But as I was walking the isles I caught a view of one of those cheese steaks and wow...I could see it was prepared with a proper Amoroso roll too. Okay, I got to check this joint out and glad we did. We ordered a large to split with fries. Perhaps one of the best in the area. Roll was fresh and steak done just right with cheese and onions. They're using a New York-built wood-fired oven with a rotating turntable, so the pizza is constantly moving while it cooks, and you can taste the difference. The cheese melts evenly, the edges get that beautiful fire-kissed char, and the whole pie has that true fire-roasted flavor. The experience inside was just as good as the food. The restaurant is extremely clean, there's a ton of space (great for families or groups), and the staff was super friendly. They took time to talk with me and shared the Brandon location opened in 2018, and that they had to complete special training/certifications to even qualify to buy and operate that oven. You can tell it's a family-run business with real pride and passion behind what they're doing. Even the pizza box is a cool touch--nice branding and attention to detail.
