So, I'm in the middle of my hunt for the best vegetarian pho in Columbus and this place was my second stop. I was a little weary as it's got a build your own set up, kind of like Chipotle and well, I'm not a huge fan of Chipotle, but anyways...I get to the counter and it was so easy to build a tasty bowl. I of course, got the vegetarian broth, noodles, and all the normal fixin's for a good pho. I also opted to try their marinated tofu. I've never had marinated tofu in pho before so this was new to me. My friend and I also shared their fresh vegetarian spring rolls with peanut sauce. The place is super bright and colorful with a good bit of seating. We grabbed our utensils, and sat down in a large booth to nom nom nom. I immediately identified that this place was better than the last pho place I visited simply because their vegetarian broth is on point. It's freakin' delicious! So much flavor and body to it, it just overwhelmed me in the best possible way. I didn't even need to add much to it, except for hot sauce, but I always add hot sauce. The tofu was also really good and had tons of flavors. I was honestly caught off guard by how yummy it was. The spring rolls weren't my favorite but the peanut sauce was really good. I like a thick sauce that really sticks to your rolls and this one did the trick. Very good! I think the part about the roll that made me not a huge fan was the texture of the tofu. It just rubbed me the wrong way. I have to admit, I came in with low expectations and left an extremely satisfied customer. I'll definitely be coming here again..and again and again. They have a variety of Bahn Mi sandwiches that are simply delicious. I love the vegetarian one, my husband swears the meatball Bahn Mi is nothing short of amazing. The service and employees are always nice and helpful, but if you're looking for true authentic pho, this isn't it. It's a great concept, I keep calling it Chipotle for Pho. Ugh. Update. Seems every time I go back something else is wrong. Seems they finally started making more vietnamese summer rolls for their side cooler. Every time I'd want some I was told they just ran out and I could wait for them to make more. I'll ask for a Bahn-Mi w/o jalapeños and it will have them. Minor complaint, but it's a small detail, which seems like this place can't keep up with. The "new" to-go pho prep is disappointing to the point where I just won't get it any more. I had been wanting to try Pho for a long time now. Finally my nephew talked me into going. I let the guy at the counter know I was a newbie and he immediately started helping walk me through the order process. He made it super easy to order what I wanted and went over all the options perfectly. I ordered a bowl of Pho with rice noodles, meatballs, some veggies and herbs in beef broth. Also got a couple egg rolls. The Pho was AMAZING!!! the boldness of the beef broth was very strong and flavorful. Took a trip to 6-1-PHO some delicious Vietnamese cuisine. Get to know 6-1-Pho and you'll be heading to Clintonville for some addicting Pho too. Speaking of, how do you say Pho - foe or fuh? I say foe but when I say it, I always know I'm saying it wrong so I autocorrect myself to say fuh. Curious if I'm the only one out there that sounds so silly when they say it. Vegetarian? You won't have any issue finding something at 6-1-Pho as there are vegetarian options for almost everything on the menu. 6-1-Pho is "Chipotle style" aka fast casual. Pretty sure the term "Chipotle style" no longer refers to the restaurant but a system of ordering. Therefore, Chipotle style is now like Jello or Kleenex or Xerox. Started with Goi Cuon - Summer rolls with pork, shrimp, vermicelli noodles, cucumber, lettuce, basil, cilantro and green onion rolled in a thin rice paper served with hoisin peanut sauce and Cha Gio - Egg rolls with shiitake mushrooms, carrots, cabbage and onion served with a side of sweet dipping sauce. Both yummy but sometimes the thin rice paper freaks me out so I'm not the biggest fan. Next up was the chicken Bahn-Mi - Soy marinated chicken, chili paste, pickled carrots and daikon, cucumbers, cilantro and a swipe of mayonnaise. Has a wonderful hint of sweetness to it. We also got the pork Bahn-Mi which was similar and my preference between the two. One of the peeps at the table got the Noodle Salad Bowl. This is a perfect summer dish as it's cold vermicelli noodles over a bed of lettuce, mint and cucumber with your choice of protein. served with a side of cucumber, pickled carrots and daikon, crushed peanuts, Thai basil, cilantro and a side of sweet dressing. We topped this with half chicken, half tofu. But when I go to a Pho restaurant I want Pho. So I ordered the Pho - Soup Bowl which has rice noodles with your choice of protein and broth. Served with a side of bean sprouts, Thai basil, cilantro, jalapeños and a slice of lime. I topped mine with raw steak which is obviously no longer raw because the broth is so hot that it instantly cooks the steak for the freshest meat possible. This is my ABSOLUTE FAVORITE! Couple of cool things I found out: 1. Every bowl is fresh, authentic, and homemade - every single time! 2. 6-1-Pho was started by husband and wife team Lisa Bui & Ian Capotosta. The dishes you eat at 6-1-Pho are Lisa's family recipes and have been perfected by Ian who is a trained chef with a degree in culinary arts. Talk about taking the family recipes up a notch. 3. May not be long before you can purchase their egg rolls to cook too cook and eat at home. Lastly, DO NOT skip the Cafe Sua Da especially if you're a sweet coffee lover like me. Other times when I ordered delivery or pickup, the noodles were undercooked and they barely gave me any meat. Their Thai tea is not freshly made, it is out of a can, and they did not specify that on Uber eats. I got the PHO bowl with bean sprouts and onions and for my protein I got the shreaded chicken and steak with beef broth my fiance got the PHO bowl with bean sprouts and cilantro with beef broth. I thoroughly enjoyed my meal they had Sriracha bottles close by and was able to put Sriracha on individual bites as not to mess with the beef broth my fiance enjoyed her Pho as well on one note that they put a little bit too much cilantro in and it kind of overpowered the broth little bit with a really robust cilantro flavor.they use the leaves attached to the stem with gives a big flavor so my only note would be if you want cilantro just ask for a little bit. 6-1-Pho is on rotation at our house. In the winter months, it was a great pick me up and in the spring/summer, it's just an easy go-to. We love the freshness of the Pho, the customer service, and the fact they can ensure our meal is gluten-free. We have always done take out so can't speak to dining in. read more

Overall the pho was pretty good. The broth was a little sweeter than what I prefer. From what I am told southern Vietnamese broth tends to be darker in color and sweeter than northern style so this may just be a personal preference. I got this via delivery (Uber eats) and it was packed very well, the Bahn mi was very good but I do wish there was more pickled veggies to put on the sub. I wish they had the summer rolls in the menu but I see it looks like they are bringing this back in 2022, my only suggestion was to either offer them in 1-2 increments instead of 3 as the price of 8 dollars may deter someone from getting especially if they just want 1 on the side :) read more

I didn't have high hopes at the start given that it seemed to be a trendy pop up but we gave it a try because they are one of the few places with vegetarian options. I was extremely surprised!!! I'm a chef and I've made TRADITIONAL pho many times. A friend wanted a quick dinner and we both hadn't been here. I have absolutely no idea what I ate. All I know, that isn't pho. The proteins were dried out like they had been reheated multiple times and cooked days prior. The broth tasted like it had some sort of chemical flavoring to it.
