Amazing pastries at a great price; plus great service! The croissants are so so good. Legit. Flakey, buttery, crispy, chewy and all with 10,000 layers! We also had their sweet bread pudding which was huge and dense enough for four people to share after having the ham and cheese croissants! The staff member that was at the pickup window on Saturday morning (maybe the owner or manager?) was super friendly and was able to serve us as walk-ins. I'm a huge huge croissant fanatic and tried them from all over the world, including ones from Australia, Lune Croissanterie (known as worlds best croissant) and Dominque Ansels. But after the croissants from Boulted Bread, I would rate them the WORLD's BEST!!! How can I have any other croissant after this! The outer layers were crunchy and flaky with every bite, and the inside was soft with the perfect chewiness. I came here on a whim looking for Northeast-style bialies. I had been let down at some other places. This establishment was excellent. First of all, the employees were so heartwarming and welcoming. I explained my goal for finding yummy bialies in the South. They brought me bialies and also some other pastries that were incredible. Well now I know what all the fuss is about...the highest quality baked goods imaginable! Having drooled over the many pics and 5-star reviews, we gave it a Saturday morning whirl and even lucked out with a two-top to land and share a bread pudding, ham and cheese croissant, followed by a chocolate-raspberry pull-apart. Coffee for Husband, cold Green Tea with Raspberry for me. Note: no sign of utensils, so this made for sharing a tad difficult. This can also lead to dangerous-for-the-marriage-moments when one person doesn't know when to stop pulling-apart and take full bites. I don't want the top crunchiness ripped off of my half, just sayin'! I want to bite through all the layers, get a little bit of the rich chocolate and just the right amount of raspberry, along with the texture of the flaky top. And when sharing the flakiest-ever ham and cheese croissant, each person should get a bite of an end where a little of the amazing salty cheese has oozed out a bit to get slightly browned. We both did agree that we would probably not order the bread pudding one again. The one we shared, while very rich with egg, lacked the other filling items that would have made it more unique. Plus texture-wise, we both preferred the other two. Just personal preference. What makes this bakery stand out from others is that they are a stone-mill using organic, heirloom and locally sourced grains. Add in knowledge, expertise, caring and compassion and we all get the finest, most perfect tastiest works-of-art ever! WHERE are they? South Saunders Street area near downtown, kind of between Memorial Auditorium and Boylan Heights. Street Parking. Would be nice if this helps the area around it renovate. So, Boulted Bread has only been open as a retail space for 2 days so take this review with a grain of salt! Profiled on Indy Week, the people behind Boulted Bread have been working on their space since the beginning of the year, did bread for wholesale distribution and have now finally gotten their retail space going! Which is nice since Yellow Dog Bakery is way over on the other side of Raleigh. What to expect? They've got a small store-front with roll-up garage door and a small display counter of breads and some pastries. I did a bialy with poppyseed and onion which was excellent along with a good cup of coffee. Cool that they use fettucine pasta as coffee stirrers, they can probably break those bad-boys in half and make them last even longer. Overall it's early and I'm excited to see where they take Boulted Bread from a business standpoint but they seem like good guys that are passionate about their product. Their inventory is a bit light right now so give them some time to pick up their operations. So kudos to them for getting their space open, now the wait continues for Lucette Grace and their pastries! read more

Holy hell, great bread whether it's salty or sweet. The automatic free samples were clutch in understanding the intense quality and uniqueness of their flavor and awesomeness. This micro neighborhood is cool too (Warehouse and outskirts of Boylan Heights neighborhoods), it was run down until a couple years ago; now it's slowly coming back. They did a great job with their storefront, how they renovated and decorated their suite in the very old and heavily distressed building they occupy. I also like how the girls who work at the counter aren't too hipster (aka were nice) and most likely wash their hands every so often; unlike some alternative crowd coffee places Ive been to, you know who you are... To summarize: I had seconds and bought their T-shirt, so I'd say I'm a fan for life, well... unless some TV food-star asshole comes to Raleigh and makes this place famous. I love good bread so I try all of the bread baking places in the Raleigh/Cary area. Yesterday, April 6, 2022, around 2pm, my husband and I, on the recommendation of a friend of mine, tried Boulted Bread on West South Street in Raleigh. We asked about buying a loaf of light-colored bread but were told THAT bread was for a restaurant. My question is why was it displayed with the other bread if we couldn't purchase it? Annoying. Having been told that the Seeded Levain was wonderful, we chose a loaf and took it home. While in the car, we noticed a distinctive burned smell emanating from the paper bag; the bread had a definite burned smell and appearance. In truth the whole store smelled of an acrid, oily burned odor. We did not buy any of the pastries or cookies but even those looked very dark as if they had baked for too long. We are eating the small $8.00 loaf - as penance for a bad purchase - but we will not be back. Other bakers offer more selections/options at lower prices with far better bread. This levain loaf is one of the worst tasting loaves I have ever bought. The smell and the coarse texture turned us both off. We are at-home bread bakers and bread lovers. The burned smell and taste persists as a reminder of why we should have just walked out of the store without making a purchase. Caveat emptor! Let the buyer beware. read more

Boulted Bread is one of the truly special places in DTR, and in the Triangle in general. Honestly, BB may be on the short list of top 3 bakeries I have ever been to. If a pastry is what you are after, please love yourself enough to venture over to the beautiful Boylan Heights neighborhood and gift your soul something from their display counter. I've had everything from the quiche to the bialys to the croissants to the scones to the eye rollingly indulgent morning buns and have never been disappointed. The place is small and often busy (with lines at times out the door), but I have never had trouble getting a parking spot and the staff knows how to handle the line quickly. They have a board in the entryway with a baking schedule so you know what breads to expect to be available at different times of the day. The pastries are really the strong point of this place. If it's buttery, or flaky, it is going to be excellent. The quiche is excellent, croissants delectable, but my favorite by far is the gooey flaky crispy morning bun with its subtle hint of orange zest. FYI: oftentimes they sell out of their pastries before closing time. Their stuff is good! So if you want a selection I suggest planning a visit with a sufficient buffer before closing time (still a good selection at 1PM on a Sunday). The breads are also very special because they have a custom mill and use local heirloom grains. They always have a sample plate out to munch on while you order. All that being said, while the breads are of excellent quality they are at times a bit rustic and coarse/dense for my taste. Also, they don't have a slicer so it is very difficult to cut their very dense bread. I tend to prefer a squishier/lighter/easier-to-slice bread for sandwiches. All in all, this is the first place I think of when I want a special treat, especially when I've got a visitor I want to impress. read more

As a bakery this place is DELICIOUS! I've only had a couple of their pastries, but I love their ham and cheese croissant....the croissant couldn't be more flaky! The indoor and outdoor seating is nice to grab a coffee as well. Although, their coffee was a bit disappointing...had that slight burnt flavor that those who love Starbucks might appreciate. It had a perfect golden crust and didn't even need butter! Five stars for: morning bun, fruit bread pudding, custard bite (size of mini brownies from Whole Foods). I wish I could remember what the custard bite was called because it was delicious. The custard was nice and creamy and there was enough to have in every single bite. If you take big bites, this would likely be 1.5 bites. With things this good, I don't take baby sized bites, but I try to make the deliciousness last as long as possible. The morning bun was a great balance of sugar, cinnamon and citrus. This is messy because sugar crystals are falling everywhere. The bread pudding had strawberry and some other elements in it that I can't remember (sorry); I found this to be a great breakfast treat too. It was a little dense, but doesn't sit in your stomach. Delicious. I also bought a plain croissant and the ham/cheese croissant. The croissants are super flaky, which makes this super messy. If you saw my shirt and the table, you would think the croissant never made it into my mouth! I love croissants and I also love butter, SO, I love my croissants to be super buttery. Boulted's version is not super buttery, but they are good, and they're decently sized. The ham/cheese croissant was too salty for my liking. Despite my pickiness for croissants, Boulted is a great place to load up on carbs. read more

This is an amazing bakery located a little outside of downtown Raleigh. There's parking on the side and on the road. Once you park, you'll see a cute mural on the side of the building with the words boulted on one side and bread on the other. When you go in, you'll notice it's a cute, small, and cozy place to have a good strong coffee and piece of pastry. There is not a lot of pastries but the ones they offer are delicious and well made. They also have different types of breads to take home. I took home a baguette and it's delicious with the perfect crunch. I come here whenever I need bread to take home. read more
