    The old church in Troy that doesn't look like a kombucha tasting room

    Quite simply, Yesfolk Tonics makes the best kombucha I've ever tasted. Perhaps I should admit upfront that I don't have that much experience with kombucha. This fermented tea drink first came on my radar within the past twelve months. One of my friends who is interested in health foods was trying to get me on the bandwagon. So I gave it a try. The fizzy, sweet, and tart drink from the national brand was fine. It was flavored with ginger, and it was tasty and refreshing. But since I didn't care too much about whatever the nutritional benefits were supposed to be, the price of $3 for a bottle seemed steep for what amounted to a less sweet version of a soft drink for adults. For those who don't know what kombucha is, it's actually pretty interesting. It's a brewed, sweetened tea that has been fermented. But instead of just yeast, kombucha makers employ a symbiotic culture of bacteria and yeast (or SCOBY, for short). The way it was described to me, the yeast eat the sugar and turn it into alcohol and carbon dioxide. But then the bacteria eat the alcohol and turn it into acetic acid. So in the end, the tea is fizzy and tart, without only trace levels of alcohol if any. Now here's the thing. Most kombucha makers use the tea as a base, and then go and add all kinds of flavorings to try and make it more appealing to consumers. At Yesfolk Tonics, it's all about the tea. Their "flavors" are different varietals of tea. So they make an oolong, a jasmine, a wild black, and more. And I've loved every single thing I've tried from these Troy kombucha makers. Thanks to the Capital Craft Beverage Trail, I was even inspired to visit the Troy "brewery" which is in the chapel basement of a decommissioned church. It's kind of a leap of faith to push open the chapel door, and descend the stairs into the basement. But there I met Javier, and the two of us talked a lot about kombucha, and I got to taste everything they had available. And then I bought it all. Now, I've turned into some kind of Daniel Kombucha-seed, spreading the gospel of Yesfolk Tonics far and wide. What can I tell you, when I fall for something, I fall fast, and I fall hard. It's a little more expensive than some of the other kombucha that's out there, but I think it's worth it for the taste and the aroma alone. Your mileage may vary, everyone's tastes are different, but I'm thrilled to have discovered this Troy gem, and I'm thrilled that Adam, Yiyi, Frank, and Javier decided to set up shop in the Capital Region. Maybe one day, the tasting room will offer a little more food than just chips and salsa. And perhaps they'll considering letting people play shuffleboard on the existing courts that were built into the church basement. And hopefully, as the brewery goes, the hours will expand beyond just Noon to 4p on Saturday. But even if they don't, this is definitely still worth the trip... and the adventure.

    This is my favorite kombucha in the US. We live in California and wish we could get it here. It's great.

    A first time visit with a few friends for their Tuesday burger and beer combo, which was excellent…read morein the portions were very good.     Skyline Beer Company is a craft brewery and restaurant that opened in Westfield, Massachusetts in…read more2014. It was founded by friends and business partners Lisa Pac and Daniel Osella. Beginning in 2002, Pac and Osella began getting together on weekends to homebrew and create food pairings. Pac brewed the beer while Osella (a chef) crafted the food pairings. In 2014, the duo launched 'Skyline Hop Shop' as an alternating proprietorship operation inside Westfield River Brewing Company at 707 College Highway. Osella offered fresh food that paired well with WRB's brews while Pac offered home brewing classes and supplies. They quickly outgrew the space and reopened as 'Skyline Trading Company' at 124 Elm Street in 2016. At this location, Pac and Osello expanded their menu both of food and beer, adding craft whiskey and tequila to the mix. After outgrowing their space again, the partners moved to 98 Southwick Road and reopened as 'Skyline Beer Company' in December 2019. Head brewer Dana Bishop came on board as additional partner, and Coy Chaney was hired as the Assistant Brew Master. The current 4,500-square-foot restaurant and taproom offers 24 rotating draught lines, cocktails, a full food menu, and beautiful views of the rolling hills of Western Mass. I recently visited Skyline Beer Company while I was cycling on the nearby Columbia Greenway Rail Trail. Skyline was on my list of breweries to try for a while, so I decided to stop by for some beers and bites. The taproom and restaurant was spacious and inviting with plenty of seating both inside and outside. I opted to sit outside and began to look over their extensive beer and food menu. I ordered a sampler flight that included "Forget Me Not" (New England Pale Ale), "Up In Smoke" (New England IPA), "Listening Juice" (Double IPA), and "Mother Ocean" (New England IPA). For food, I ordered a plate of delicious "Pretzel Bites & Cheesy Sauce". I really enjoyed all of the beers that I tried, but "Up In Smoke" (with delicious notes of grapefruit and marshmallow) was easily my favorite! I ended up ordering a full pour of it before leaving. The pretzel bites were equally delicious and paired well with my beers. I had an exceptional experience at Skyline and I look forward to returning in the future!
