The wife and I have watched Chef Rescigno on Food Network for the last several years. We figured we would come up and spend our anniversary in Sun Valley and eat at her restaurant. This experience was freaking awesome. We were within feet of Britt for our whole meal. We made reservations for the Chef counter and got to watch Chef Britt run the kitchen.... And it was amazing!! The menu changes monthly, the food is delicious!!!! We got two appetizers, two entrees, two desserts, and we each had a couple drinks. The bill wasn't as bad as we thought it was going to be.... And was pleasantly surprised when we got our bill. We will definitely be back to eat here!! We first started going to Evergreen in the old days and then we went to Vintage after that, for a very long time. The concept is good. The quality of of the food is inconsistent. There are certain items that are exceptionally good and other that are disappointingly mediocre. Meatballs are recommended. Steaks are over prices and sear is charred/burnt. The services overall is adequate but you get the bum's rush as soon as you sit down, as they immediately remind you that there is another reservation for your table in 90 minutes so you are on deadline to finish your table experience. My wife surprised me for an anniversary dinner and we arrived on a Friday night and were seated at the Chef's Table!! SO very cool. Turns out the couple sitting next to us were old family friends which was a treat! They wrote an amazing Congratulations card for us and gave us a couple glasses of complementary, non-alcoholic bevs which we used to toast out wonderful evening. Service was outstanding. Everyone checked in on us but not in a weird, intrusive way. Just lots of joy. In order of our favorites: Brussels Frittata are freaking outstanding. I actually don't even like Brussels sprouts. Wifey is GF, Veg and doesn't eat refined sugar so this was her dish but I definitely scarfed down a few! Focaccia was baked perfectly, the honey butter was fab. Such a fan! Carrots were a favorite of my wife, she loved 'em. Mashed Potatoes were so yum but just a tinged salty for me. Anolini: I actually didn't finish this dish cuz it was too salty and the pasta was a little hard but I'm sure that was probably a fluke. I'd definitely go back. A truly magical experience. Thank you Chef Britt and staff. We made reservations (don't go without them) and were promptly seated upon arrival. We decided to skip wine and drink Peroni beer tonight given that we were ordering a few spicy dishes. We started with cold Peroni and two apps. We shared the Trista salad and Octopus. I now know what separates top tier chefs from the rest of the pack. Both dishes were amazing. The Trista was light and flavorful with sprinkles of prosciutto, garbanzos , roasted peppers and adorned with Gorgonzola vinaigrette. Amazing! The Octopus was just as good with small pieces of octopus, bravas-style potatoes and a fennel aioli. The sauce at the base consisted of a spicy, smoky chipotle. It's such a complex dish with smokey flavors one second followed by spice the next. For entrees we chose the Elk Back-strap and Chef Britt's meatballs. The meatballs were literally melt in your mouth and the Elk was delicious paired with Calabrian butter. If you are in town and have the chance to dine at Fiamma, run, don't walk. I'm confident that this restaurant will eventually require reservations weeks in advance. read more

Fiamma is a very attractive restaurant, but it is also very noisy. If noise bothers you as it bothers me, this may not be the place for you. There is only indoor seating, so no place to escape the noise. The food is expensive - maybe $5- $10/person more than other local restaurants. Steaks are even more. My wife had meat balls and she liked them. I had tagliatelle, recommended by the waitress, and found it OK, but too salty. Service is good. This is one of the restaurants that takes a credit card to hold the reservation. Fiamma charges $50/person if you no-show. I don't like this policy as it immediately says I'm not trustworthy. They also don't publish a menu online, which annoys me. Bottom line, Overpriced and noisy with just OK food. I'm not sure I'll return. read more

TLDR; It was good, but I don't think we would be coming back. Service was a solid 4.5 stars. We had everything we needed and the table was managed well. There was ample staff. But there was a slight complacency in the air. The staff lacked the hunger and drive that makes a restaurant truly great. Ambiance was great, another 4.5 stars. The food fell short of the mark, most certainly below the prices paid. The pork chop was beautifully cooked, but under seasoned and the sauce accompaniment was reminiscent of A1 steak sauce, and it just didn't work. The mash potato side (and additional $16) was somewhat bland and grainy. It tasted as though it was cut with a root such, as a turnip, which made me long for that true Idaho potato taste. Another diner had the eggplant Parmesan, which was well prepared, but slightly under seasoned. We also had a pasta dish that was too al dente, to the point of being crunchy. The experience was fine, we do not regret going. But I wouldn't be in a hurry to return. read more

Wonderful service, and absolutely delicious. Tiramisu was as good as advertised, which is to say that it's a must-try. The ice cream was also surprisingly good. Simple flavors, not too sweet, and the toppings gave it variety. Duck pasta was also a huge hit--the pasta had great texture, and there were enough flavors to keep each bite engaging. What a disappointment. After reading glowing praise in national food magazines, I was genuinely excited to treat my moms to a special birthday dinner here. Both of them are chefs, so I'm very intentional about choosing restaurants for occasions like this. Based on everything we had read, we expected an exceptional experience. The smoked bread arrived first. It was interesting -- subtly smoky and intriguing -- and it made us curious about what would follow, though slightly cautious about how heavily smoke might feature in the meal. Unfortunately, when the Brussels sprouts were served, our excitement quickly faded. The first bite was overwhelmingly smoky to the point that it tasted like an ashtray. They were simply inedible. We politely shared this feedback with the manager, whose response was surprising: "Yes, a couple people have mentioned that tonight." That was the extent of it. There was no offer to replace the dish, remove it from the bill, or extend any gesture of hospitality. At this price point, I expect both culinary excellence and attentive service. The remainder of the meal was underwhelming and did little to recover the experience. We were seated next to the chef's counter and noticed that the owner/chef kept her back to the guests the entire evening, interacting only to hand over plates. For a restaurant that positions itself as elevated and experiential, the lack of warmth was striking. Overall, the evening felt cold -- both in hospitality and in execution. Sadly, it did not live up to the reputation. There are many wonderful, welcoming restaurants in Ketchum that deliver both excellent food and genuine hospitality. I would recommend exploring those instead. read more

Fiamma in Sun Valley is truly something special. Founded by two incredibly talented chefs, this restaurant delivers on every level. The food was exceptional--the layers of flavor in each dish were thoughtful and beautifully executed. True to its name, Fiamma ("little flame"), the live-fire cooking adds a depth and warmth that elevates everything. We started with the octopus--perfectly tender with just a hint of that live-fire flavor. The focaccia was fresh and delicious on its own, and the burrata was accompanied by beautiful seasonal vegetables and a mouthwatering truffle honey. The local elk and bison meatballs were rich and satisfying, and sharing the tomahawk steak among six was such a fun experience--cooked absolutely to perfection. My family and I especially appreciated the focus on local ingredients--not just for the incredible flavor, but for the way it supports nearby farmers, ranchers, and small businesses. Despite a full house, the service never missed a beat. Brady, the sommelier, was especially wonderful--attentive, knowledgeable, and full of great suggestions, all delivered with genuine kindness and a touch of humor. It was also such a treat to see Britt Rescigno walking the floor, taking time to connect with guests. It's no surprise she beat Bobby Flay--her talent is undeniable. Review of FIAMMA - Ketchum's Hottest New Restaurant Tonight, Laura and I had dinner at FIAMMA, a brand-new restaurant in Ketchum, Idaho. We had to book an early reservation at 4:30 PM because it was the only time available--a testament to how in-demand this place already is. Now, Laura is notoriously selective about dining out. In fact, the last time we had dinner together at a restaurant was over two years ago (maybe even longer). But FIAMMA piqued our interest for one big reason--the chef. We had seen her on the Food Network, where she not only beat Bobby Flay but is also a finalist on another competition show and currently competing in Tournament of Champions (TOC). Her energy on TV is electric, and we were curious to see if that same passion translated to the dining experience. Spoiler alert: It absolutely did. From the first bite, everything was off-the-charts delicious. I started with the meatballs, made from a blend of three different meats, and they were packed with rich, savory flavors. Then came a salad so layered with flavors that I can't even begin to break them all down--it was simply perfect. My pasta dish was outstanding, and the grand finale? The best tiramisu I've ever had in my life. Beyond the food, the experience was top-notch. The chef-owner was actively walking the floor, greeting guests, and genuinely engaging with customers to ensure everything was flawless. And even though the restaurant had only been open for a few nights, they seemed to have already worked out any kinks--at least from our perspective. The verdict? We will definitely be back. Laura even agreed in advance, which speaks volumes. If you're in Ketchum, FIAMM is an absolute must-visit. Recently opened in summer 2025, with really wonderful New American food. The meatballs are among the best I've ever tasted, light and flavorful with a baked ricotta and marinara sauce. Salads are delicious. There is an extensive wine list, and much of the pasta is made in-house. Sharing is encouraged, so it's easy to put together a tasting menu if you're so inclined. Service is extremely attentive. I hope they become a fixture of fine dining in Ketchum, because I want to come back next summer! read more

This is a wonderful addition to the restaurant scene in Ketchum/Sun Valley. Starting with the meatball appetizer... this was a great start along with a not so dirty martini, which could've been a little dirtier for my liking. Next up was the little gem Caesar salad, which was delightful with a crunchy, crouton topping, freshly grated Parmesan, and even a side of anchovies. I would come back just for the meatball and the salad at the bar with a glass of wine and be happy as a clam. Hubby had the Osso Buco, which he thoroughly loved. Served on a bed of creamy polenta along with bone marrow and a tiny fork to extract it. But here's where the meal went south... The eggplant Parm was so disappointing. It was a whole eggplant breaded, fried and fanned in a shallow dish of fresh marinara with just sprinkling of grated Parmesan. I love a deconstructed moment, but this was a miss. It was so dry and without flavor. I could only eat a few bites. (And was thankful for the Caesar and meatballs earlier.) Maybe a side of marinara for dipping could have saved it? This was a miss in my opinion. Honest feedback for the chef... pull this off the menu and rework the eggplant parm to be a bit more saucy and cheesy in the traditional sense. But all in all, Fiamma is a gorgeous restaurant. Impeccable service. And a destination restaurant for a date or special occasion. X read more

A bit of a disappointment. The tables are seated quite close together. We were seated right between two other tables toward the front of the restaurant, even though the rest of the aisle was empty. Unfortunately, the gentleman next to us was extremely loud when he talked. (Which was a good bit of the time) We asked the waitress if we could move. She agreed with us and told us he's been loud the whole time. Our waitress checked with the greeter and said the only other table would be next to the door. The other tables had reservations. Well, we had a reservation too! Our resi was for 545, less than half the restaurant was full at this time. A poor decision or lack of training on the hostess (Janice) part to not try to accommodate the customer. We tried to make the best of it. I moved next to my husband and my son, was a trooper and sat across in direct fire. Waitress even made another comment that she had hoped when their food came, it would be quieter. Nope! We would have ordered wine, but not with that kind of hospitality. Our food was good, but with the atmosphere and hospitality not given, we will be trying other establishments. read more

3 of us dined for a birthday celebration. The meatballs were delicious and wonderful with the tender perfectly baked Focaccia and fennel butter. The artichoke was just ok. Not meaty at all. The generous portion of Bolognese pasta was different than expected, but very tasty and perfectly cooked and presented. My grenadine mocktail was yummy and refreshing. The Tiramisu was one of the best I've had. Perfection and a good 3 person share. The tea mocktail was a disappointment. They don't make a lemonade, which was a shame, since they are proud of their cocktails. They ask on the website if there were any celebrations, which I said yes to. But they didn't have any candles. The service was impeccable from start to finish. When we arrived for an early dinner the music was way too loud, but as the restaurant filled up we didn't notice it. We will return! read more

This restaurant was recommended by our hotel the Limelight. I read the reviews and booked a reservation for 4 as it is my brother's birthday. Wow... did not disappoint! From the focaccia bread (epic) and meatballs (excellent) to the main course everything was delicious. The radiatorre pasta was so tasty, the Tagliatelle pasta was amazing and the Waygu Braciole was beyond. I wish I had thought to take pictures to post but we were all so enjoying the food and the ambiance it never occurred to me. We ended a fantastic meal with the best tiramisu any of us have ever tasted. So light and creamy, you definitely have room for their Tiramisu. My only negatives would be that it got a little warm in the restaurant which is understandable since it's an open fire kitchen and it was busy so the time in getting the food was a little long. The good: service remains excellent and the space is beautiful. Wine list is short but well curated and the sommelier is excellent. The not so good: The food has been worse each time. It's just not that interesting and the execution is inconsistent. And what's with the sugar on the fries? Meats and focaccia remain overpowered by smoke. I love what this restaurant is trying to do and there is room for it here but you need to do better, especially at this price point. It's starting to feel like a theme park-y, Vegas style fake version of fine dining for rubes. The clientele here, locals and visitors alike, are well-traveled and sophisticated.
