541 Sushi Bar is GARBAGE! I went there today and ordered the Vegas roll, Spider roll, Gyoza, Eel and Rainbow roll. What I ordered and was not what I received. Imitation krab was used in both the Spider and Vegas roll. The menu said that the Spider roll was deep fried soft shell crab. It was not. It was filled with imitation crab, NOT the actual full soft shell crab that is offered at REAL sushi establishments. That same went for the Vegas roll. The Vegas roll is supposed to be a deep fried Philly roll, which is smoked salmon, cucumber and cream cheese, that has then been deep fried. Again, instead of the smoked salmon, imitation Krab was used! I asked the proprietor what sushi was served to me and he insisted that the rolls he served me were what I ordered. It absolutely was NOT! And then he insisted on me paying for the order and argued about the price! He is substituting low quality ingredients for the smoked salmon and soft shell crab. I know my sushi and this place is a low class rip off. Their standards are sub par not only in regards to ingredients, but also hygiene as the sushi chef was doing multiple tasks between orders, like cleaning tables and unplugging the toilet all the while not thoroughly washing his hands between tasks or using gloves to touch raw fish. We really enjoyed our sushi here we had three veggie rolls. The chefs and waitress were all very nice. I loved how quick and efficient it was. It was also super fun to see all the choices right on the conveyor belt. I ordered a asparagus roll and the chef gave it to me. It had mayo on it. I didn't realize it. sorry to leave bad review - server was awesome and really nice and so was the owner. but the rolls I specifically got served were genuinely the worst rolls I ever had in my life for many reasons and were nothing at all like the rolls I ordered and I love cheap sushi. I just recently moved to Eugene from a large city with a chain rotating sushi place and 541 Sushi Bar blew it out of the sky. The fish was fresh, flavorful, and well-priced. The prices are the same whether you eat-in or order to-go, which I appreciate. Also, other sushi places these days almost never have real wasabi, just that fake horse radish stuff, but 541 Sushi Bar does. I studied abroad in Japan and have been chasing the real deal ever since-- this is it! It will burn your nose hairs off the way god intended, so proceed with caution if you're used to having to add a ton to get any spice at all. Wow this place has gone downhill. And our bar was low because for some reason conveyor belt sushi isn't great everywhere so expectations for that are adjusted. It's just easy and fun so we usually enjoy it but when every piece up there is fried or filled with Krab, the menu has four sushi items in the entire thing that aren't fried or filled with Krab, the service is slow, the tables are dirty and the prices just keep going up while the quality goes down... The hostess sat us down at the bar, didn't explain the pricing or process for ordering, then returned behind the counter to talk with her coworker. I had to flag her down after a few minutes of feeling lost. Most of the rolls had a krab salad core that was dry and unappetizing. Most of the rolls were also smothered in spicy mayo, so they all ended up tasting like the same. I ordered salmon nigiri, and the salmon wasn't even fully defrosted. I saw the sushi chef trying to warm it with his hands, but when it got to me....was still cold as ice. Went at 8pm (understanding they close at 9), usually I can be pretty nervous about coming in to sit and eat at any restaurant close to their closing time, just because I feel like they don't want us there or they're rushing to get us out. BUT here, they were really friendly, food was made SO good and really quick, and great music!! The waitstaff is extremely friendly, and ordered rolls came out fast. The poor quality of food here, the lack of cleanliness of the restaurant, and the empty and dead vibe are the reasons for this rating. I'm a vegetarian, so I'm normally happy with sushi nomatter what, as long as the veggies are fresh; but this place had such dry, undercooked (or overcooked?) sushi rice that the rolls were falling apart when dipped in soy sauce. Everything was underseasoned and no flavor. The cucumber salad is basically just cucumbers and tastes of nothing (what about a little salt?). The floor was so dirty, with food everywhere, that it was unappetizing. Almost nobody was in the restaurant. Conveyor belt sushi is supposed to be a fun, energizing vibe. It's festive. This felt depressing. I think this is a much bigger problem with Eugene's downtown restaurants. Because the downtown area is so dead, restaurants are empty and they stop caring. And because they stop caring, nobody comes and the downtown remains dead. The cycle continues. I'm sorry to say I will not be returning here. Wow! Reviews did not disappoint about the "krab salad". The grainy, almost kinetic sand like texture of the "krab salad" was traumatic to say the least. The lack of ambiance mixed with the terrible music that was playing during my dining experience left a worst taste in my mouth than the "krab salad". Don't even get me started on the brown Nigiri that was served to me. The quality combined with the amount you get is insane. The conveyor belt is a whole other ordeal. Plates of sushi spinning around for god knows how long. The chef behind the conveyer belt honestly looked remorseful when handing us the plates. The only fish that was decent the day we came in was the salmon nigiri. We also got tuna, yellowtail, surf clam, and spicy tuna, and saw a bunch of other sushi on the conveyor belt. The tuna, yellowtail, and surf clam nigiri were really strange - super thin and overly chewy texture (maybe not fresh? or close to the spine?). The spicy tuna was decent but came with a bunch of spicy mayo sauce on top. Other sushi looked sad. The rice was plentiful (too much) with each sushi and hard. The service was really slow and inattentive too. Had to flag people down for everything from water, menus, ordering, and the check. Overall, if I were back in the area I would *maybe* go back for salmon nigiri. Otherwise, probably not. read more

It is quite possible that my husband and I may have developed an addiction to 541 Sushi during this pandemic. We have ordered takeout from them during times of celebration, on days when we lack the motivation to cook, and for those mundane moments when we just crave shoving delicious sushi into our faces. I only make an exception to my vegetarianism for 541 Sushi. It's that addicting. They do offer vegetable rolls, but there is just something special about their Philly Roll and how they use smoked salmon to compliment the cream cheese. Have I mentioned yet that every roll is only $2.50? Another reason why we keep going back and back and back again. We always pick up our meal for takeout by either ordering over the phone or there in person. They also offer delivery through the assorted delivery apps. read more

The staff here today made my day! I'm temporarily on a super strict diet that doesn't allow oils, salt, sugar, or vinegar a long with so many other things. I had a busy day and didn't have time to prepare a satisfying meal and ended up way too hungry before I remembered that grabbing food to go wasn't an option most places. The staff here was super accommodating, they made me a salmon and veggie roll with bland rice for a very reasonable price. You really pay for what you get. I also tried the surf clam and tuna nigiri and those were not good. The tuna had a bit of chew to it, and the surf clam had a weird mush type texture on the inside. Some of the best sushi I've ever had in my life! Visiting from Los Angeles, where it's a very competitive culinary market, and this is easily up there with the best. Service is amazing, incredibly friendly; and the energy of the restaurant is really positive. We had lunch, left for drinks for about an hour and came right back for more food! The veggie rolls eg: avocado roll, cucumber roll, and asparagus roll, were top notch. The miso soup and cucumber salad could cure cancer they were so delicious. I have been to this restaurant several times, with no problems, went in recently and the waitress staff was awful,, there were four of us, and our bill was over a 100. so that says we came to eat, they girl that waited on us only came to our table once to bring water and menus, We order off the menus however she never came and picked the order sheet up so we never were able to place the order.. when we first walked in we went to the counter to sit down she came at us screaming " you cannot sit there " before she was finished the other Girl working there came around the other side, saying 'YES YOU CANNOT SIT THERE' was it a tag time or what ! we found a booth and sat down, as I explained the waiter came to the table put water down with menus and never returned...
