Checked in with the hostess and was told it would be a 20 minute wait. Checked back with her after 30 minutes and was told it would be 15 more minutes. There were empty tables inside but we were told that we could not sit inside because they don't have staff to cover the inside tables. Neither of the two "managers" were paying any attention to the outdoor seating. We watched two groups walk up and sit down without being seated by staff. When we pointed it out to the manager she said that she had told the wait staff not to take their order. Terrible solution, passive aggression rarely has a positive outcome. There appeared to be only thee servers, well fewer than needed on a Friday night. In the past the food has been fine, we don't good for the food but for the entertainment. But after watching a second group self seat we left. We understand that finding staff in a mountain town is challenging but perhaps paying the staff more would improve the customer experience. Maybe some signage about...see host/hostess to be seated would be helpful. Not angry just disappointed.

I ordered the olives, burrata, and the rack of lamb with some ice cold beer on tap to boot. Burrata is a dish I order often and the execution of this one immediately got my attention. This was all prepared exquisitely and the flavors played a symphony. The exact same description applies to the rack of lamb, served with some berry reduction, mint, local mushrooms, and an out of this world potatoes au gratin. Of note, the potatoes were a true homage to the state's most famous crop! And the lamb, sourced locally, of delightful quality. Please see my pics of the perfect pink lamb chops that I cut down from the rack. That ambiance is warmly lit, dim, and very cozy. I had a booth by the window decked out with multiple soft pillows. Not knowing any restaurant in Ketchum, the ambiance I saw in online pics was a big draw for me and it didn't disappoint. Service was on point; enough said: it's 5 stars!

Our party had the entire right side of the indoor dining area as well as the outdoor patio, and it was the perfect setup for a celebration. The Everything Knots were light, fluffy, and packed with flavor. The mozzarella sticks were surprisingly airy instead of overly heavy, which made them even better. The pizza has a unique flavor that really stands out (both the Smoky and Santa Cruz BBQ had a kick to it (jalapeños)), and the crust was so good we started joking about moving here just for the pizza. Then we remembered there is no pho, and we would be too far away from our niece, so I guess we will just have to settle for coming back to visit. If you are in the area, this place is absolutely worth a visit!

The hospitality was warm without being over the top. No mid-bite "how's everything" over and over. The sea salt on the pudding was especially unforgettable. The layer cake paired beautifully with our wine. Great food is easy to talk about, but great hospitality is what brings people back. The Cookbook absolutely delivered both. We'll definitely be back. Thank you!!!
