Bedega de Edgar is the perfect blend of old school and new ideas in em wine. This place really embodies hospitality and good wine to produce an unique and fun experience. Highly recommend you stop by and you will always leave happier than when you came by. Enjoy and be sure to save some Tempranillo for me. Cheers.

Metal art in west Paso tasting room (and name of one of their great red blends).

I recently visited the Bodega de Edgar tasting room in west Paso Robles and then a couple week later, the tasting room in east Paso. Both great ambience and friendly people (Marcel at the west location does a great job with the tasting - super knowledgeable and engaging.) The wines made by owner and winemaker Edgar Torres are primarily from Spanish varietals like Tempranillo, Garnacha, Carignan, and every wine I enjoyed very much. T Bodega de Edgar is definitely a winery to visit next time you're in Paso Robles. Great time, great people, great wine. Cheers!

Tasting rooms are a tough rate anywhere you go these days. Palates are so different and everyone has their own tastes. Some people go just for opulent trappings of the rooms and others for the reputation of the wines or winemaker. .Bodegas de Edgar falls squarely in the second camp and I'd go as far as saying if you don't like what Edgar Torres is doing up here in Paso, you're either crazy or you are just not a wine person :-) OK maybe that's too far but seriously though, Edgar and his unassuming tasting room right behind another winery off Adelaida rd might fool you into thinking that this guy can't cut it with all the "estate" wineries nearby that have the land and the bucks $. Well he can. With a capital C. We taste wine all over California and I can say without hesitation that Edgar's Spanish varietals and blends are some of my absolute favorites. I would list them but, essentially, everything on his tasting menu is excellent so you really can't go wrong. I would buy every bottle he makes if I could afford to. Beyond that this guy works hard and is a super down to earth individual. That may or may not mean anything to some folks but it does to me and frankly it's easier for me to give my money to Edgar who has worked his way up and works his A$$ off than it is to give is to someone who showed up with a truckload of cash, bought a bunch of land, hired consultants and still doesn't make as good a product as Edgar. Just my take and I'll step off the soapbox now. Beyond the rant let's just say if you like rich, luscious wines of any style you are doing yourself a huge favor by visiting Edgar Torres at Bodega de Edgar. Seriously.

One of the true hidden gems of Paso. The wines are really exceptional, with a unique focus on Spanish varietals. The tasting room has a modern industrial feel that's relaxing and inviting. We were there on a Monday, so Nassa really took the time to share stories of the winemaking process, from vineyard to bottle. Can't recommend Bodega de Edgar highly enough.

We're NorCal residents, and Sonoma County fans. While on our first ever trip to the Central Coast wine country, we were a bit disappointed to find that a number of the Paso Robles wineries were Big Fancy Expensive Grounds places, and the price points for (admittedly good) wine quite a bit higher than the garagey places we love up north. After talking to the guy at Alta Colina (which was small and lovely), he directed us to the teeny tiny Bodega de Edgar up the road, and I'm really grateful for the recommendation. No pricey landscaping or merch - just good wine, from a small, family-type business. We tried some delicious Spanish varietals and chatted with the delightful Marcel for quite some time, tasting Albariño and Tempranillo blends, and even some delicious hard cider (!). Went home with six bottles of deliciousness and a happy feeling. PS: Marcel, look what we found at Firestone!

Wife and I enjoyed a tasting at this winery. Enjoyed the grounds, education and, most importantly, the wine. I will be back. Thank you!

It's 16,000 square feet of underground tunnels. As one of the few spots offering complimentary tastings to our complete surprise! This winery is a hidden gem. We loved the selection so much we had to pick up a few bottles for home! Overall Great wines, beautiful views & amazing service! Definitely going back!

By the end, pretty much everyone in our group had found a wine they wanted to take home--including the ones who swore they weren't buying anything. Dennis, our Tasting Room Host, made the experience. He was warm, very knowledgeable, and genuinely engaging with everyone--from the serious wine lovers to our six-year-old--while keeping things professional and elevated. The whole visit struck that rare balance: polished without feeling formal, refined without ever feeling rushed or "in-and-out." Dennis has been with Eberle since 2017, and you can feel how much he cares about the place. He spoke about the winery with such genuine pride, and as you look around the tasting room at the rows of award ribbons from years of vintages, it hits you--this is a place with real history behind it. That sense of legacy and care is woven into the whole experience. The historic wine caves are a must, the complimentary tasting felt generous and unhurried, and the grounds have that unmistakable Paso magic--rolling hills, big oaks, golden light, and room to breathe. We even crossed paths with Gary Eberle (founder, 1979) and his sweet black poodle, Vieto--one of those authentic, only-in-wine-country moments that sums up the welcoming spirit here. If you go, ask for Dennis--he turned our first visit into one we'll plan future trips around. Good to know before you visit: * Make a reservation--it gets busy * Don't skip the cave tour (you can even taste down there) * Large lawn & games--great for kids and mixed groups * Very dog-friendly * Private, romantic tastings available in the caves * Complimentary tastings + military discount available * Plan to stay a while...and bring your camera :)

Our first stop when we arrived in Paso. We've been to so many wineries, this would be one of our top 10. The spice pairing is unique but pairs so well with the wine. Buy 3 bottles to waive the fee. Since it's more of boutique, the bottles are quite pricey, mostly ranging near the 100s. But it was our favorite the whole weekend we went there. And we bought 6 bottles. We loved the spell and got 3 bottles of that! It's a Syrah cab blend. Has the Paso flavor that we love. It's not a vineyard, just a tasting room but worth a visit. We met the wine maker too. Friendly and attentive service. Can't wait to pop open a bottle at home soon!

They had a room set up in the back for us (it pays to make a reservation) and it was personalized with our name and it had a comfortable couch and other seating, with a beautiful tapestry on the wall. Our "guide" for today was Nyoka, and she was fabulous. I don't know if she was solely helping us or not; however, it sure seemed like it. She was really sweet, was so informative and just a pleasure to talk to. We did the tasting, and we also did the optional spice tasting for an additional $15. I would strongly encourage you to add in the spice tasting. It is definitely well worth it, and it goes with the wine tasting so well. Nyoka was very good at not only telling us about the wines; however, also telling us about the spices, history, growing conditions, the owners, and even the geography -- along with a map as a visual. She was truly a pleasure. We did end up buying three bottles to take home. These bottles are a little bit pricier than ones we usually buy. We usually fall in the $50 range and these were definitely in the $75 to $90 range for most of them; however, they were definitely good and likely premium. We had an excellent time, and would return again in the future.
