From the moment we were seated, we knew we were in for a treat when our server welcomed us with a complimentary round of Prosecco. We started with Filthy Memento Mori Martinis and Rebecca's Margherita, along with the Crispy Rhode Island Calamari served with cherry peppers, spicy remoulade, and passata. It was a terrific way to kick off the meal. Next came Caesar salads to share, followed by two of Ospi's signature pastas: the Spicy Rigatoni alla Vodka and the Sweet Corn Agnolotti with sweet corn fonduta, basil oil, corn brodo, and Grana Padano. Both dishes more than lived up to their reputation. Even though we were happily full, we couldn't resist sharing a brownie topped with vanilla ice cream and chocolate sauce to finish the evening. From the outstanding food and attentive service to the fun, energetic atmosphere, Ospi delivered a memorable dining experience. Back to the experience... We were promptly seated, I ordered a glass of 'Super Tuscan' red wine, she ordered a 'Rebecca's Margarita'. The wine was good, the margarita fantastic. We ordered an appetizer of whipped ricotta, followed by entrees "Tonarelli" (cacio e Pepe) and Lasagna. Flavorful. Service was prompt, friendly, conversational. Water glasses never reached empty. Food arrived in an appropriate time. The decor is cool. pasta being made in one corner of the dining room. One wish would be to see a side salad added to the menu. It would have made the meal perfect. Give Ospi a try. We will be back.

Apparently, that was information I was NOT supposed to know. When our server arrived, she handed us the regular menus. No mention whatsoever that a prix fixe menu even existed. For a few panicked seconds I thought I had somehow mixed up the days and missed it. (It's offered Monday through Thursday.) I had to specifically ask her for the prix fix menus (the disappointment on her face was palpable- meaning less tip) Honestly...why is it a secret? - And this the biggest reason that I deleted 1 star, and almost deleted 2 stars, thank goodness the guy who makes the pasta is on the ball!!! If you're offering a prix fixe menu, hand diners the menu!!! Or at least ask, "Are you interested in our prix fixe tonight?" It felt VERY DECEPTIVE (bait and switch really!), like maybe if enough people don't know about it they'll just order off the regular menu instead. Don't make me feel like I'm asking for the secret menu at In-N-Out. (OR, if it must be kept secret, then have it as an option on the RESY reservation) As a former New Yorker and someone who follows "it" restaurants, I've wanted to try Carbone since it opened here in Dallas a few years ago. Only recently did I even know Carbone VINO existed and that it was an adjoining restaurant in the same building that offered the Prix fix - I thought there was only ONE Carbone, and I'm glad I did the research, bc had I made a reservation at Carbone (original) expecting the prix fixe I don't know what I would have done (would I have asked to switch dining rooms?, maybe?, but AWK-WARD...), and I am 1000% positive that happens to people all the time!! The restaurant does a fair job trying to create an intimate Italian atmosphere, but at the end of the day it's still inside a giant warehouse in the Dallas Design District. We had a 6:15 reservation and were seated at a table for four in a virtually empty "dining room"...right next to the registers, the water station, and the bocce court, sandwiched between the makeshift "hedge" separating Carbone from Carbone Vino and the giant garage-style doors. (See my photo.) - This was NOT a great seating option and should be eliminated, as I can;t imagine this place is ever packed enough that they even need this table. Meanwhile, there were plenty of cozy tables sitting empty just 20 feet away by the bar. They were still empty when we left an hour and a half later. I probably should have asked to move, but I honestly assumed the restaurant would fill up around us....but It never did. One more odd observation: our antique wooden table had that permanent old-table stickiness where your napkin sort of glues itself to the surface. Not dirty. Just...vintage sticky. Now for the important part: the food. For $60 per person the prix fixe - We split the Caesar salad, sweet and sour meatballs, spicy rigatoni vodka (obviously), and tartufo tortelloni. Desserts were the cheesecake and the cannoli sundae. The bread service included excellent bread, mortadella, and pickled vegetables. I had mistakenly expected the famous Parmesan wheel and a bigger assortment of breads, but maybe that's exclusive to the original Carbone. (just over the hedge!) I still would have appreciated some butter or olive oil. The Caesar salad was good, although I found the famous croutons a little greasy. The meatballs had a thicker crust than I expected and ended up being my least favorite dish. Then the pasta arrived - Now I understood the hype. Both pastas were phenomenal. The spicy rigatoni absolutely deserves its reputation. The pasta itself had the perfect chew, and somehow every bite tasted even better than the last. The tartufo tortelloni was equally outstanding, the ricotta filling was so fresh and perfect. Dessert finished things on a good note too. The menu said guava cheesecake, but ours was strawberry instead, which I actually preferred. The cannoli sundae was fantastic, and the ice cream had this wonderfully chewy texture that made it Kinda different ... The bathrooms were beautiful, and service was efficient, although it felt a little tooo polished to the point of being almost scripted. Overall, I'm glad I finally went. The appetizers were just okay, the seating was baffling, and I still think hiding the prix fixe menu is a NEARLY CRIMINAL. But those pastas? Worth every bit of the hype. One last piece of advice: if you're going Monday through Thursday, ASK FOR THE PRIX FIXE MENU. Apparently, they aren't going to volunteer that information.

The sauce they pour on it is good but I would love crispier breading. Next, the meatballs and it was just your average meatball but still good! The star of the show is of course the spicy rigatoni. The Caesar salad they make at your table is delicious and I loved watching it being made though I'm not sure it's worth the price. We both loved our drinks, I especially loved the aperol spritz as it was light and delicious.
