First time trying Ellis County BBQ and it was amazing! There were so many choices but decided to order appetizers only. Where to begin...the sampler platter had the best Twinkie's and ribs that I have ever tasted! Hit all the right notes: spicy, sweet, salty, fatty in a good way. Second to none were the brisket quesadillas, tacos and nachos. The brisket was juicy, tender with a nice smoky flavor. All the appetizers had that cravable qualities. We had pork bbq ribs and brisket w/onion straws & pinto beans - all was delicious. We arrived around 5:15 p.m. on a Saturday. If we go again, it will be for lunch during the week, not a weekend. The bar area was VERY loud. So loud that it was difficult having a conversation in the restaurant. The ladies room needed attention & the restaurant area needed sweeping. Finally tried after ownership change. 5pm-ish on a Thursday, ordered several appetizers (dine-in), then a couple lbs of Que to go. Onion straws amazing but a tad greasy, pinto beans need seasoning, and grilled bologna (all-a carte) was nothing special but jumped a level w/sauce. Pound each of brisket (requested bark) and pulled pork. The brisket was dry but tasty, and the pork was moist and above-average in flavor. Buttered buns add to the flavor. Ambiance unchanged from before -- even though I sat on the other side of the wall from the bar, the environment was very loud. My server was attentive and friendly. Overall, a decent yet pricey BBQ experience that more closely resembles a bar than a restaurant. read more

I've been in search of the best BBQ around and proud to point out places that know what they're doing even if it's not perfect. Well I'm impressed with this place. Ribs looked picture perfect, cooked perfectly, tender as can be, just needed some seasoning, more flavor. The brisket was awesome, cooked perfectly, perfect smoke ring, perfect texture, tender and great moisture and flavor. Jalapeño cheese sausage, awesome turkey. Great sides, excellent sweet potato fries, the best Mac and cheese at any bbq place. Fried okra is just ok. Great bbq sauce and the hope is you actually won't need it but want it because it good. Well I needed it for the ribs. I'm not sure what the exact story is with the check for Chris Kyles family but Chris was from this area and went to this school. They have a small tribute to him. Came here on a recommendation from a coworker, we arrived for lunch on a Sunday, to find out they're only open from 11am to 2pm on Sunday. We were seated promptly, the place was 80% full. The place is nicely decorated Texas cowboy style. We started with the fried pickles, they were served on a bed of lettuce (first time I seen this) it absorbs the oil, so it's a big plus, in addition, they are very lightly coated with breading, which was an additional plus. I ordered the two meat plate (sliced brisket and jalapeño cheddar sausage) with green beans and potato salad. My spouse got one meat (pork ribs) with cole slaw and sweet potato fries. The ribs were tender and meaty, nicely smoked. The jalapeño cheddar sausage was good, kudos for the choice of sausage. The brisket was dry, sadly I came here for the brisket, it needed a lot of bbq sauce. The potato salad was somewhere between potato salad and mashed potatoes, less chunky potato, more like whipped potatoes, maybe the potato was a little over cooked. The green beans were plain, found one tiny piece of meat in the whole serving, maybe brisket, maybe bacon, I couldn't tell. The cole slaw was very good, not overly sweet, crunchy slaw, enjoyed it, licked the bowl. The sweet potato fries were perfect, not overly oily, salty or overly sweet (like most restaurants serve them). They were cooked nice and crispy, ate them all. The menu prices are just right. I couldn't give you 5 stars, because of the brisket, maybe it was too lean, maybe been out of the smoker too long. One suggestion for the owner: The bbq sauce on the table is good and tasty, not overpowering, but what was missing was a spicy choice of sauce, we needed a little kick. We will be back read more

My wife and I split the 3 meat meal. We got brisket, sausage, and ribs. All 3 meats were decent. The brisket could use more seasoning and was more towards the dry side than it should be. All 3 were hot and mixed with the bbq sauce was good. The Mac and cheese was absolutely delicious. The okra was very good and I'm very critical of okra. The mashed potatoes were mashed garlic seasoned with potatoes...it was WAYYY over-seasoned and inedible...we took one bite each and left it but still got charged after telling them it was very bad. I think the waiter was playing hide-and-seek or distracted by the other waitresses...they would all disappear and you'd be left thirsty. Not a bad place...I'd give it another shot but with some small improvements they could be a lot better. read more

The brisket was so dry it took a minute to actually swallow it, the ribs were tender and fall off the bone but were bland and had no flavor, the jalapeño cheese sausage had good flavor but was cold. Nothing amazing. I work in the area and decided to try the spot for a change of pace. I didn't really smell a smell of smoke when I walked in. In my opinion that's a big thing for a bbq restaurant. No need to be overpowering but just a smell of hot fresh bbq. I ordered the hot link sandwich. Upside was a perfect toasted bun and really good fried okra. Hot links were good spice level but little to no smoke taste in them. Disappointed in that. Not high on my list to return. Service was okay. We didn't know it was there, but, my wife found out about it. So, today, we went for a late lunch. I tried the lean brisket and pulled pork along with fried okra and beans. The pulled pork was Devine, an easy five rating. The brisket was slightly dry but very good. The okra was good, near the top. The beans were fine. My wife got the turkey and ribs. She was okay with the turkey and liked the ribs. The potato salad was great even though I like it with more boiled eggs in it. The staff was great. We met the owners. Overall, this was a good experience and we wouldn't hesitate to return within a week or two. This time we're going to try to be there closer to lunchtime instead of early afternoon. read more

The service was horrible! We had our company dinner here and booked it weeks in advance and even prepaid. When we arrived they knew nothing about it, had we not had paid we 29 plates they wouldn't serve us. The on duty manager was rude and didn't want to help us. When we sat down we were not given bbq sauce or refills. I will say the waitresses helped as best they could. Only 23 people showed and they didn't want to give us a refund or the 6 to go plates that we already paid for. I will reiterate that the staff was nice but that manager very subpar and lack basic hospitality skills. I understand that a group this big was not communicated to you, but as a manager you have to pivot and make the most out of the situation. She failed to do so. read more

The beer was great, in a huge cold frosty mug. The second the waitress sat our food on the table, I knew it wasn't going to be good. The meat isn't truly smoked. Drove around back after we left because it tasted like it was done in a regular oven. No wood or smoker seen. The meat isn't bad, but not barbecue. The fries were shoestring fries that were no longer than 2-3 inches. The potato salad was good but not cold. Coleslaw also not cold and kinda dry but not horrible. Green beans looked reheated and out of a can. The Texas toast was small, dry, and no flavor. Paying $20 a plate for that was extremely disappointing. The restaurant also needs some upkeep. Dropped in for a little lunch and didn't know what to expect. I was promptly greeted and realized this is more of a sit down restaurant then the usual walk through line BBQ place. I don't typically do that for lunch as it usually takes longer but from start to finish they had me in and out in 32min which was awesome. I decided to go basic and get the burger and fries. The burger was quite large and due to the mix of meat had a great texture and was also cooked perfectly. The fries were typical but by no means bad. I had a chance to look over the menu and the cost of cut meat was actually very reasonable compared to some local competitors. The place was pretty busy but not too much so. Today I ordered a two meat plate with green beans and coleslaw. My two meats were ribs and chicken. The ribs were spareribs. They cooked perfectly. Did not fall off the bone but came directly off with such little pressure on the bite. The flavor was Smokey and did not need bbq sauce which was sitting on the table in a squirt bottle.
