What a great new addition to Eustis! We need more authentic Asian food in our community, so What the Pho is a very happily welcomed option! The team was very nice but in their soft opening phase and a little short handed on staff which caused some wait. But their pho is quite tasty and the broth is not to be missed. So, so, so good. I'm a bahn mi freak and this is some of the best I've ever had. Everything we had was excellent.

I was not impressed at all. I have been to much better pho places around town. We originally went during the grand opening when it was 30 percent off. Came because word of mouth around town was that this restaurant was amazing. Granted, you expect some problems in a new business. But, problems were everywhere! The worst problem was the fact that we're never given a bill. The owner kept it in his head I guess or I found out he did. That is a red flag. I hope it has been worked out by now! The place was absolutely jammed which could be the reason for lack of help or service. I'm giving the benefit of the doubt here because I'm sure they noticed the problem. I hope they had time to notice it. The owner kind of made up for it because he was personable and you could tell he cared-- just slammed with people at the moment and trying to put forth a brave effort at the moment. Kudos to him for that! Earned a 3 star rating for that. The menu was very limited but to their credit, it was a pho place. My friends and I had the weekend special pho. I didn't expect it to be different, but it was. I loved the level of spicy but was put off by thick noodles. My fault probably because I expect (assume) thin rice noodles in my pho! Not adverse to new things, I ate it. Nobody in my group really cared for it. I think it was the noodles. My husband had the "what the pho" special pho and he liked it. The spring rolls, to their credit, were hot, crispy, and delicious! I gave 3 stars because I hope they will work out the problems noted here. read more

This is my second time here. I thought I had posted a review but apparently I didn't. This place just opened up right off the 441 and is close by where I used to live. I've since moved and driving by this place reminded me that I like Pho. It is a small mom and pop but the food here is done very well. I had the sandwich which was a tasty appetizer paired with the weekend special soup. It was a bit spicy but not overly so. I think I spoke to the owner and he was happy to help me. The price was very reasonable considering how expensive it is to eat nowadays especially after all the tariffs. Honestly, I rather support these hard working people than these corporate restaurant chains. Quality here is so much better. They came out with cilantro, mint, and other pho add ons that typically come out and they were fresh. The sandwich actually went really well with the soup. Unfortunately this particular soup only comes out on the weekend but it's worth it if you like spicy. The place itself is small and in a small/medium shopping plaza. Good food at a good price. I'd go here again easily. Too bad I'm leaving country and won't have access to this where I'm going. read more

Best pho I have had in Central Florida. Velvety and full of flavor. They were generous with the meat. Noodles were cooked perfect. Toppings were fresh. My husband and I love Pho, but after living half time in Central Florida, we had had a hard time finding a good Pho place. The food here was amazing! We had the #4, my husband had the Bah Min sandwich, and we had the Thai Tea. The broth was delicious and everything was fresh and made to order. This place is unassuming, but it's quite the Eustis gem. We are from SFL; we're the foodie options are countless...with that said; the Pho broth at What The Pho is one of the best we've ever had! Saw buzz about this place near me on Facebook. I went in to try it with my sis. We were greeted warmly and sat promptly. I had the beef pho and Thai tea. Both were so delicious, great portion sizes. I will definitely be back and I'm telling everyone to go try this! Pho broth is fragrant and tasty, great temperature and delicious beef, noodles and pho toppings.
