Wow, what a gem of a place in Grand Junction. Close to the freeway, close to the airport and the airport hotels. The Can Can Pork Chop is probably the best bone-in pork chop ever! Not overdone and still pink inside. This results in a melt in your mouth pork chop. Almost bigger than a regular size rib eye, if you are trying to decide what to have and you want some meat to sink your choppers into, don't hesitate to get this pork chop. We also had the bruschetta pappardelle pasta. Just meh. Corn ribs - just meh, but this is a rarity on any menu that I would never pass up. French onion soup - just meh. Excellent food and excellent service. We showed up during happy hour and were seated right away. I always appreciate when a restaurant brings water right away, and they had it ready to go. They even brought a side of lemons in case we wanted it. The waitress was very attentive to our needs and made sure to check up on anything we asked about. We started with the chimichurri hummus, which was full of flavor and had some great dipping options. It came with pita bread, celery, and rainbow carrots. For my entree I ordered the seasonal fruit salad, covered in a variety of berries, cucumbers, and tomatoes. I asked for the house special vinaigrette and some salmon on top. The salmon was well prepared and the greens and berries tasted fresh! It came with these little cheese cups on the side which were incredible! Lot's of booth seating and very cozy. Ok, so on to the food! I got the 8oz Filet Mignon and the hubs got the 12oz Ribeye. Both were mouth watering and cooked to perfection! So with each entree you get one sharable side...which is super cool! We got a Caesar Salad and the Twice-Baked Mash (fully loaded)...YUM! We recently visited Blade & Bone for dinner. We were seated quickly and our server was friendly and helpful. Since the restaurant claims to be "ranch to table", we both ordered steaks. I chose the seasoned fries as a side, and a small salad. The salad was delicious, all of the ingredients were fresh. Both of our steaks were....average. They were cooked as requested, but were without flavor and underwhelming. My fries were slightly undercooked, but were tasty. If they had been properly prepared, they would have been excellent. We will return to try the restaurant again, as we may have just hit on a bad night. The ambiance was great, the staff was wonderful, but for a steak place, the steaks were average. When we walked in, we found out that the menu has been completely revamped. Steaks? Gone. Pork chops? Gone. The entrees have been reduced to ribs, salmon, and chicken. So, whatever the previous reviews said, forget it. A fair selection of apps (skip the chips and chili) and burgers. The ribs are baked, not smoked, with a mild sauce that had decent flavor. Casual dining with a tin ceiling. Steaks forward...but I really enjoyed the avocado special burger and the truffle fries. Thick and flavorful, toppings on the side. The fries were excellent but I would definitely melt the Parmesan with their heat. The tapas were fun. Great plating and sauces (4*) light and simple. Not Spanish style, but amazing for west slope. Tried the wild mushrooms and the mushroom soup and was happily surprised. A great test of a restaurant is the vegetarian dishes and I really like the topping with the phyllo. Wine and cocktail list was great, I liked the spicy hive. Truly spicy. The IPA was awesome. I think the kitchen is doing great things. I wish way more people were trying to achieve these standards. The service was attentive but a little uneven. I liked our server and host, definitely working hard in a dynamic environment. Just not quite up to the kitchen. We went on a Saturday night for dinner without a reservation and were seated right away, which we were a little nervous about initially. I like that the sides are all shareable, so you can get a bunch for the table. We had the potatoes au gratin & the twice baked mashed potatoes-- both of which were SO good. Like yum I want a gallon of those to take home please. The entrees are ala carte so you don't get any sides with them automatically. We got a steak & salmon. The steak was supposed to be medium well (I know that's gross to lots of people lol) but it came out definitely well done. I'd request it cooked medium next time. The salmon was INCREDIBLE. I wasn't sure what to expect because I had heard mixed reviews of this restaurant. I decided I had to try for myself. I was easily able to make a reservation on their website for my husband and I. We were immediately greeted and sat at our table by the friendly hostess. The restaurant looked nice, clean, and inviting. There's a good variety on the menu: Burgers, sandwiches, steak, and seafood. Some cocktails, not many options for wine by the glass but lots by the bottle. Our server brought us water, she let us know of their specials and took our order since we were ready. The Cherry Garcia spirit was a good sweet cocktail. Tasted just like the ice cream but in a delicious alcoholic drink! My husband had The Federalist, a Cabernet Sauvignon from central California. Our meals came with salad. The house-made croutons made a basic salad extra delicious. My husband likes jalapeños, so I ordered him a jalapeño tapa. He said it was really good with a sweet little sauce. Definitely better than your average jalapeño popper. My husband had the 12 oz ribeye cooked medium. I was iffy at first because it looked like a thin cut steak. I was pleasantly surprised by how perfectly cooked it was. Very tender and seasoned perfectly with an herby butter melted on top. We got truffle fries with it. They were not the best, but not bad enough to affect their 5 star rating. The fries were soggy, and smushed in this cup. Didn't taste very truffly. I ordered the seafood special, which was clams, mussels, shrimp, and salmon in a garlic herb broth served with some kind of bread. All the seafood was perfectly cooked and very flavorful. The bread was yummy dipped in the broth. It was so good, we ate every bite of our meal and had no room for dessert. Which is a bummer because they had good dessert options that sounded delightful, especially the peach crème brûlée. A new eatery in Grand Junction I just had to experience. Surprisingly no wait on a Saturday night which was nice. The ambiance was very nice with Ample seating with many booth and table options available. Indoor and outdoor is available. I loved the bacon wrapped tiger shrimp as an appetizer. I ordered the Can Can pork chop but it came very under cooked. After asking that it be reheated it took about 15 minutes to get it back. The ceaser salad was also quite bland. I thought it was supposed to have a dressing of some type? Maybe the issues with improper cooking and salad dressing will be resolved soon. The table next to us apparently has a very under cooked steak arrive at their table and they also had to send it back for a redo. read more

Made a reservation a week ago for Christmas Eve due to family coming into town. The process was easy. Got a text today from them saying that they cancelled the reservation due to closing early. They have completely changed the menu. There is not a single cut of steak on the new menu now besides prime rib. The drink menu has changed as well. The service is the same as before. That being said I was not impressed with my dish if it had been advertised as bruschetta with a basil olive oil sauce with a balsamic glaze it would have been accurate. To say it had a CACIO E PEPE sauce is simply miss leading as it had no Parmesan or black pepper in the sauce. There was a few shavings of Parmesan on the top. Came for lunch with my sister. I got the steak sandwich with the Caesar salad and my sister got the crackling burger with truffle fries. Everything was cooked well and tasted okay, but everything needed more salt. It made my sandwich have almost no flavor. Truffle fries needed more truffle. We've been here a few times and always enjoyed it. Food is fantastic without exception! My only complaint is the recent decision to remove a certain word from the menu - "shareable." That was one of the things that made the dining experience enjoyable and unique. Now it's kinda like every other restaurant in the area with great food. I miss the uniqueness that set it apart from the others. Sharing some appetizer "bites" and a huge pork chop with a shareable side dish made for a romantic and satisfying dining experience. They're not yet taking reservations yet so if you plan to go on a weekend, get there early. We had about a 30-45 minute wait, we sat by the bar and the hostess got us when table was ready. Appetizer/ shrimp cocktail, hummus & cheese and roasted bread. Out of this world. Our friend had the burger which was a good sized burger. The owners are the same as Goat n Clover and pour fellows. Rare date night! Loved the esthetics! It was strange to sit and eat while men literally walked in a line back and forth looking for plates to clean up! ( like soldiers is what we said at the time!) Can't ask for more because waitress is chumming with others out front, out of view. No crackers or bread with salad. Burnt, not blackened salmon. Cold mashed potatoes. When I called and made a reservation 2 weeks prior, the hostess asked if we were celebrating anything, and I told her it would be our one year anniversary, so I kinda expected for the server to mention it (as why else would they ask that?) but nope no mention of that so that was disappointing. When we walked in we got greeted immediately by 2 hostess who walked us to our table. The noise level was low considering almost all of the other customers were over 40 (excluding one kid). The food is fantastic. We got a Palisade on tap beer and a glass of Sparking Carboy to start. The beer was alright (we were told that it had 5.6% alc while the wine had 12.6%, they definitely tasted like they had way more alcohol than what we were told) We would not order these again. To start off we got the Kesseri Cheese appetizer (it was lit on fire and drizzled with fresh lemon table side) we loved it! It was so good our favorite part of the cheese was the edges cause of how crispy it was compared to the middle. We also order a ceaser salad, 12oz New York strip w/blue cheese butter, smoked blue and black burger, both cookies to medium well template, and regular fries. The salad (I think it had anchovies in the dressing but couldn't take it at all. Maybe just a hint) was alright not much flavor so we added some fresh cracked pepper to it which helped. Usually one of my favorites. For context , 2 appetizers and shared burger runs about $50. Last night, onion soup (a favorite) was almost inedible. Bowl arrived with just enough to cover the bottom, onions were rough chopped, and crunchy. Broth was overly flavored with thyme. The whole mess was topped with soggy bread with no cheese. Yuck.
