My favorite was probably the syrah and malbec, both had nice fruit aromas. The whites were alright, they were very short and lacked the body and crispness I typically enjoy with whites. THE FINAL BAMBOO: A wine tasting here was around $18 including tip. I do like how it's all Colorado fruit and definitely a must try if you're in the Boulder area.

The space has limited seating and was fairly empty during my visit, making it a nice spot to chill for a bit, though probably not for a long hangout.

It opened very recently and not just for the holiday season but to be available 7 days a week to walk up customers on the Mall. The distillery is to the east of downtown and needs a car to access. Not ideal for tourist and locals who frequent downtown, mostly on foot, whether you park in the area garages or use a bus to get here. We had wanted to try their product since I first heard of them several year ago and as my husband is a fan of imported single malts, we thought trying theirs would be a good comparison. He has a significant collection of rotating favorites, some of which I like and some I don't. We tasted several versions today, just doing free sips of several. There were other customers there too, but on a chilly day, not too many strolling around looking for things to do. We were greeted as soon as we came in as the single staff member balanced a series of customers. We were offered, but did not try, the various flights they serve in their little more private, seating area. But it looked like a nice option on a warmer more leisurely day. We tried their flagship American single malt, the port cask cured and the peated option. I also tried their bourbon as I like bourbon quite a bit. We did buy a bottle of their New American Single Malt. We plan to go back in better weather and try some of their other offerings. If you look at Vapor Distillery's website you can get a better view of the breadth of their products. The pricing was competitive for an American version of the imports we often buy.

The whole experience from beginning to end was more than I ever expected. This is the only company that does winery tours in Denver so that's a huge plus. They're a natural wine shop, I'd say on the artisanal and boutique side. The shop itself is absolutely gorgeous. It's like hanging out in someone's living room. They have a vinyl record player setup, two cozy chairs, hanging plants, etc. The vibes are on point and extremely cozy. Don't expect a big box store with an over-the-top selection, but rather a thoughtful and meticulously curated variety of rotating natural wines from around the world. And the best part is the owner Sarah, who will walk you through any question you may have. Expert recommendations and super knowledgeable of the wines on display. We ended up purchasing a Californian rosé and an Italian white. The added bonus of the day was in their refrigerator, which holds chilled bottles as well as a small assortment of craft beers. I found a beer from Ology Brewing in little old Tallahassee, FL, my old college stomping grounds. I bought the beer on the spot and it was delicious. Even if you know nothing about natural wine, Persona is the unpretentious place for you to start. And if you are a big consumer of natural wine, then I'm sure you'll nerd out over the intentional selection the owner has assembled. Really cool spot in Boulder. Check them out!
