We walked in without reservations on a Saturday evening and was lucky to have the option of dining inside or out. We were seated in the corner, which was fine except for the flies that would get trapped against the window and buzz right around us. There weren't really any other tables in the middle of the restaurant available, so we sucked it up. During the day, it was very brightly lit. But once the sun goes down, it doesn't become very dark. We were given menus by the hostess, but there was a slight delay with water service and what not. Eventually, our waiter did come by to talk a bit more about the menu. (I should note that the table was only set for a party of two and we were a party of four. So, it wasn't until our first dish arrived did they notice that we were missing tableware and plates for the rest of our party.) We mentioned that we'll be sharing a bunch of things, so this is what we ordered: The food came quickly and we did have to make room immediately. I do wish they would have paced it a bit better though. * Beet Salad $15 - They were kind enough to split this in two plates right off the get go. Since it's called a Beet Salad, I did expect a bit more beets than what was given. 3/5 * Roasted Bone Marrow $16 - This was a gorgeous presentation with three bone marrow halves topped with a little red trout roe. The accompanying buttered crusty bread was just wonderful. Although not everyone enjoyed the fig vinegar, I loved this dish! 5/5 * Fried Anchovy Stuffed Olives $12 - My mistake was seeing "fried anchovy", so I was surprised when the olives showed up. It was a lot of salt on salt. It was just okay for us and was the last thing on our table. 2/5 * House Pâté $18 - Another wow dish! The house pate was delicious! The Little Gal pretty much planted that in front of her so she could just focus on that. We did need to order more bread to enjoy all of the pate though. 5/5 * Tartare De Filet Mignon $20 - This was another favorite dish of ours and we ended up ordering another! Loved the red trout roe and crostini that came with it. 5/5 * Moules La Marinire 1 lb $27 - The mussels were so well cleaned and the sauce had so much flavor. It also came with a crusty piece of bread to soak up all that amazing sauce. 5/5 * Peach Cobbler - Before we ordered, I did ask if they had a dessert menu as I wanted to gauge how much food to get based on what desserts were available. Our waiter mentioned they had only two peach cobblers available and could put one on hold for us if we wanted it. And he did rattle off a few of their regular dessert items too. Since this peach cobbler seemed so exclusive, we did ask for that to be on hold for us. When it did arrive, I was a bit disappointed. It wasn't sweet enough for my preference. I'm not sure if it was because the peaches weren't sweet or there was a lack of sugar in the cobbler portion. 3/5 * Beignets $12 (to go) - As we were leaving, I asked one of the floor managers if they typically do something for birthdays and he confirmed that they do. He then asked if they had missed something, so I reluctantly told him that they did. The Husband did mention to the two waiters that we were celebrating a birthday, so he had told the staff. I thought that maybe because the peach cobbler took a bit longer, maybe it was forgotten. He apologized profusely and offered to send us with an order of beignets. We were pretty full and had a drive back, but he insisted and said it would only take a moment or so. So we agreed and I waited for it. The order came with 10 little freshly fried doughnut holes, lemon curd, raspberry gelee, and strawberries. We headed to the car and I enjoyed a few there. They were just okay though, nothing really special. 3/5 Overall, there were some really great highs and a couple of lows. I appreciated how the manager tried to make up for the error and did ask where we were seating, so I assume he could address it with the staff. We REALLY loved certain dishes and would return again for those. I would still rate this highly because we did have a generally good experience. 4.5 stars

The service is incredible and the staff are very friendly and welcoming. The food is incredible and presented like you would expect from a French chef. Not a lot of plant based options, however, the Beet Salad with vinaigrette is outstanding, so there is that to enjoy. The flavors of sweet and salty are balanced perfectly! The colors and vibrancy also made it picture worthy. They offer an incredible wine selection that will suit everyone's tastes and preferences. The servers are incredible - they look like paid actors with their impeccable server etiquette and the fact that they were always smiling lol. The tables overlook Boulder and there are floor to ceiling windows almost everywhere. The lighting was so purposeful, we even watched a server set up a table and get a ladder to make sure the lighting hit the table just right - love the commitment! The menu changes with the seasons and ingredients, but it can always be counted on to be delicious, impressive, and artistic. The location on a quiet end of Pearl Street and modern interior fits the understated elegant experience.

Probably my least favorite course, although even that is debatable. This was a very salty dish, the first of many to come. One of the major takeaways from the meal as a whole, was how overly seasoned everything was. I am a salt fanatic and I really enjoy salt, however nothing seemed balanced when it came to salt. Just way too salty on several courses. Almost as if their proteins had been in a brine just a little too long. Although that's just a guess.... I'm glad I had the opportunity to try this restaurant however I would not go back again. It has been my experience that some places, once they earn James beard and Michelin recognition, almost give up. As in point Joel Robuchon, who lost their Michelin status. Highlighting more locally grown, seasonally harvested ingredients and showcasing them to their fullest potential in unique and innovative ways is much more impressive than caviar on cheesy potatoes. Btw, the cheesy potatoes, if served in a smaller portion, would have been an excellent accompaniment to the very salty red deer course. The desert course looked pretty and some elements were good, however not innovative nor original. Quite the lackluster afterthought, which again, was subpar.

The lattes were made with OZO coffee beans, which meant they were good but very overpriced. Service was prompt, attentive and they even let me take my latte back to my hotel room. Overall, it was a decent meal. The price point was high for what we received despite the dining credit, so rating this as an average hotel meal. We're definitely planning on staying at St. Julien again sometime in the future, but I'll skip eating here next time.

Between the pastry case that looks like it belongs in a museum and croissants so perfectly golden brown they almost appear artificial, every item seems to have been crafted with an almost unreasonable amount of care. I ordered the breakfast croissant, a black coffee, and a blueberry muffin. Now, I firmly believe a bakery's coffee should be judged the same way a singer is judged performing acoustically: no fancy tricks, no backup dancers, nowhere to hide. If your black coffee is excellent, everything else is built on a strong foundation. Thankfully, La Belle passed that test with flying colors. The breakfast croissant somehow managed to be both delicately flaky and impossibly soft at the same time. Every bite left a trail of evidence on my shirt that I regret absolutely none of. I'm fairly certain the croissant received more quality control inspections than my first apartment. The blueberry muffin was equally impressive, striking that magical balance between homemade comfort and professional craftsmanship. But if I had to describe La Belle in a single word, it would be love. You do not create food this visually stunning and effortlessly delicious unless the people behind it are deeply passionate about what they do. Every pastry, sandwich, dessert, and loaf of bread seemed to radiate the kind of attention to detail normally associated with Swiss watchmakers, NASA engineers, and grandmothers preparing for a family gathering. I've had plenty of delicious meals before. What stood out here wasn't just the flavor - it was the unmistakable feeling that every item was made by people who genuinely care about their craft. The passion wasn't subtle. It practically walked out from behind the counter, introduced itself, and insisted I try another pastry.
