Each taco down south also typically has two tortilla shells so that the toppings don't fall out and give the tacos more structural integrity. I think because they stack a nice amount of meat in each taco, doubling up on the tortilla shell would actually be a good idea (I found my taco fillings falling out every time I tried to take a bite).
