Came for lunch with some friends. Clean restaurant and friendly staff. I ordered the lone star which is one meet plus two sides. I got the brisket, Mac and cheese and fried okra with a drink. Around $15. The brisket was sliced right in front of you and was fresh. I had to wait on my okra cause that's as made to order and brought to the table. The brisket was so tender. It flaked with a plastic fork. My piece was extra fatty, but there's no ding for that. I took a star because I wasn't crazy about the sides. The okra was fresh but had no seasoning at all. So the slab could be 1.5 pounds or it could be 2.5 pounds. I was happy with everything. It's hard to find good BBQ around here and honestly I was ready to give up. I have two consistent complaints for this popular BBQ place. First when you order their brisket or pulled pork there seems to be no attempt to remove the FAT before they weigh the meat unless you ask them to do so. I don't want to pay for lots of fat and be disappointed. Happens often unless you make the request. Second complaint is how often they run out of brisket or other popular items. I wanted to check this place out and it was worth a shot! Southern vibes inside, cool decor with book signings by different authors and events. Easy parking outside, located in a plaza. Food was made fresh. I waited about 15 minutes for it, and was told my order would take some time before I ordered it so the wait was fine. Other orders came out quick and fast. This is the kind of place you want to tell everyone about but also not because it is SO GOOD you don't want to share We came in at 7:30, half an hour before closing and they were out of a bunch of things but we got a pulled pork sandwich, brisket (the best we've ever had), beans, coleslaw, potato salad, Mac and cheese and fries and hot damn it was all so good. We even went back to get 2 more sides of Mac and cheese. (It may have been my favorite Mac and cheese ever. Even our very picky 10 year old loved it). The sauce is sweet and smokey (reminiscent of Sonny's in Florida) and the brisket literally fell apart it was so juicy and tender and the bark was wildly crispy but didn't taste burned. The service was beyond stellar- these guys were so nice and friendly even though we came in close to closing time and they seemed genuinely into being there despite it being late. I probably should have waited since I was going to eat there anyway, but I was so hungry I decided not to. My choice of meat were the brisket, chicken and pork ribs. For my sides, I got the mac n cheese, fried pickles, potato salad, and cowboy chili. Their brisket was one of the best I've had so far. It was super tender and fatty. Almost melts in your mouth, that type of sensation. The bbq pork ribs were also super tender. They fell off the bone as soon as I picked the meat off it. The chicken was my least favorite only because it was on the dry side (hence why I should've waited for the sausage). All the sides were yummy, especially their chili. The staff was super friendly and helpful. Was excited to try this place as I am constantly looking for great (or even halfway decent) bbq in the Pacific Northwest. This place was alright but not the greatest. The brisket was good but not great. I asked for the fatty part of the brisket and they basically just gave me the burnt end so it was a little bit on the dry side and difficult to cut/eat. It was seasoned well though and had good smoky flavor. The pork ribs on the other hand were a disappointment. No smoke flavor at all on the ribs, basically just tasted like a braised/baked rib. Needed bbq sauce since there was no smoke taste or dry rub taste other than some pepper on top. The ribs were not dry and somewhat tender but in a soggy type of way. The okra was fried fresh to order which was nice. Service was friendly and nice. Restaurant had plenty of seating when I came at 11:15am on a Saturday, line wasn't long and probably under ten minutes. This is not bbq I would go out of my way for, but if I was in the neighborhood and needed lunch, I would probably stop by. read more

So a veteran from Texas opens a bar-b-q restaurant in Washington state (where they are just about nonexistent) and a star is born.
