. The Brazos Valley Cheese store is located at the Homestead Craft Village. It's a cute little place with all kinds of shops and BBQ. The cheese shop has lots of cheese samples and meats for making a charcuterie board. There are also crackers, fresh baguettes and more. The ladies at the cheese shop were very helpful and had all kinds of insights into the cheeses. Overall a great stop and the cheese was wonderful... it will make a nice addition to a wine country weekend! read more

Love this shop and always swing by when heading through Waco. They make their cheese on site so selection varies with each visit. They also have a nearby cheese cave where you can walk down and see where they store the cheese. The shop offers samples so you can try different selections before committing. I was interested in a jalapeño lime vinaigrette and asked how spicy it was. The kind woman behind the counter poured a sample so I could try it. These samples weren't on display so this was an unexpected bonus that led to me purchasing. Since the small bottle was over $20, I was on the fence until I tasted it. They also carry a selection of sweet treats like chocolate toffees, nuts, teas and must try peanut butter melts. read more

Saw the billboards along Interstate 35 for the "cheese cave" and decided to see for myself. Brazos Valley Cheese is located just northwest of Waco. It's a quaint operation in a small building. The proprietor is very friendly and pleasant (grew up as a military brat and lived all over). We sampled various cheeses and bought two blocks. This is artisan cheese and worth every penny at $28/pound. The smoked white cheddar was our favorite, The cheese cave was an interesting aging facility. It's underground with a separate HVAC system to keep the cheese at the right temperature and humidity for aging. Clean facilities. Restrooms available next door at the coffee shop. read more

Tonight while hanging at home and social distancing, the owner of @brazosvalleycheese_wacotx knocked on our door and then stood a CDC-approved distance away from us telling us about the bounty box his business was offering. I'm usually pretty reticent to buy something from someone showing up unexpectedly at my door, but the owner's demeanor was so friendly and not pushy at all and the offerings were awesome. For $68 we got to support a local business and get a ton of delicious groceries without leaving our house. The sweet owner was offering a $10 discount off the listed price AND a free carton of eggs. Seriously so kind. We don't eat a lot of meat or drink dairy but the owner was more than willing to make substitutions for us. Times are tough right now for so many of our friends and neighbors and obvi small businesses are getting hit really hard. I loved seeing the resilience, creativity, and positivity that @brazosvalleycheese_wacotx demonstrated today. If you're reading this and we're still combating COVID-19 this is a great way to get some awesome food and avoid HEB crowds. If this is post-COVID, hooray we've lived! The cheese I bought was very unique and delicious. A little pricey, but was worth it for my purpose.

We saw a huge sign on I-35N "cheese cave" and that was enough to spark our interest. On our return we popped in. What a cute place! It is not very big, but the idea of storing cheese in a cave in Texas, I had to see it with my own eyes. The grounds in a few years are going to be gorgeous, but it is pretty right now. You can see the landscaping is in the infancy phases with all the fresh trees planted. The store was a bit busy, so we walked around to the cave. The cave is the small building in front of the coffee shop with a little sign that says cheese cave. There are stairs that go down and then you see a window that you can peek in to see the lovely cheeses. Breathe in to take in the smell. We waited for the cheese shop to be empty and then talked to the cheese maker and tasted some cheeses. The smoked cheddar is amazing! It has the most complex combinations of flavors. Attention cheese lovers!!! Bravos Valley Cheese is a must see! It's a part of the Homestead Heritage community (which is 100% worth your time to explore) and was such a fun place to learn more about homemade cheese. They have the caves which you can peek into and see the aging process, the store where you can sample and purchase homemade cheeses, crackers, preserves, olive oils and more. We bought the extra aged smoked white cheddar (very sharp and tasty), the garlic herb goat cheese (soft, creamy and flavorful), and the feta in salt brine (our favorite!!). Bought quite a few cheeses after we sampled. They had just come off a festive so not a lot of inventory but we still found lots to buy. Helpful & friendly staff. Visited the cheese cave. Just 2 flights of stairs down to a window to view all the yummy cheese resting quietly till they are ready for their debut. Make sure you stop at Heritage Coffee. Gorgeous building with beams from a late 1800's barn (?) Hubby said coffee was very excellent. I purchased a coffee mug made from coffee pods. I'm not really into the "greenie weenie" recycle bit but they were way cool! A quarter of a mile further down they had a wee little Heritage Village w/different shops and a restaurant. read more

So many trips back and forth to Waco, I had noticed their billboard and today was the day, CHEESE! I absolutely love cheese, I could live on cheese. Driving up to the location, it all became clear, "Brazos Valley Cheese" is a part of Homestead Heritage. I loved it that I got to sample the cheeses before purchasing. Their cheeses are VERY good and well crafted. I ended up purchasing 5 different varieties that I am going to enjoy REAL soon. Once she realized we were there to purchase she became very chatty.....but she was cold as ice until that point. The cheese is amazing. This cheese shop is another handmade shop on the Heritage Homestead. The cheese shop is the second area off the the highway. Samples of the homemade cheese greet visitors. There is a small building across the parking lot...stop here, as it is the cheese cave. The cheese may be a little pricey, but Hubby and I love to support local businesses. read more

Take the time to go here! It's a little off the beaten path of Waco's tourist scene, but SO worth it!! It's part of The Homestead Community so the Homestead Cafe is there too. The Cheese cave is super cool! The cheese is available in the gift shop along with other delights such as seasonings, oils, balsamic vinegars, chocolates, and caramels - all sourced from local small businesses. If you enjoy a pretty store and cheese samples, this is it. Good flavor for the white cheddar, mild and smooth. Didn't like the very earthy taste of the rind, and had to cut off quite a bit. Also disappointed that there were no cheese curds to buy due to some "pasteurized milk law". Pressed fruit was a nice accompaniment to the cheese, but tasted a little like the plastic wrap it was in. Walking trail to the "cave" was underwater, but looks like they were in process of renovation. Maybe better next time. read more

Brazos Valley Cheese Cave. Go for the novelty of the cheese cave. Stay for a day or more exploring and learning about the rest!! You can even take classes in woodworking and pottery or have a delicious meal at the Cafe. I better understand the process of cheese making and what it would require to go inside the cheese cave, but do not expect to go inside due to food regulations. My goodness though, that was some delectable cheese. That itself was worth the trip. Bring your walking shoes as this place did not disappoint. It was very accessible with many place to sit, enjoy, and take in the beauty of the land. The people are helpful and graciously share their skills, knowledge, and kindness. Make sure to go a little further up the road to the greenhouse or Craft Center for some of my favorites like the Potter's House, Woodworking, a blacksmith, herb garden, and a stunning barn with quilts and textiles that are down right astounding. Kinda Small, kinda wierd, Kinda AWESOME CHEESE. We drove up an old highway, from our WACO visit. It is hidden in an artisanal community. Cheeses a bit pricey...but worth it. Samples ranged from traditional form goudas to a near cottage-cheese consistency feta. All were tasty. It wasn't formal at all, though the buildings reeked of newness and class. There was no "tour guide." The cheese seller pointed the way to the cheese cellar. We wandered over and climbed down the stairs. The aromas of different cheeses, hit you layer by layer, a nutty parm-ish, then, a strong gouda, then Smoked Gouda, as you descend the atmosperic layers...stunning! There is a small, one or two person glass plate window, to peek at cheese as it ages...not much variety visible, and no activity. Meanwhile the dairy wing had activity visible through the glass windows, but NO TOURS ! A layout 1st, cheese cellar, 2nd, a sidewalk along two sides of dairy room with signs establishing what your seeing them do,, 3rd, cheese retail...WOULD GO A LONG WAY to better understand process and their overall business. I bought some smoked gouda, and again while pricey, was well recieved by my fellow parishioners, after my vacation. read more

Brazos Valley Cheese is open, clean and wonderful. When you walk in, you see a large window that lets you see where the cheese is made and what they are doing. There are real people using real milk to make real cheese--by hand. They have certificates on the wall that testify winning cheese competitions in France (or was it French Canada?). That struck me as being akin to some Frenchman winning a Texas chile cook-off. Read what reviewer Garry H. said about their big mistake that turned into one of their most popular cheeses--"Vansorman"--a mashup of Vanilla, Sorghum and Cinnamon. It's my favorite if I'm going to nibble on just cheese, but Cheddar still wins out for nachos and other Mexican foods. (They'll give you a sample to taste.) When you see the work and care that goes into their cheese, it takes the sting off the price. This stuff is not cheap. When you go there, see if someone (we talked to a very nice man named Danny) is available to take you across the road to their Cheese Cave. That's where the aging happens. When you open the door with that big ol' key and walk down into the Cave, it's like you stepped back in time. And all that beautiful cheese! read more

I have to say I had a very different experience at their booth at the Dallas Farmers Market. They had a young man representing the booth that my mother and I had a bad experience with. After the experience however the owner reached out directly and took the time to make everything right. I have rarely been that impressed by the way the business has been done and taken care of. I love this place! The cheese is marvelous. My husband and I come to Waco to go here every chance we get. You can watch them making the fresh cheese curds. We have been going here since they were in the little shop right off the road. They have always been so nice and generous with the cheese samples. Great cheese and great service! I was on a trip with friends and we saw the sign for a cheese cave and we all said "Let's go"! We got to see the smokehouse and the cave and taste some truly delicious cheeses! All of us bought some and they were so nice and knowledgeable. Due to a tragic ice mishap...my cheese was ruined on my way home so I called to order some more. Marc went above and beyond to make sure I was able to get my cheese replaced! Such stellar service!
