    The back patio "bubble tents"

    Lovely back patio with "bubble tents" and amazing food, perfect for a family night out. The shrimp cakes were a special treat, along with the drunken noodles. Legit Thai-level spices. I enjoy spicy food, but at Bee's I generally top out at 3 out of 5 on their scale. I occasionally venture to level 4 but have never been brave enough to try level 5.

    Thumbs up! I'd heard great things about their food truck for years and now they have a brick-and-mortar establishment. We tried and enjoyed the "Bus Stop Chicken" and fresh rolls -- the photo is after we ate half the rolls. :) If you'd like to support a new local eatery, give them a try!

    We tried the food truck for snacks at a brewery in Erie. It wasn't terribly over priced but the portions are small and mediocre. The pot stickers are probably frozen out of a bag? It's hard to say but $6 for 4 was rough wherever they came from. The veggie summer rolls were handmade but didn't seem rolled particularly fresh. Unwrapping them from the Saran Wrap made the rice paper split. The filling was 90% mixed lettuce with a little basil and apples? Please fix your menu board. Children filled potstickers is probably misprinted as chicken but I really rolled the dice ordering today. All jokes aside it was a mediocre experience and it felt phoned in.

    Oh wow!!! Truly Thai Hot!!! Beware!! This food truck sits at a brewery around the SE corner of 287 and Baseline Wednesday and most Thursdays. They also sit in front The East Simpson coffee place some Thursday's. Not sure what all hours they have but check their Facebook page. The truck is amazing. It's all purple with Asian inspired designs. It was too dark for pics sadly but I'll get them next time. We happened upon it quite by accident and decided to give them a try. We ordered eggplant with chicken, pad prig khing with beef, chicken egg rolls and Thai Taro custard with sticky rice. Egg rolls-super light n crispy, very fresh and delicious with the plumb sauce. They were very oily. The Pad Prig Khing is super fresh, meat was tender and flavorful and level 4 was definitely hot hot. We eat Thai hot all the time. This place gives it to you with slap in your mouth. Eggplant w chicken. Omgosh I freakin love it!!! Also level 4 also hot hot but I love that. The chicken was so tender not rubbery like so many other Asian places. Veggies are so fresh and cooked tender/crisp just the way I like them. My only tiny little critique is the Thai Taro Custard. It's way too sweet for my taste. If they could just cut the sugar in half it would be perfect!!! We will be back!!

    Pretty good food but the smallest portion of Thai food we've had (food truck or not). overpriced.

Boulder has a lot of ordinances regarding these endeavors and rightly so in many ways. Pearl Street can not be clogged with trucks and the local businesses who have set up on the Mall at exorbitant rental rates need to have a fair chance to survive. But there is a lot of potential in the business parks and other locations the city is considering. The food from this truck might convince the powers that be! The thing that makes this truck easy to access and not just a random encounter is the incredibly detailed schedule and location calendar on their website. Do check it out and see if they will be near you. Not only are they doing lunch at business parks but they are venturing out to many breweries and events in the evenings, some well outside of Boulder. The lack of this has been the failing of several well liked trucks that I have tried to find in the past. An accurate and reliable calendar is a must. On to the food. I really wanted a savory crepe for lunch since they are not easy to come by in a casual lunch in Boulder any more. Today's crepe was ham, cheese and spinach. The crepe was freshly made to order, all of the ingredients were fresh, tasty and hot and melty, the crepe itself, perfectly browned but not tough or burned. Finding that point between under and over cooked is something I care about. This was just perfect. Wrapped in a traditional easy to hold paper wrapper, full enough to satisfy, but not drippy or messy to eat. The price was $10, but that included the tax, so I think it was fair for the serving. There was a simple dessert crepe for $7. They have several drinks available, all good choices with french food, several flavored Pelllegrino varieties, Perrier, and Mexican Coke. The most popular item being ordered by people in line today was the Croque Madame, a pretty big meal for a lunch for me, but I will find the truck on a day when I am super hungry and give it a try. They've made constant improvements to make the patio more attractive (they even added a covered area for cold or rainy days.) I figured they had to do something right to attract enough customers for their breakfast burritos in order to buy a truck. I am so glad I finally visited El Mercado to try their breakfast burrito. It was by far the best I've had for a very long time. I actually had given up finding a very good one in Colorado. I had the chorizo, and my husband the bacon one. That burrito was so moist it melted in my mouth, it was the perfect balance of cheese (lots of it I assume), chorizo and whatever else they put in it. A sign also says that they now offer breakfast burritos all day. Sitting at a table next to us was someone raving about his tamale (he told me they have added a new one to the menu and it is the best- $2 each, blue sign on the window). They seem to do a good business with people ordering to go, a lot of them regulars and I totally understand why. I will be going back to try their lunch menu soon!!!

It does get slammed at perdictable times and sometimes random week days so its best to call it in ahead of time and save yourself some a lil waiting.
