In my years as a chef, I will tell you that there is only one piece of meat that is more tender than any other cut of meat from the cow and that is the tenderloin. What was served me was closer related to a tough cut or sirloin that tightened up so much when cooked, that every piece of meat I had to chew and chew to get past the grizzle.
