    Focaccia with honey butter: yum!

    My wife surprised me for an anniversary dinner and we arrived on a Friday night and were seated at the Chef's Table!! SO very cool. Turns out the couple sitting next to us were old family friends which was a treat! They wrote an amazing Congratulations card for us and gave us a couple glasses of complementary, non-alcoholic bevs which we used to toast out wonderful evening. Service was outstanding. Everyone checked in on us but not in a weird, intrusive way. Just lots of joy. In order of our favorites: Brussels Frittata are freaking outstanding. I actually don't even like Brussels sprouts. Wifey is GF, Veg and doesn't eat refined sugar so this was her dish but I definitely scarfed down a few! Focaccia was baked perfectly, the honey butter was fab. Such a fan! Carrots were a favorite of my wife, she loved 'em. Mashed Potatoes were so yum but just a tinged salty for me. Anolini: I actually didn't finish this dish cuz it was too salty and the pasta was a little hard but I'm sure that was probably a fluke. I'd definitely go back. The owners were warm and present with the guests. There's a fabulous heated outdoor seating area to hang out at.

    A truly magical experience. Thank you Chef Britt and staff. We made reservations (don't go without them) and were promptly seated upon arrival. We decided to skip wine and drink Peroni beer tonight given that we were ordering a few spicy dishes. We started with cold Peroni and two apps. We shared the Trista salad and Octopus. I now know what separates top tier chefs from the rest of the pack. Both dishes were amazing. The Trista was light and flavorful with sprinkles of prosciutto, garbanzos , roasted peppers and adorned with Gorgonzola vinaigrette. Amazing! The Octopus was just as good with small pieces of octopus, bravas-style potatoes and a fennel aioli. The sauce at the base consisted of a spicy, smoky chipotle. It's such a complex dish with smokey flavors one second followed by spice the next. For entrees we chose the Elk Back-strap and Chef Britt's meatballs. The meatballs were literally melt in your mouth and the Elk was delicious paired with Calabrian butter. If you are in town and have the chance to dine at Fiamma, run, don't walk. I'm confident that this restaurant will eventually require reservations weeks in advance.

    @chef_rescigno I had the absolute pleasure to meet the one and only Chef Butter Daddy tonight at her amazing restaurant Fiamma. She was kind, humble, and such a badass. She took the time to chat with me at length, let me fan girl for pictures, even allowing me into the kitchen, and then went above and beyond sending us some extra surprises throughout the meal. A class act through and through. A big shout out to her wife, also a rockstar, her entire staff, and their absolute attention to every detail.

    Wonderful service, and absolutely delicious. Tiramisu was as good as advertised, which is to say that it's a must-try. The ice cream was also surprisingly good. Simple flavors, not too sweet, and the toppings gave it variety. Duck pasta was also a huge hit--the pasta had great texture, and there were enough flavors to keep each bite engaging. Only slight letdown was the bolognese, which was saltier than expected. Wish we were hungrier so we could try even more dishes!

    Came for the wife's birthday meal. The staff was so great and everyone we came in contact with wished her happy birthday wishes. So nice! Great ambiance and attentive service. We had the Brussels fritta, tagliatelle, and braciole. All delicious! Highly recommend!

    Britt's award winning meatballs. the scarpetta is required to really appreciate the sauce.... Just sayin'....

    FiAmma is the new crown jewel of the Ketchum food scene. If you've been living in a cave, please meet Food Network star, Britt Rescigno and her wife, Kinsey. They have elevated the dining experience in Ketchum. Do yourself a favor and make a reservation to take advantage of excellent service and amazing flavors this new gem has to offer. You won't regret it.

    Review of FIAMMA - Ketchum's Hottest New Restaurant Tonight, Laura and I had dinner at FIAMMA, a brand-new restaurant in Ketchum, Idaho. We had to book an early reservation at 4:30 PM because it was the only time available--a testament to how in-demand this place already is. Now, Laura is notoriously selective about dining out. In fact, the last time we had dinner together at a restaurant was over two years ago (maybe even longer). But FIAMMA piqued our interest for one big reason--the chef. We had seen her on the Food Network, where she not only beat Bobby Flay but is also a finalist on another competition show and currently competing in Tournament of Champions (TOC). Her energy on TV is electric, and we were curious to see if that same passion translated to the dining experience. Spoiler alert: It absolutely did. From the first bite, everything was off-the-charts delicious. I started with the meatballs, made from a blend of three different meats, and they were packed with rich, savory flavors. Then came a salad so layered with flavors that I can't even begin to break them all down--it was simply perfect. My pasta dish was outstanding, and the grand finale? The best tiramisu I've ever had in my life. Beyond the food, the experience was top-notch. The chef-owner was actively walking the floor, greeting guests, and genuinely engaging with customers to ensure everything was flawless. And even though the restaurant had only been open for a few nights, they seemed to have already worked out any kinks--at least from our perspective. The verdict? We will definitely be back. Laura even agreed in advance, which speaks volumes. If you're in Ketchum, FIAMM is an absolute must-visit.     Soooo tasty!! There are so many yummy food spots in Sun Valley and this one is definitely added to the list. Came here the a couple of weeks after they opened and it was so yummy! Staff was so friendly and hilarious and made our experience amazing. They gave great recommendations and everything we ate was out of this world. Ambiance was so nice and as mentioned the food was so amazing! You have to come try it out.

While there is some indoor seating, the restaurant offers some seating outside that appears to be shared with the KB's Ketchum Burrito place. With that said, there's plenty of places to sit outside and once you place your order inside, they will bring your food out to you! One major remark I have about this place is the heavy pour of wine they had to offer! In addition to beer on tap, they also offer a small selection of wine on tap and you will receive a large serving! NO complaints from me on that, haha! It was a good quality Rosé too! For food, we ordered the following: Garlic Knots - these were delicious! They pull apart really easily and weren't too garlicky. I really enjoyed the marinara too as it didn't taste like it was from a jar or can, even if it was! Buffalo Wings - the buffalo wings were cooked well and had a slight crisp to them which was nice! They could have stood to have a bit more buffalo sauce on them, but were cooked well otherwise! Margarita Guy Pizza (add jalapenos) and Pepperoni Pizza - both pizzas we order were great quality! The dough wasn't too thick or too thin and wasn't burnt at all. In fact, the consistency was spot on for how I like my pizza!
