    Amazing experience here. Loved the tangerine martini and the Gin fizz. The ambiance is ridiculously nice. Pricey but worth it.

Listen up, you beautiful degenerates of Colorado -- if you're anywhere near Castle Rock and you DON'T drop everything to go to The Brinkerhoff, you're actively choosing a life of sadness and regret. This place is perched up there like a goddamn castle overlooking the kingdom, windows so meticulously clean I could see my future in them (and it was eating more ribeye). The views? ABSURD. I'm talking "postcard from heaven" levels of ridiculous. You'll be stuffing your face while staring at scenery that makes you question why you ever lived in a basement apartment. The ambiance inside is straight-up opulent too -- crystal chandeliers dripping like diamonds, stone walls, red leather booths, and that massive framed vintage Beech 18 airplane photo that hits different. Speaking of which... My best friend Rob took one look at that classic twin-prop Beech 18 on the wall and the hairs on his arms stood straight up. Turns out he actually flew one of those exact legends back in the day. There's a killer story behind it -- ask the staff about it, they'll hook you up with the full tale. Goosebumps guaranteed. This place doesn't just serve dinner; it triggers full-on life flashbacks. The food? ABSURDITY-INDUCING. I'm still recovering. * Spicy Hiramasa Roll -- TO. DIE. FOR. Spicy tuna, avocado, cucumber, and pure culinary sorcery. One bite and I ascended. I blacked out and woke up speaking fluent sushi. * Big Island Ribeye (16oz, soy-marinated) -- OUT. OF. THIS. WORLD. Juicy, flavorful, marinated in what I can only assume is liquid gold and unicorn tears. MUST GET. I would fight a bear for this steak. I would marry this steak. Hell, I'd let this steak ruin my credit score. * Chipotle Glazed Wagyu Short Ribs -- These bad boys were so awesome I almost proposed. Sweet, smoky, melt-in-your-mouth perfection that made me question every other rib I've ever had. They were basically foreplay for the main course. And don't even get me started on the STAFF. These legends deserve their own parade. Big shoutout to our waiter Larson -- the man dropped recommendations like they were bars in a rap battle. 10/10 service, zero notes. GM Lisa came in hot on the 4th of July, straight from the sister property Sierra, working like a boss and being the friendliest, most knowledgeable human alive. Absolute queen behavior. GM Heather rolled up, made sure everything was flawless, and then dropped restaurant history knowledge like a TED Talk. I felt cultured AND fed. And eternal props to Chloe & Keiley in reservations -- we showed up AN HOUR LATE like the chaotic gremlins we are, and they still saved our seats. That's not service, that's sorcery. This crew isn't just outstanding -- they're the Avengers of hospitality. Outstanding food + god-tier staff + Beech 18 nostalgia that gives your pilot buddy chills = I'm moving in. 10/10. 100/10. Infinity/10. It's a MUST-GO when you're in Castle Rock. Bring your appetite, bring your people, bring stretchy pants, and bring your best stories. The server took our order but never put it in so while our friends ate and drank we got nothing. Once we were able to track down the server, she blamed the kitchen which left a bad taste in my mouth (I'd prefer she just admit she forgot to put in the order) and when my friend's pizza came out 12-15 mins later, it was the wrong pizza altogether.     We visited Whiskey Lodge on Friday night after hearing there was a new owner. It had been a while…read moresince our last visit, so we were excited to check it out. The night started fun, but things quickly took a turn. From where we were sitting (not part of the group involved), I noticed a man becoming aggressive toward another nearby group--yelling at them and eventually shoving someone, which led to a fight. As someone simply watching it unfold, it was pretty clear who escalated the situation. What was most surprising, though, was how it was handled. The owner appeared to side with the individual who initiated the confrontation and ultimately removed the group instead. Later, we heard that the man involved was actually a friend of the owner. From an outside perspective, the group that was asked to leave seemed calm and was minding their business before things escalated. Watching everything unfold--and seeing how it was handled--left a really negative impression. Unfortunately, that experience made the environment feel uncomfortable and biased, which is disappointing because the night had started on such a positive note.

We almost always start with one of their Mojitos that feature fresh limes, mint leaves, and a variety of flavorings. Superbly crafted, these beverages always slake the thirst. We have ordered a variety of entrees including both plates and sandwiches. Our personal favorite is probably the lechon asado which is slow roasted pork shoulder in a garlic mojo that melts in your mouth. The palomilla tradicional is pan-seared NY strip pounded thin and served with sauteed onions and a piquant chimichurri. We also recommend the ropa vieja - shredded beef in a tomato-based creole. Their Sandwich Cubano is a go-to take on the classic Cuban Sammmie. Slow-roasted pork, ham, swiss, mustard, and pickles on pressed Cuban bread is a definite winner. Service is typically prompt and we prefer to sit outside if weather permits. The food here is exceptional and we highly recommend Cuba Cuba !
