Feel like you're eating at your auntie's house, just feel like a chill vibe on a weekday evening. Families and friends coming and eating. Only on waiter when we were but dude is so friendly and hustles. Portion sizes are awesome. Bossam was delicious and I loved the banchan. The spicy cold noodle wasn't spicy at all and very refreshing on a summer night. 100% would recommend and if you get the Bossam special, consider sharing it with 4 people because we definitely couldn't finish it with 2 people. We ordered the makgeolli as our drink which was included as a choice in the special. For about $72 with tax, pretty worth it imo for a meal that feeds 4 with an alcoholic drink. It seemed like they were a bit short staffed, but the team was still very nice and quick when I asked for extra banchan and garlic. We ordered the bossam combo, and the portions were HUGE! Easily enough to feed 3-4 people. The bossam itself was delicious, especially when paired with their kimchi. The combo also included spicy cold noodles + an alcohol beverage. Before watching the movie, we decided to try the chicken at Gilson Korean restaurant. The golden, saucy chicken and the seafood tofu soup were so delicious! Initially they showed us to a large spacious table for our party of 6 but after we said we werent interested in bbq they moved us to a corner table in the back. We ordered the Bossam, its 40+$ but easily shares with with our party of 6. If I did not come with friends I wouldve never known to order this and it was amazing. Small Korean restaurant in Edmonds located in its own building in the parking lot of a plaza along Hwy 99. Got to Edmonds at around 8pm due to ferry delays. The other Asian restaurants were either closed or weren't seating new customers, but this place was open until 11pm. The place was quite lively when we got there and most of the seats were taken as we were dining. They serve a variety of Korean dishes. Korean BBQ is available, but not all of the tables have grills. We got an order of the fried wings which was 16 total pieces. We got half with the sauce and half without. The chicken was tasty. The outer skin and batter form a crunchy shell that's not overly flaky but easy to bite through. The wings with the sauce has a little sweet flavor to it. We also got the spicy beef soup as recommended by our server. Turned out to be an excellent recommendation. The soup bowl was sizable, and it was filled with ingredients including beef and glass noodles/vermicelli. Flavor was abundant but not really spicy. We decided to stop by Gilson on the way back from Vancouver, and were really happy to find a restaurant open late! Although Gilson does have kbbq, we decided on getting soups. The banchan at this place is phenomenal- the fish cakes and the kimchi were so good, and our waiter noticed that we finished them immediately so he came to refill! I ordered a Galbitang, and I'm inclined to say it's the best Galbitang I've had in the Seattle area. The meat wa SO good and tender, and the broth was really flavorful. They didn't have a big selection of banchan (side dishes) and was mainly spicy (which wasn't kid friendly since most kids can't eat spicy). We ordered the boneless short ribs and bone in short ribs for bbq. The bone in short rib kalbi was definitely more flavorful and juicy. However, you can taste they mix two kinds of kalbi together, (cheaper and one more expensive), as the cheaper one was more chewy and hard to digest. Ayyyyy, don't let the low / mixed ratings scare you off from this cute little place :) Due to the rain, couldn't take pictures of the exterior, but Gilson is one hard to miss restaurant! Armed with cute, twinkling Christmas-y lights, you can easily find this place off Hwy 99 (close to Ranch 99 area). There's ample parking next to the place and overall, if you don't see a lot of spaces open, chances are the place is busy. Came here on a Thursday night and it was super packed. Went to get boba and 30min ish after, my friend and I were lucky enough to score a table. Highlights of my dining experience: KOREAN FRIED CHICKEN = YUMMYLICIOUS. Hollllllyyyyy shi....so so good. You can get either an order of the traditional spicy & sweet, or the "golden" option (essentially fried chicken in its finest glory without sauces) or do the Half & Half. If you're a first timer, do the half and half option. For me, I personally dig the golden option since it was perfectly crispy, not too greasy, and the seasoning used makes it buttery and so so good. Seriously. Service: Despite the mixed reviews, the one guy server (who pretty much manned the entire floor with orders, bussing, etc) did a great job in checking in on us. We never really had to wait nor flag him down like crazy. Food time: I guess if you go during the "non peak" dining hours, wait time for food isn't very long. So happy to get my wingssss when I was in hungry bear mode. Other random things to note: Seafood pancake: Did get to try this item and it was alright. Tons of seafood (which is awesome) but a bit limp/oily. Otherwise, pretty good value for the portion size. Side dishes: Quite tasty! I love it when side dishes at Korean places have flavor to them. Do note: Fried chicken and seafood pancake does not include side dishes. We asked for the sides since we were mad hungry for food. Haven't tried it yet but my recommendation is to come early or late since there are limited grill tables. The BBQ is pricey. At $20-30 a meat, it's pretty much hibachi/teppan prices. It's not all that large either, and there's no combo deal/sampler for meat, so I'm a little disenchanted by it. However, the bossam special ($45) shines. It comes with a cold Noodle, bossam, and Korean rice wine that you can sub for soju. This is enough food to split between 3 people. Their fried chicken is also great, it's a lot bigger than the wings at chi-mac. I love Gilson, but mainly for the bossam and chicken. Not worth for BBQ. read more

It is a pretty small place so waiting might happen so I recommend you going around 6pm. The kimchi for the bossam is still good. Big portions and good side dishes.
