A high end chocolate retailer near me!? Yes please! After finding out about Chocolate Man, I…read moredecided to hold a couverture tasting session with some friends and went to Chocolate Man as my first stop. This shop, located right under Third Place Commons, smells heavenly. The rich aroma of melted chocolate seeps out of the store throughout what seems to be the entire mall. Chcoolate Man sells a wide variety of feves/disks, chocolate sculptures, truffles, confections - basically anything a chocolate lover could want. I especially love how they have smaller 1/2 pound bags instead of most high end shops that sell a minimum of 1 pound or 500g. It's great for someone who just wants a bit for tastings and for snacking on afterwards! They also have samples of everything to help decide. For our final tasting, we went with eight types of couverture (three from Chocolate Man) and four types of typical grocery store chocolate chips. Guittard Onyx 72% ($8.31 per half pound) - I tried this one but didn't buy it. This chocolate gives a really intense dark chocolate flavor. Very single note on my tongue. Think of a high quality dark chocolate blend, but amp up that flavor by 5x. It seems great for recipes that just need a really strong dark chocolate flavor without too much complexity. Felchlin Maracaibo 65% ($21.46 per half pound) - It starts off with a bit of a flowery and perfumy aroma, then descends into a very pleasing balanced acidity and smoothness, combined with a bit of a spiced flavor. It's an excellent snacking chip. My favorite of the entire array of 12. Ranked 1/12 Guittard Coucher du Soleil 72% ($9.70 per half pound) - Definitely a darker chocolate, less sweet with pleasing astringency, maybe a little smoky, smooth with some slight red fruit notes on the finish. It's a little strange because the taste between different chips varies a little, with some being more fruity than others. I'm not sure what the cause is. It's a good snacking chip that never gets tiresome to eat and it seems to be good for recipes that require a high quality chocolate that's generally neutral flavored with only slight complexity. Ranked 4/12 Valrhona Manjari 64% ($20.99 per half pound) - Starts with pleasing cocoa flavor but then a second or two later develops an intensely tangy berry flavor that spreads throughout the entire mouth. The flavor is so strong that I find it very difficult to eat more than one feve at a time. It's definitely more of a sipping chip than snacking. Ranked 5/12 Chocolate Man is a fantastic store for any chocolate lover. They even have a little stamp rewards card for freebies every $100 spent. I'll definitely be back for more in the future.

The first time we got a mixer, we finished it in one day ‍ German chocolate - this one is my favorite! I can eat this all day long! All 5 layers are amazing. The cake is pretty moist and the flavor comes through really well Mixed berry - this is my husband's fav. The top layer is berry compote. Goes well with chocolate in contrast. Caramel - this one probably we can skip. Too sweet for our taste buds. Also we are not really caramel fans, but if you like caramel and nuts probably good option. However, they were much sweeter than I prefer. Out of everything I tried, the double chocolate cake was my favorite because it had the richest flavor. My only complaint is the sweetness. I wish there were an option to make the frosting or cream less sweet, as that would have made the desserts much more enjoyable for my taste. Overall, it's a good spot if you have a sweet tooth and are looking for reasonably priced cakes.

Our wedding was last week and Christina absolutely delivered! We ordered basically everything on her menu including 2 types of cake (classic vanilla, chocolate with peanut butter and banana), brownies, lemon tarts, 2 types of galettes, cheesecake, and panna cotta with rainier cherry compote. Everything was a major hit! We are lucky our planners saved us a box with some of each or we probably wouldn't have gotten to try anything (and we thought we overordered). The favorite was definitely the panna cotta (although I also loved the lemon tarts and my husband the brownies). Christina was so helpful in planning how much we needed and was extremely flexible as we changed our minds. We couldn't have asked for a better baker for our special day.

When meeting for our tasting, we went with the more extravagant 8 flavor option as my husband is a chocolate fan but I am not...this was well worth the price as we got 8 mini cakes to try which meant plenty to take home and enjoy over the weekend! Christina won us over with her flavors and enthusiasm, she provided some off the menu suggestions for mixing and matching sponge and fillings which was awesome. Ultimately, we settled on a mix of a traditional wedding cake (we were so pleased to get more than one flavor choice), along with a smaller gluten free cake and a number of sweet treats to appeal to a wide range of dietary restrictions and palates. When it came to design, Christina was very attentive to our inspiration photos/vision but also mindful of our budget as sugar past dahlias are not easy or inexpensive! When we discussed incorporating our dogs, she had a vendor lined up to make figurines and took care of the ordering process once we provided her some photos. Ultimately, she knocked it out of the park both with appearance and taste! I am hopeful that she waives her fee minimum in the event we want a one tier anniversary cake (-:
