Holy moly this was soooo good. We came with a group of 6 and this was the move because we were able to try a bunch of stuff. I love how big this space is and how nice it looks. Also, love the employees. Everyone was so nice serving us and genuinely seemed happy to be there. Extremely attentive and nice!! Moving to the food--we ordered: - bone in rib (so soft literally fell off the bone) - beef brisket (delicious) - whole hog (this was one of my favorites, the skin is incredibly crispy and the sauce provided is also so good) - chicharron - smoked carnitas (comes in a taco form on a plantain base) - longaniza sausage The carnitas sausage we got to try a little bit was also so juicy and good. For sides: - Cole slaw (delicious and very much needed) - Mac n cheese (also soo good) - beans (this surprised me the most bc I don't even like beans but the flavor was soooo good) - plantains (these were sooo good, perfectly caramelized and charred) - rice (solid but nothing mind blowing) - cornbread (this surprisingly was collectively our least favorite thing, it was on the dryer side) I'm already thinking about going back!!! NYC, specifically Brooklyn, is now a destination where I expect people will travel great distances for the Bark Bones. Bark Barbecue is what I would consider as the lone representative of the Fourth generation of barbecue in NYC. The first generation was Dallas and Virgil's; the second generation was Dinosaur, Hill Country and a few others; the third generation has been John Brown, Fette Sau, Mighty Quinn, and several others branching off into Puerto Rican and Korean barbecue. Now we have Ruben and Bark elevating the barbecue game in NYC into the fourth and finest era with Dominican and Texas influences with a touch of North Carolina. Bark and Ruben have not only changed the game, but broken the game, broken it wide open. BBQ connoisseurs will take note and be very satisfied, regardless of their Southern or Midwest/Texas origins. I have wanted to come to Bark for a while. Watch the YouTube videos and you'll understand the story of how hard Ruben worked to produce what you see at this new flagship Bark operation in Bushwick. By the way, shout out to Bushwick and the various places here serving up a variety of genres. Back to Ruben. He has come a long way in life and in honing his craft in serving up the best barbecue you can find in NYC by a long margin, with a seminal moment when he came out to his family and friends with a backyard barbecue featuring his brisket, the culmination of a lot of trial and error for the self-taught barbecue pit master. Ruben doesn't need to talk about and promote his barbecue these days. He lets the barbecue speak up and bark for itself. Today, I worked early on a Saturday morning so I could come in here and see and taste for myself. I ordered a lot of food to take home, including the giant beef ribs available weekends only, but ordered the brisket and chicharron sandwich and a lager to have on premises. This will be a two and, perhaps for the first time, a three part review. The brisket and chicharron sandwich let me know the rest of the review will be very promising. It's a substantial sandwich served on a great bun with pickled veggies and onions, offering a bright and acidic contrast to the savory and well chopped mix of the brisket and chicharron. The chopped mix is almost a fine chop, but restrained enough to allow the chicharron crispy cracklings to spark every bite. Every bite has that smoked brisket offer its savory background and foundation upon which that chicharron rides with crispy crunchy crackling and pickled accents. I fortunately took a picture before I devoured it. You'll also note the brisket bark gives this sandwich a seasoned note that occurs to you from the first bite and the sandwich needs no sauce of any sort. You eventually understand that seasoned taste is from the brisket bark, but it's more subtle than the crackling and pickled accents. I will cover more in subsequent sections of this review, which may be three parts owing to the ground that needs to be covered here at Bark. I give the brisket and chicharron sandwich a 4.2, which is high praises for anyone who reads my reviews. I don't hand out stars or grade on a curve. This is excellent barbecue and Ruben and Bark have broken the barbecue game wide open and put NYC on the barbecue map. read more

What a well run spot. The line is controlled at the door to not have it be so busy inside. Once you get in you form a line at the counter and start with your sides then directed forward to order your meats. The end of the counter leads to a water station and utensils. Tables are a free for all but plenty available especially with the crowd control. Workers constantly around to offer you more water, sauce, napkins and to go containers. Then they immediately clean up after you when done. High chairs available even for high tops. Bustling bar with a charismatic bartender. Prices are not cheap but the bbq is good and worth it. By far one of the BEST BBQ experiences I've ever had! Me and my girls stopped into Bark BBQ at their brand-new location on Thames St in Brooklyn after a pool day, and WOW! The Dominican flavors mixed with that smoky BBQ goodness were EVERYTHING. The cafeteria-style setup makes it easy to try a little of everything, and the line moved FAST! The space is big and spacious, perfect for families or large groups. The staff was also amazing and so attentive--they even made sure we had a table ready for us despite the line being out the door. I think this was even better than at Time-out market. All the small sides are $5, large sides $12. All the meat is by the half pound. If you want drinks you need to order at the bar. All the staff were super friendly and helpful as the line was INSANE. Don't sleep on their Mac and cheese. Music was loud but the playlist was mostly disco and definitely bop worthy while eating. The best barbecue that I've had in NYC. Let's start with the meats. To start, they allow you to order most meats by the quarter pound. Great if you want to eat in moderation or if you want to want try a variety without having to come a large group. We shared the wild hog, the beef rib, chicharron, and smoked carnitas. I think the hog is their signature item; I believe it's listed as Cerdo de la lena on the menu. A bit strange, but it's a must try for those that love roasted duck and Chinese style pork. The skin is ultra crispy. The meat is succulent. A perfect bite in my opinion. The priciest item is the beef rib. It's a colossal hunk sold by the rib. Great bark. On point smoke ring. Juicy and tender meat. Classic bbq done right. Smoked carnitas was served as an open faced patacon sandwich. Served on a flattened and crispy plantain and topped with a generous amount of bark sauce. The least conventional item that I'd expect at a barbecue restaurant. Nevertheless, it's up there as one of the best patacons that I've had. Last meat item was the chicharron. Probably the best chicharron that I've had. Everyone makes a crispy chicharron; however, most of them end up dry. This was the most tender chicharron that I've had, and it had a nice smoke ring to boot! I'd recommend getting at least a small amount of chicharron as it's easy to share and the best execution that I've seen. The meats were complimented by some outstanding sides. We shared the mac n cheese, the cole slaw, the queso frito, and the corn bread. Mac n cheese is gooey and creamy. It's as homey as it gets with the kicker that it's seasoned. Cole slaw is a great compliment to the bbq. Quite vinegary to add some acidity to counteract all the heavy meat. I'd definitely get the cold slaw or the pickled veggies with any meat order. Queso frito were on the sweet side as they were drizzled in honey which made for an interesting balance with all the savory items. Corn bread was also on the sweet side; it was the soft and fluffy style. The space is well thought out. It's huge and can accommodate groups of nearly any size. It's completely handicap accessible; I don't think there are any stairs in patron areas. There are five single occupancy restrooms with one being handicap accessible. They also have a baby changing table in the large restroom. They have three exterior sinks making it super easy to wash up before and after without needing to occupy a toilet. Full bar with beer, wine, and cocktails. They will have two beers from local craft brewery Talea on tap. Service at the counter was quick and helpful. Bus staff kept the dining area clean. This was one of the best southern bbq spots I have been to in NYC! I have been to Pig Beach and John Brown BBQ in queens where both were good but at times the meats were a little dry. I now realize it's probably because Bark has stolen all the juices! You watch them throw the meats on the cutting board and you see so much fat, juice, and grease just splash from the meat. You can automatically tell it's going to be so soft and they all did indeed melt in your mouth. Gotta try the whole hog and the brisket. Even the sides were all so good and unique in their own way. The beans have meat inside of it. The cornbread which was actually one of the drier items is slathered in some maple honey glaze. And everything else is self serve like the waters, plates, utensils, and to go containers. I've had a lot of barbecue food but NEVER have I ever had anything close to this spot! Let me start off by saying that there is plenty of seating and it is so cute inside. In the front of the restaurant are tons of authentic groceries and candy from DR on shelves in the window. Now onto the food- The meat is very high quality and they cook it to perfection. There's crunch where there's supposed to be crunch and it is still so juicy. The flavor profile is UNMATCHED! The sides are also out of this world. Please understand that you absolutely cannot go there without getting the beans! I promise you've never had beans like this in your life. I'm seriously impressed and that's a lot coming from me because I eat out at restaurants like it's my full time job! The whole team is exceptional! They are friendly and professional and well-versed on their menu. We came during a rush of people and we ended up having to wait longer than usual. We did not mind one bit and we were expecting it. They discounted our order and came and found us while we were eating to let us know. The fact that they had noticed and they went out of their way to reconcile it without us even complaining speaks volumes on the type of business they're running. Bark is such an amazing restaurant to dine in whenever you are feeling extremely hungry!! I discovered this restaurant through Instagram and have dined in 3 times with little to no complaints! The food I love, as well as the atmosphere created by the employees and staff. Despite the line being super long, I waited less than 20 minutes, which I honestly thought was pretty reasonable considering how popular this place is. The workers were also extremely sweet, helpful, ana accommodating, especially when it came to the communication throughout the night. What I usually order: Mac & cheese, 8.5/10 Rice, 7/10 Cornbread, 7/10 Brisket, 10/10 Chicken, 8/10 Meringue, drink 10/10. Everything was extremely yummy and well made! I will definitely be coming back again soon for the food and the overall atmosphere. My only concern was my interaction with who I assumed to be the manager, during my second visit. I saw distinct tattoos, with a hat and tends to be on and off the floor. I understand the restaurant was very busy and that someone needs to keep the line moving, but I felt rushed while I was still choosing my sides. My tray had already been taken by the workers, and when I wanted to double back to choose another side, I was told to move over and wait even though I wasn't finished. I noticed the manager repeatedly rushing and speaking quietly to employees while they were already working hard and providing great customer service, which made me and the couple behind me uncomfortable . Im a shift lead myself so it's always best to pull workers to the side to speak to them after their shift!
