Located in the mall in Bellevue, and many other locations even the Seattle airport, somewhat a staple for the Seattle area. They offer a variety of cheeses, my favorite being the aged cheddar. Their sandwiches are very yummy to. I like the Smoked Turkey & Cheese sandwich. My son likes their Mac & Cheese and my wife liked the Tuna Melt. This location was very busy the day I visited it, granted it is located in side the Mall. They have a variety of sandwich options along some soups and salad options. They even serve coffee.

I am usually not a fan of mac and cheese. But I love beecher's mac and cheese because the cheese they use isn't cheddar. I'm not exactly sure what type of cheese they use but it's super creamy and a little textured. I highly recommend the salmon mac and cheese! It makes me so happy when I eat it while it's hot. This beechers is located in the bellevue mall and there is some seating outside it

I am so glad they had a Beechers in the Bellevue Square mall located on the ground floor near Macy's. Not too long of a line and I got the 8oz cup of Mac n cheese and it was so creamy and savory. It was so good and hot.

Not sure if this is the correct location, but my first time in Washington and I stumbled upon this place at the airport. I ordered a cheese and turkey sandwich/panini. I was not expecting it to be so good, the cheese was one of the best I've ever had! It seems the sandwiches are prepared ahead of time then put on the press. Wish we had one in California, it was amazing!!

    Burnt kimchi melt.

They tell you it is going to take 8-10 minutes for your sandwich. Closer to 15 and I guess they need the extra time to burn it.

Wow, if you have a hankering for some amazing food, and you're at Bellevue Square Mall, you MUST try Beechers. They have amazing Mac and Cheese. Although it be in a mall, you have plenty of table space and plenty of tables . The line looks long but it goes quickly, to be honest. This place isn't just "mall food", trust me!

Stop by after I got a little hungry from walking around the mall. I ordered their world famous Mac and cheese and it was pretty delcious. Nice warm and gooey cheese. I enjoyed the pasta instead of the traditional. Pricey for a small bowl about $9, but it was worth it. They didn't have any soda only sparkling water and coconut water.

Why have I never heard of this? Or maybe I did but it went over my head. Anyway it is never too late to try the cheese at Beecher's. I really wanted to try the Mac and cheese, tomato soup and grilled cheese sandwich. Unfortunately I was not hungry when I was there and so I could only see others eat those items. Maybe next time when I am in Bellevue again. I did get their cheese though. I like how they have samples out there. I love the Flagship cheese. It is a bit nutty, sweet and savory all at once. It is also a bit crumbly when I cut into it. The nuttiness reminds me a little of Comte which is my all time favorite cheese from France. I googled more about the Flagship cheese and discovered you could also add it to Mac and cheese. So I did that. Added a bit of the cheese into a creamy sausage pasta I was making. It really elevated the dish. Superb! I wish I bought more of it now. Next time.

Fantastic cheese all around from the signature mac and cheese to grilled cheeses. Staff here in the mall are pretty friendly and make the effort. My mac was packed to the top so I did appreciate that, even when the cup was full they tried adding a little more on top before sealing. World's Best Mac and Cheese - super cheesy, I love their classic cheese which is some type of cheddar. Using penne as the pasta is an interesting take as macaroni usually refers to the type of pasta. I liked it though and it reminds me of chicken alfredo, without the chicken obviously. Flagship Grilled Sandwich - an all around classic pressed freshly in front of you, the cheese pull with gooey cheese are amazing. You don't only taste the cheese though as the tomato and basil mesh together and have strong flavors that release with each bite. Ingredients are very pure. However, it's whole wheat bread instead of a classic like sourdough. This means the taste won't be as refined altogether, but I do think sandwiches here are a strong balance of taste and "healthiness," to an extent.

Love the cheese pull This is the grilled cheese with tomato/basil (I forgot what it's called. Flagship?)

Exactly what I want when I want grilled cheese! (Except when I want the wonderbread+Kraft singles version, which I'm sure others will insist doesn't count as a grilled cheese.) Their cheese is tangy and stretchy and salty and flavorful. Their bread is textured and crunchy and soft. It is all delicious. It's also not that expensive, with the grilled cheeses varying from $10-$13. I'll be back next time I have a cheese craving at the mall for sure.

The turkey grilled cheese was really flavorful. The tomato soup was very bland no crackers. Got to eat it with croutons. The service was so slow like we have to wait 25 minutes for a grilled cheese. Got one employee working the grill. She's got 30 tickets all laid out. They just keep taking orders. Just keep burying it piling more dirt on the hole that they've already dug instead of like holding up. Put people over there to help her

I love Beecher's, their cheese and the mac cheese. Visiting this location of Beecher's was happy to see more options, we got the Mariachi Mac & Cheese, and Tuna Melt. We loved Mariachi Mac & Cheese so much, we got another 8oz to go. I loved the spicy kick the mac & cheese had. Tuna Melt was great, loved that it was grilled well.

Cheese is a dairy product made by fermenting milk and draining off the excess liquid. Depending on the style, cheese can range in flavor from mild and sweet to savory and nutty to funky and pungent. It can be soft and spreadable, creamy and smooth, or firm and crumbly. It's been enjoyed in cultures around the world for thousands of years, and today, cheesemaking takes place on every continent except Antarctica. In Seattle's Pike Place Market, visitors to Beecher's Handmade Cheese have a cheese lover's dream come true. They watched a glass-walled cheesemaking kitchen firsthand on the crafting of their signature favorite, Flagship cheese, as well as many of the other award-winning cheeses when my partner, his family, and I visited in July. To our surprise, there was no wait when we arrived, which was unexpected given how popular this place is. Bite sizes of Flagship and Marco Polo cheese were available for samplings. From the very first bite, we were hooked by its rich, creamy texture and perfectly balanced flavors. While there is no dine-in option, it's strictly a pickup spot. Surrounded by the lively buzz of locals and tourists, visiting this establishment feels like a quintessential Seattle moment.

But the lunch omakase special is what I really wanted I think. But even so. The poke bowl was mixed. I even had a clump that looked like it was the burnt part from leaving it on the cooker for too long and it couldn't bite it. I know this place is for the fish, but there's a bare minimum expectation on rice quality. And the fish itself was good? Maybe cuz it's the poke and not the omakase (so mixed chopped pieces) but there were pieces that tasted super fresh and delicious and then there were pieces that had so much tendon I couldn't bite through it.
