Blue Bonnet Barbecue in Waxahachie is pure Texas barbecue heaven. I ordered the sausage (jalapeño cheese and pepper), ribs, smoked turkey, coleslaw, and smoked beans with brisket -- and every single bite was a flavor bomb. The smoke was rich but not overpowering, the meat was tender and juicy, and the seasoning hit just right. Even the sides were standouts -- that coleslaw was crisp and fresh, and the smoked beans with brisket? Absolutely next level. The customer service was friendly, the environment was clean, and even though my first order was to-go, I couldn't stop thinking about it. In fact, on my way back to Round Rock the very next day, I made a detour just to grab more sausage and ribs. If you're on Highway 287 in Waxahachie heading east, do yourself a favor -- stop at Blue Bonnet Barbecue. It's not just a meal, it's a must-do experience.

Stopped at Bluebonnet BBQ on our way to Dallas after seeing it on TikTok--so glad we did! We got the 1-2-3 platter with brisket, turkey, and jalapeño cheese sausage. The brisket was incredibly tender, a distinguished smoke ring (and hands down probably the best we've had anywhere), the turkey was moist and flavorful, and the sausage had the perfect kick. Fried okra and mac & cheese were both solid sides. Great BBQ, friendly staff--definitely worth the stop and we will be back!

Solid four-star experience. I came in for lunch on a not-busy early Thursday afternoon, and I would've given this place five stars except that it took more than 10 minutes for the server to approach, and the fact that they have Wi-Fi but it doesn't work because the place has a metal roof, which kept me from having an actual working lunch. I couldn't even use my mobile hotspot. Besides that, though, my server was really friendly and efficient, and the food was very good. I got the stuffed baked potato (the Ella) w/ brisket; it was a little too finely chopped for me, but it was still really tasty. The potato was huge and came fully loaded. They sure weren't shy with the amount of brisket that was on this potato. I also got the stuffed sweet potato with smoked turkey to go, per my server's recommendation. The smoked turkey was really good when I had it for dinner later, but I kinda wish I'd gotten the brisket with that, too. Next time I come, I'll definitely try more of the meats, but that baked potato was calling my name today.

Started off a little weird, not busy inside, but we waited at least 5 minutes for the person at the front was helping someone on the phone and then a guy placing an order to go. We just wanted to be seated, no one else was there to help her. Once seated the server was great, just that initial delayed the process. We were heading to the airport and the one with us was also headed somewhere afterwards. 3 of us ordered sweet tea, my first taste, like crazy amounts of sugar. I had to dilute by adding 1/3 of the glass into a full glass of water and seems still too sweet. Like more than chicken express. The ribs were like spot on! Crazy tender great flavor, bite right off the bone. Brisket excellent smoke, nicely tender, not enough flavor for my taste, but nice bark, nicely moist. I'm not a fan of either of their BBQ sauces, too tangy for both styles. Pulled Pork was my wife's favorite nicely moist tender and good flavor. Excellent Jalapeno Sausage, tender with great flavor and heat with big pieces of cheese and sliced perfect size. Related to the sides, green beans were good, not too seasoned as they were for our 11 month old grandson. Fried okra had great flavor and fried perfectly. Really good corn or the cob. And also approved by our grandson. Onion rings were a little tough, very crunchy but that the way they do them. My son-in-law said his CFS was good, not the best he's had but good. I'd say Kim's most BBQ places. You can't please everyone and certainly they have so many things on the menu it's hard to do great at all of them. I was almost as excited to try the dessert as the BBQ, as I friend told me about this place and I had looked it up online ahead of time. The front board doesn't have all of the items. They do have several other things on the menu. Like Salads, and 3-4 more kinds of desserts. I'm a huge Bread Pudding enthusiast and this one not that impressive but the Cinnamon Roll Cheesecake could be completely worth the trip. I'd come back for sure .

I can't remember the servers name, but she was so sweet and accommodating!

Food was great! The tornado appetizers were my favorite, along the the pinto beans with brisket! Service was refreshingly excellent! No AT&T signal out there, but worth it!! lol

The food was everything I expected, and above. The burnt ends were so tender and flavorful. The torpedos were very tasty with the right amount of cream cheese and smoked meat inside of the bacon wrapped jalapeño. The chicken fried steak was meaty with the right amount of crust. The gravy had a nice flavor. The pops beans had chunks of brisket and they were packed with flavor. The onion rings were so crispy and the batter was seasoned well. The waitress that took care of us - Lexi - was very friendly and answered all of our questions. Very friendly and welcoming atmosphere.

Great BBQ!! We had the chopped bbq sandwich it was great lots of meat!! Potato salad and Mac n cheese was good too!!

This was such a charmingly rustic venue. I did have to go hunt down the hostess before we could be seated, as signs told us to wait but there was no one to be seen and I had been standing there awkwardly in the mostly empty restaurant for the better part of ten minutes. She seemed annoyed I had sought her out but was polite enough. Our waitress was much more friendly. The smoked queso was delicious, I got the two meat plate and was happy with everything on the plate. The brisket was sliced incorrectly, but it was still tender. The turkey was very good. The potato salad was nice and savory, which is my preference and the macaroni and cheese was nicely seasoned and not mushy, which I appreciated. Overall, an enjoyable meal!

Several years ago we stopped by and were not able to dine in due to a private event. No big deal and knew we would stop in again... Well it took a while but we did stop in again on Saturday and now I'm mad we haven't returned earlier. Simple BBQ joint, very nice inside and plenty of room. But all of that pales to just how good this place is! Wife had the stuffed Baked Potato (Turkey) and I ordered the Tacos off the appetizer menu. (3 toasted soft taco shells... 1 brisket, 1 pork, 1 sausage).... fixins on the side... Onion Rings and a piece of Key Lime Pie.... A sweet tea and Coke came to $42....... Located between Ennis and Waxahachie...... Definitely recommend giving Bluebonnet a try!

Had an evening meeting in Waxahachie so I looked for food ahead of time. What a nice surprise! I had never heard of this place. The servers were all extremely friendly and the food came out pretty quickly. The brisket and the mac and cheese were fantastic, but the star of the show was the black pepper sausage. Never had anything quite like it before, and it made me wish that I had ordered double. Will definitely be back for more of that black pepper.

It's hit and miss with the servers here, but the food is always delicious. They are often out or "sold out" of things.

The decor is very minimal, but one wall completely covered in customer signatures honestly adds a nice personal vibe to the place. Ordering happens at the register tucked into the back corner, so when there's a line it cuts right past some of the tables. Definitely close quarters while people are eating, but it somehow still fits the character of the place. The gentleman taking orders was friendly, just not overly talkative. The lady who brought our food out was very polite and welcoming though, which I appreciated. Overall, the service was okay. Our food took about 10-15 minutes to come out, which felt a little long considering it didn't appear very busy other than one larger party already seated when we arrived. To be fair, we couldn't see what was happening in the kitchen. The only real frustrating part was waiting close to another 10 minutes for a to-go container after asking a few times. As for the food, I'd say it landed somewhere in the average range for Texas BBQ. Nothing was outright bad, but nothing really blew me away either. I ordered the loaded baked potato topped with brisket, link, two pork ribs, all the traditional baked potato toppings, and their spicy BBQ sauce. First off, the potato itself was fantastic. Huge, perfectly tender, and honestly exactly what a baked potato should be. The toppings were fresh and plentiful -- butter, cheese, sour cream, bacon pieces -- and it could have stood on its own as a solid meal even before adding the meats. The brisket was over chopped, which personally isn't my favorite style at a BBQ joint. I usually feel like finely chopped brisket loses some of the texture and full smoke flavor you get from sliced or a coarse chopped brisket cut to order. It stayed moist, but I really didn't pick up much smoke flavor from it. The link was unfortunately overcooked and dried out. The casing had tightened around the meat, and even sliced up it just didn't have much juice left in it. The ribs were probably the weakest part for me. They were on the smaller side, dry, and pretty tough with the meat cooked down close to the bone. Now with all of that said, the seasoning on the meats was excellent. Bold flavor across everything, and the spicy BBQ sauce was absolutely on point. I just wish the meats themselves had a little more life and moisture to match how good the seasoning tasted. Overall, everything felt pretty average to slightly below average for me, especially by Texas BBQ standards. On the positive side, the prices were actually very reasonable considering how expensive meat has become these days. I'd still come back again because I'd like to try some of the meats individually and let them stand on their own without being loaded onto a baked potato. There's definitely flavor here -- I just think the execution was a little inconsistent during this visit.

Our society has long accepted that I am nothing short of Barbecue Jesus with standards higher than Mt. Everest. When I drive past the likes of Dickey's, their staff tremble at my mere presence within a few hundreds yard of their establishment. I have shut down subpar BBQ joints with just a glance. I have ruled DFW BBQ reviews with an iron fist that shows no mercy to any heathen who dares to dishonor the culinary masterpiece that is Texas BBQ. Nonetheless, I decided to take a few of my friends (very important dignitaries, Victoria's Secret super models and others who can't get enough of me) to Brisket City...and found this place to be an ABSOLUTE GEM. Their brisket is a solid 11/10... cooked perfectly, moist, proper smoke ring, the right bark and immaculate flavor--a rarity around here. Finding such BBQ in DFW let alone Ellis County is rare. I have decreed that this places makes my top two along with Hutchins in Frisco. I shared some gentle recommendations with their staff on considering non apple cider vinegar based sauce as an alternative, albeit inexpensive addition that would appeal to wider palettes but we all know that real men don't put sauce on their meat anyway so no points deducted there but felt it was important for me to advocate for the trans community and others who must have their sauces. I must now tend my other affairs, but leave you with my strongest endorsement of this proper smokehouse. It's worth the trip. Until next time...
