    Saw the billboards along Interstate 35 for the "cheese cave" and decided to see for myself. Brazos Valley Cheese is located just northwest of Waco. It's a quaint operation in a small building. The proprietor is very friendly and pleasant (grew up as a military brat and lived all over). We sampled various cheeses and bought two blocks. This is artisan cheese and worth every penny at $28/pound. The smoked white cheddar was our favorite, The cheese cave was an interesting aging facility. It's underground with a separate HVAC system to keep the cheese at the right temperature and humidity for aging. Clean facilities. Restrooms available next door at the coffee shop.

    This is a small shop and gets crowded very quickly. The cheese samples are plentiful and we really enjoyed the quality and variety of cheeses offered. The staff was very friendly and very enjoyable to chat with.

    This is a quick off the road stop on the way to Waco. The cheese cave is interesting and they make and sell quality cheeses in their gift shop. They also have a nice picnic area on site where you can enjoy your snack if you pick up one in the gift shop.

    Brazos Valley Cheese at Homestead just outside Waco has been on my list for quite some time. No cheese was being made when we went but I need to go to a cheese making class (to get into the cheese cave). Delicious cheeses. The ghost pepper cheese was my favorite.

    Tonight while hanging at home and social distancing, the owner of @brazosvalleycheese_wacotx knocked on our door and then stood a CDC-approved distance away from us telling us about the bounty box his business was offering. I'm usually pretty reticent to buy something from someone showing up unexpectedly at my door, but the owner's demeanor was so friendly and not pushy at all and the offerings were awesome. For $68 we got to support a local business and get a ton of delicious groceries without leaving our house. The sweet owner was offering a $10 discount off the listed price AND a free carton of eggs. Seriously so kind. We don't eat a lot of meat or drink dairy but the owner was more than willing to make substitutions for us. Times are tough right now for so many of our friends and neighbors and obvi small businesses are getting hit really hard. I loved seeing the resilience, creativity, and positivity that @brazosvalleycheese_wacotx demonstrated today. If you're reading this and we're still combating COVID-19 this is a great way to get some awesome food and avoid HEB crowds. If this is post-COVID, hooray we've lived! Go treat yourself and visit their shop!

    We saw a huge sign on I-35N "cheese cave" and that was enough to spark our interest. On our return we popped in. What a cute place! It is not very big, but the idea of storing cheese in a cave in Texas, I had to see it with my own eyes. The grounds in a few years are going to be gorgeous, but it is pretty right now. You can see the landscaping is in the infancy phases with all the fresh trees planted. The store was a bit busy, so we walked around to the cave. The cave is the small building in front of the coffee shop with a little sign that says cheese cave. There are stairs that go down and then you see a window that you can peek in to see the lovely cheeses. Breathe in to take in the smell. We waited for the cheese shop to be empty and then talked to the cheese maker and tasted some cheeses. The smoked cheddar is amazing! It has the most complex combinations of flavors. The shop has all kinds of interesting things to purchase. Bathroom cleanliness: very clean, it is in coffee shop

    Attention cheese lovers!!! Bravos Valley Cheese is a must see! It's a part of the Homestead Heritage community (which is 100% worth your time to explore) and was such a fun place to learn more about homemade cheese. They have the caves which you can peek into and see the aging process, the store where you can sample and purchase homemade cheeses, crackers, preserves, olive oils and more. We bought the extra aged smoked white cheddar (very sharp and tasty), the garlic herb goat cheese (soft, creamy and flavorful), and the feta in salt brine (our favorite!!). All were delicious and we enjoyed every part of this experience.

    Currently staying at an Airbnb about 4 mins from here. Been going almost everyday the whole week to try different things. The staff is real helpful and friendly. The cheeses are really good and the habanero jelly is a 10/10. Would recommend to anyone who goes/lives in Waco

    Meh. The "cheese cave" was underwhelming and the folks working in the shop were obviously done with the day. Wish the experience had been a little more energetic and full as the billboard suggested. Bought some pasta and blueberry vinegar, super pricey but I'm sure it'll be good. It's getting 4 stars because the cheese samples were delish.

    Pizza food truck

    Cute place! If you are a cheese lover, definitely take the time to come here. They had samples of different cheeses, dips and bread. Variety of cheeses, caramel, nuts and honey. In the area there is a coffee shop and a pizza food truck that was absolutely amazing! Nice place to enjoy a picnic. Really glad we stopped here during our drive.

    Cheese Cave

    This cheese shop is another handmade shop on the Heritage Homestead. The cheese shop is the second area off the the highway. Samples of the homemade cheese greet visitors. There is a small building across the parking lot...stop here, as it is the cheese cave. The cheese may be a little pricey, but Hubby and I love to support local businesses.

    Quaint little shop. Bought truffle gold and garlic havarti and both were very good. Staff polite and helpful. Great samples available.
