No-frills, super solid Spicy Miso Ramen. The Chashu was top notch melt-in-your mouth, maybe best I've had. Eggs were perfectly soft boiled, noodles had perfect consistency, spice-level on point. Décor and ambiance is delightful, modern yet throwback and clean. We started with a hot sake to warm us up from the short walk in, obvi. I'm a sucker for green curry so my mind was made up as soon as I sat down, green curry w/ karaage (GCK). My wife ordered the pork ramen with kimchi and we got some goyza on the side. Both ramen bowls were delicious but I for sure won. The GCK was spicy, acidic (lime wedges provided), salty and just plain delicious. The karaage was so good we ordered a side to go as well, like you do! These peeps talking about the old ramen place that was before Yua need to get over it and give this place a real try. I am an Udon freak! Thick, slippery noodles in a delicious sauce or broth ...it's heaven on earth to me. Yua Ramen has, hands down, the best Udon dish I have tasted in the greater Edmonds/Lynnwood area. The broth is rich and flavorful, the shrimp tempura that comes on the top is surprisingly just crispy enough. The noodles are perfectly chewy and slippery. My only complaint is about the seasoned egg ....add MORE please! Plus, the lovely woman who says YESSS with a smile after everything you order and ask for ....makes for a pleasant experience. I was disappointed today on my way to arashi ramen to discover, it is gone. But my disappointment was quickly remedied by yua ramen, which has taken its place. I got the black garlic miso and I was taken aback. The broth is the best I've had. Perfectly rich without being too thick. And the staff are so friendly and hospitable. The only thing I would change, and it's really a tiny complaint, I found the broth was so hot, it kind of softened the bean sprouts, taking away from the nice crisp texture they provide to ramen. Unfortunately, Arashi that used to occupy this space is no longer and Yua is now the restaurant that is located here. Brightside, it's still a ramen joint. Downside, not as good. They mixed up mine and my boyfriends order. We realized it a few bites in but decided to keep eating each other's order. Luckily for him, the spicy tan tan that I ordered, and he got to enjoy, was pretty good - broth wise. On the other hand, the black garlic that he ordered and that I ended up eating was lackluster. I didn't taste garlic in the broth at all. Not that I expected it to be the same as Arashi's recipe but I have a feeling they served him the completely wrong dish all together. In fact, I'd bet on it lol. The minced pork in my dish I wasn't a fan of.. no seasoning and had a weird aftertaste. Noodles were a little more cooked than I prefer, I like aldente. Eggs were perfect and come at no additional cost! Win. Vegetable toppings were a nice addition as always. All in all, I'd go back to try the tan tan, again.. and hope to get it right this time. The $7.99 house salad only had about five cents of ingredients making up three bites of crappy preshredded lettuce and a crappy dressing. I called the restaurant and asked for a manager but they didn't seem to care. I offered to send a picture and they didn't want it, nor did they do anything to make it right. If I were going to make a complaint, it would be that I expected the order of Karrage Chicken to be a little bigger. Besides that...the broth was the perfect temperature and not overly salted. They didn't over do the black garlic oil, which can make a bad bitter after taste. The noodles were not over cooked and the rice was about sushi rice consistency. The chicken was tender and tasty. My first ever experience with Ramen came in downtown Tokyo. I waited for over an hour an in a line stretching around the block for one of the most prestigious shops in the city, and it was worth every second and penny. Ever since then, I've been addicted and on a quest for more. I'm telling you, Yua comes SO close to what I had there! It's easily on par with the best, and it's right here in the Shoreline area! It's located near the Ranch Market right where Arashi Ramen was previously located, another restaurant I loved dearly, and was broken hearted to see go, but I'm thrilled that Yua has moved in to take up the mantel of THE Ramen shop to dine. If you had Arashi before, just know that the flavors at Yua are different, but just as good.
